(The best) Coconut Citrus Porridge w/ Caramelised Oranges

I am going to be really honest with you, I like porridge. But I definitely have never been this person dying for porridge. It was good but never wow. Until. Until I discovered this and (not exaggerated) it changed my whole breakfast game.

Creamy, fresh deliciousness at its finest. You are getting all the tropical vibes you need to get through till summer and all the energy + tastiness you need to start into your day. Why is this porridge SO MUCH BETTER than all the other ones you tried before? The coconut flakes in it make it a lot lot better, plus, now comes the game changing part, the citrus juice. Orange and Lemon juice respectively. I do not know why but I know hooow big and good of a change it is.

What is special about this dish?

As already mentioned, it is not your average porridge cooked in milk and water (life really is too short to be eating average food tbh). It does not taste like plain pulp but it actually is good. Instead of only using water and milk to cook it, we are adding the juice of an orange and a lemon. Sounds like a small change but makes a huge difference. It somehow brings out the flavours a lot more, makes it fresher and more delicious.

That is it as far as our base goes but a porridge never really is a porridge without its toppings. And here we cannot be average either. So. What we are doing is sweet, maple caramelised oranges. No, this is not too many oranges but this is really, really good!

Is this dish healthy?

Yep, yep, yep. Actually citrus fruits are super healthy and beneficial for you, especially in winter. Their high content of Vitamin C helps strengthen your immune system and prevents you from getting sick or getting a cold. So they are good for you. Also, in German we say „sauer macht glücklich“, which means „sour makes happy“, so lemons are supposed to make you happy. Apparently this is being said because lemons, which are sour, have a positive impact and are good for our gut. And our gut has a tremendous impact on our emotional state of being. Therefore, sour makes happy. So, the citrus fruits in here do not only make you healthy, but also happy.

Besides our citrus star, we have got some more health nerds. The oats for example. basically a bomb of carbohydrates, fibre, vitamins and minerals. One of the oldest and still most nutrient-dense foods. They are just incredible to have in the morning because they will fill you up, keep you full and give you all the energy you need!

How to make this dish?

Easy peasy lemon squeezy. But for real, it is. It comes down to simmering the oats, coconut shreds and chia seeds with water, plant based milk and lemon + orange juice. Next we cut up the oranges into slices and caramelise them. You can either carefully filet them, so there are no white skins (which is a bunch of work – for the tutorial you can check my insta highlights) or just cut them regularly. We heat up the maple syrup in a pan and fry them in there on both sides till golden, brown, and caramelised.

Now we only need to finish everything up. To make it even creamier and coconutier (this very likely is not a word – although it would be really cool if it was), we are adding in a dollop of creamy, canned coconut milk. Then we serve it all up in a bowl, add some more plant based milk and that is it. Your breakfast game will bee changed forever.

How & when to best have it?

The Great thing about this dish is that it is perfect for mealprep. The base can be cooked and stored in the fridge for several days. When you want to enjoy it, you can either heat it up in the microwave or on the stove with a bit more plant based milk. As for the oranges, I would recommend to caramelise them freshly but what you can do beforehand is to cut them up and store in the fridge.

I personally love this as a breakfast but also a brunch or lunch would be perfect. And, not to forget, it actually is a really good dessert. Just as coconut mango rice but with oats and oranges. So very different actually, except for the coconut, but you get the concept right?

(The best) Coconut Citrus Porridge w/ Caramelised Oranges

This is at least 10x better than your average porridge! Fresh, tropical and citrusy vibes in a warm, creamy and comforting bowl of coconut oats topped of with perfectly craamelized oranges. It is called heaven on earth.

What you will need

  • 100 g rolled oats fine rolled oats work best here
  • 4 tbsp coconut shreds
  • 1 tbsp chia seeds (optional)
  • 100 ml water
  • 150 ml (plant based) milk
  • 1 heaped tbsp coconut milk from the can
  • 1/2 lemon
  • 1 orange
  • 2 tbsp maple syrup
  • a pinch salt

How to

  1. To a pot add the oats, coconut shreds, chia seeds, plant based milk, a pinch of salt and water. Heat it up and let simmer on medium heat stirring constantly until thickened.

  2. In the meantime sliceup the orange into wedges. If tehre is some juice running out and remaining on the cutting board, add it to the porridge. Zest the lemon and add this zest along with the juice of half of the lemon to the porridge.

