Lazy Overnight Vanilla Quinoa with Stewed Berries (vegan)

Kind of like overnight oats, just better and a bit different. Creamy, sweet and fresh and so incredibly easy to make. One of those breakfasts that don’t even take 5 minutes in the morning, yet are super nutritious and super flavourful!

I actually ate this 4 (!!) years ago when I was in Mauritius. They served it one day at the breakfast buffet and I absolutely loved it. Unfortunately I never had it again and never found it anywhere anymore. So, I always wanted to recreate it. Took me a while to actually do so and the result is pretty amazing. A pity that I have missed out on this for such a long time!

What is special about this dish?

Overnight quinoa not really is a thing. Overnight oats is really popular (& delish!) but overnight quinoa, to be honest, is at least as good! So having quinoa for breakfast is kind of special and then having sweet quinoa is also not so normal. Although I do not understand why because it actually is soso good!

The combination of vanilla, yoghurt & Quinoa is really so great and all of these components work together in such great harmony. And the best thing is, in the morning you just take it out off the fridge and enjoy it. Really, the best.

Is this dish healthy?

Yes, it is! Quinoa is such a nutrient-dense food, which actually is great to be having in the morning. It is packed with carbs, fibre, protein and nutrients and will keep you full for a while. If you want to read more about Quinoa, you can check out my January Top 5!

Besides our main ingredient we also have Vanilla Bean, which also is great in here because it naturally has a slightly sweet flavour so we do not need to add any additional sweeteners. Then there also is (plant-based) yoghurt and milk, which contain several vitamins (depending on which one you choose) and probiotics.

How to make this:

Really, really easy. Either you start with pre-cooked quinoa, which you either meal prepped before or bought ready to eat, or you are making it freshly. Both work equally fine. When you are making it fresh, you have the advantage of cooking it until it is really soft, which will make it taste better.

When you have the quinoa ready, we just combine it with some (plant-based) yoghurt & milk and a little sweetener of choice, I prefer honey. Then we need a fresh vanilla bean. Yes, it is possible to use vanilla paste, powder or syrup but fresh one has the most intense flavour. We’re also mixing that in. Then it goes into the fridge overnight.

The next morning we take it out, and heat up the frozen berries either in a pot on the stove or in the microwave. You can add some lemon zest and/ or juice or just leave them natural. Now it just needs to be served. I love it best with some roasted almond butter and fresh berries but this is up to you!

Meal prep friendly?

Totally! Since we anyway need to store it in the fridge you can also leave it there for more days. The texture or flavour won’t really change and you have a breakfast ready for several days!

I do not know why it took me 4 years to recreate this but I finally did and it was worth it! I hope that you’ll enjoy this at least as much as I do and that you’ll have a fun time cooking!

Lazy Overnight Vanilla Quinoa with Stewed Berries (vegan)

Like overnight oats – just better. Creamy, sweet vanilla quinoa with warm stewed berries on top. Ready to eat in 5 minutes!

What you will need

  • 100 g Quinoa
  • 300 g yoghurt (plant based)
  • 100 ml milk (plant based)
  • 2 tbsp honey or maple syrup
  • 1 vanilla bean
  • 300 g frozen Berries
  • nuts or nut butterr

How to

  1. The night before, add the quinoa to a pot along with 200ml water and a pinch of salt. Bring to a boil, reduce to a simmer and let simmer until all water is absorbed. Turn the heat to minimum and let it sit unil fluffy and everything is soaked up.

  2. Add the cooked quinoa to a bowl along with the yoghutt, milk and honey or maple. Slice the vanilla bean in half lengthwise and scrape out the inner part. Also add it to the bowl and let it sit in the fridge overnight.

  3. The next morning heat up the frozen berries in the microwave or on the stove and top the quinoa with them. Add some nuts and/or nut butter and enjoy!

Oven Baked Lemon Honey Feta

Crispy and creamy cheese, lemony twist, honey tomatoes and tangy capers. Maybe with some baguette to dip everything up? Sounds pretty good – at least to me! 20 minutes, perfect for anyone, vegetarian, and pretty healthy too! This makes a perfect light lunch or a decent and quick weeknight dinner.  

I am a huge fan of feta cheese. I think it is a great addition to so many things such as pasta, eggs, on top of salads or bowl, or whatever. It just adds the finishing touch and takes everything next level. Especially in summer it is such an amazing food because it is a little fresh so it adds a summer twist to every dish. 

What is it like?

In summer when my uncle goes to Greece every year he always brings me a giant block of feta and it is like a dream. Then we´ll have Greek salads pretty much every day. They are just so simple in summer and take literally 10 minutes to make. This dish is pretty similar. Think Greek salad but baked. And without cucumber. It has very similar ingredients, tomatoes, feta, olives, herbs, olive oil. It is just a little different as it does not contain cucumbers (because baked cucumbers? I don’t know) and some lemon zest, which is like the best thing ever here. Plus some honey ad breadcrumbs to make it crispy and tangy. 

When you bake it and soak up the remaining sauce after with a baguette it just tastes sooo good! It is fresh, sweet, just super good. But my fvorite part of this dish is that the feta is turned into a creamy cheese but with a crispy crumble top and you just put a piece of it on some bread and have that creaminess and sweetness and crispyness all together in your mouth. 

But how do you actually make it?

Really easy – you take the feta cheese and place it in a baking dish. Throw some cherry tomatoes, olives and capers in and some grated lemon zest. You sprinkle some breadcrumbs on top and drizzle honey, olive oil and lemon juice. Place in the oven for 10 minutes and voila – there you go, done! This is how simple it is. That is so great! That simple but so flavorful! Honestly so good. 

When and for who?

This dish also is great for people with intolerances because you can use gluten free breadcrumbs if you can´t have gluten and feta cheese is not made out of cow´s milk but out of sheep’s milk, which means even people with intolerances can enjoy that. I would not recommend it for meal prep because then you loose the creaminess and crisp but I do not believe that this is necessary because it only takes 15 minutes!

I hope that you will make and enjoy this dish whenever you want! It is as good in winter as it is in summer so it really is up to you when you make it!

Oven Baked Lemon Honey Feta

15 minute, tangy, sweet and fresh baked feta with a crispy crust and sweet tomatoes. Ideal dish for a light lunch or a quick dinner.

What you will need

That is what you will need:

  • 1 block Feta Cheese (150g)
  • 1 handful cherry tomatoes
  • 1 tbsp olives
  • 1 tbsp capers
  • zest of half lemon
  • juice of half lemon
  • 1-2 tbsp breadcrumbs
  • 1 tbsp olive oil
  • 1 tbsp honey
  • some thyme
  • some rosemary
  • some sea salt
  • some baguette and salad to serve with

How to

That is how it works:

  1. Preheat the oven to 240C or Grill.

  2. Place the feta on a baking tray or into a baking dish. Add the cherry tomatoes, capers and olives. Sprinkle the breadcrumbs, lemon zest and some sea salt on top.

  3. Drizzle to olive oil, honey and lemon juice and place the herbs on top.

  4. Put in the oven and bake for 10 minutes.

  5. Serve with some fresh beguette and some salad.

Chocolate Coconut Almond Dates

Are the perfect snack to get you motivated for the rest of the day. Chewy dates, rich chocolate, crunchy almond, and fresh coconut. This is the perfect combination to make a super simple 4 ingredient, 10 minute snack. This will get you through a long morning, an afternoon-low, or work out as a super delicious dessert. 

I got the idea to make this recipe when I was in Dubai and Abu Dhabi. Dates are from high importance there. Until the 1970´s they were the staple food for the inhabitants. While they are fasting, they only eat 2 dates a day. I did not know that and was blown away when I heared that. We visited a local date market, which was something I had never heard of before but it was real impressive. You could see how this food is super important in this part of the world. In the shop we went there were 18 (!!) different date sorts. I did not even know that there was more than one existing. We tried lots of them and then bought 2 different ones, Madjool and Ajwa. Madjool dates are larger, sweeter, and richer while Ajwa dates contain less sugar and are smaller. I really liked them both but for this recipe I used Ajwa dates because they are smaller, which I think is better as a snack. 

Choloate covered dates are no rarity in Arabia. You can find them everywhere and with almost everything; white chocolate, milk chocolate, dark chocolate, matcha chocolate, camel milk chocolate (which I think is the most fancy hehe), soo many different types. Since we already had packed so much and bough 2kg of dates before, I decided not to buy any more but recreate them (as a healthier version) myself at home. 

So now I am back home and recreated them. I used the Ajwa dates, which are dried or course, dark vegan chocolate. The one I use is from HuKitchen, and is with all natural and healthy ingredients, and it is soooo good! Other than that I only use raw almonds and shredded coconut. This is as simple as it is. I love simple snacks because who likes to spend an hour in the kitchen with 100 ingredients when you are hungry or hangry RIGHT NOW. I can tell you, no one! 

Dates actually are a super healthy food, which made is possible for emirates to mainly eat those for hundreds of years. Dates contain 7 grams of fiber per 100g. This helps your digestion. There are lots of studies that show that eating dates increases your digestion. Moreover it helps you regulating your blood sugar levels. Plus dates are really high in antioxidants which protect your cells and reduce the risks of several deseases such as diabetes, Alzheimer or cancer (certain types). These are just some benefits of dates, but other than their health benefits, they are really delicious! Really!

I love pre-making this snack and just grab a few dates when I am hungry or pack some for work or school. I really like them when they are chilled and straight out of the fridge, because the chocolate is extra crunchy then, but they are delicious any way. Chocolate Coconut Almond Dates

A really delicious & healthy snack or dessert! Super simple and super good.

What you will need

  • 16 small Dates I like to use Ajwar dates (this equals about 150g)
  • 16 Almonds
  • 25 g chocolate
  • 2 tbsp shredded coconut

How to

That is how it works:

  1. Cut the dates in on one side (do not cut them in half totally!). Take out the seed and put an almond in it instead. Do the same with all of the dates.

  2. Stick/ squeez the size where the date had been cut in, together with your fingers, so it sticks together and it is closed.

  3. Melt the chocolate in a water bath or the microwave. Dip the dates in the molten chocolate as you like. You can completely dip them, you can dip the half horizontally or vertically, or whatever you wish. Then dip it in the coconut flakes. Place them on a plate and store in the fridge.

Notes

If you do not like coconut, do not use it. You can leave it out or substitute is with chia seeds or crushed nuts. The same accounts for the chocolate. You can also go for white chocolate, whole milk chocolate, or whatever you want.