  3. Add the maple syrup to a pan and heat it up. ONce it is bubbling, add the orange wedges and let them fry for about 2-3 minute son each side until golden brown.

  4. Before serving, stir the coconut milk into the porridge. Then divide onto the bowls, top with the oranges, more shredded coconut and also a splash of plant based milk.

  5. Serve and enjoy!

Lazy Overnight Vanilla Quinoa with Stewed Berries (vegan)

Kind of like overnight oats, just better and a bit different. Creamy, sweet and fresh and so incredibly easy to make. One of those breakfasts that don’t even take 5 minutes in the morning, yet are super nutritious and super flavourful!

I actually ate this 4 (!!) years ago when I was in Mauritius. They served it one day at the breakfast buffet and I absolutely loved it. Unfortunately I never had it again and never found it anywhere anymore. So, I always wanted to recreate it. Took me a while to actually do so and the result is pretty amazing. A pity that I have missed out on this for such a long time!

What is special about this dish?

Overnight quinoa not really is a thing. Overnight oats is really popular (& delish!) but overnight quinoa, to be honest, is at least as good! So having quinoa for breakfast is kind of special and then having sweet quinoa is also not so normal. Although I do not understand why because it actually is soso good!

The combination of vanilla, yoghurt & Quinoa is really so great and all of these components work together in such great harmony. And the best thing is, in the morning you just take it out off the fridge and enjoy it. Really, the best.

Is this dish healthy?

Yes, it is! Quinoa is such a nutrient-dense food, which actually is great to be having in the morning. It is packed with carbs, fibre, protein and nutrients and will keep you full for a while. If you want to read more about Quinoa, you can check out my January Top 5!

Besides our main ingredient we also have Vanilla Bean, which also is great in here because it naturally has a slightly sweet flavour so we do not need to add any additional sweeteners. Then there also is (plant-based) yoghurt and milk, which contain several vitamins (depending on which one you choose) and probiotics.

How to make this:

Really, really easy. Either you start with pre-cooked quinoa, which you either meal prepped before or bought ready to eat, or you are making it freshly. Both work equally fine. When you are making it fresh, you have the advantage of cooking it until it is really soft, which will make it taste better.

When you have the quinoa ready, we just combine it with some (plant-based) yoghurt & milk and a little sweetener of choice, I prefer honey. Then we need a fresh vanilla bean. Yes, it is possible to use vanilla paste, powder or syrup but fresh one has the most intense flavour. We’re also mixing that in. Then it goes into the fridge overnight.

The next morning we take it out, and heat up the frozen berries either in a pot on the stove or in the microwave. You can add some lemon zest and/ or juice or just leave them natural. Now it just needs to be served. I love it best with some roasted almond butter and fresh berries but this is up to you!

Meal prep friendly?

Totally! Since we anyway need to store it in the fridge you can also leave it there for more days. The texture or flavour won’t really change and you have a breakfast ready for several days!

I do not know why it took me 4 years to recreate this but I finally did and it was worth it! I hope that you’ll enjoy this at least as much as I do and that you’ll have a fun time cooking!

Lazy Overnight Vanilla Quinoa with Stewed Berries (vegan)

Like overnight oats – just better. Creamy, sweet vanilla quinoa with warm stewed berries on top. Ready to eat in 5 minutes!

What you will need

  • 100 g Quinoa
  • 300 g yoghurt (plant based)
  • 100 ml milk (plant based)
  • 2 tbsp honey or maple syrup
  • 1 vanilla bean
  • 300 g frozen Berries
  • nuts or nut butterr

How to

  1. The night before, add the quinoa to a pot along with 200ml water and a pinch of salt. Bring to a boil, reduce to a simmer and let simmer until all water is absorbed. Turn the heat to minimum and let it sit unil fluffy and everything is soaked up.

  2. Add the cooked quinoa to a bowl along with the yoghutt, milk and honey or maple. Slice the vanilla bean in half lengthwise and scrape out the inner part. Also add it to the bowl and let it sit in the fridge overnight.

  3. The next morning heat up the frozen berries in the microwave or on the stove and top the quinoa with them. Add some nuts and/or nut butter and enjoy!

Super Easy & Cozy Double Chocolate Granola

Double Chocolate Granola. Basically the taste of hot chocolate in form of granola on top of your yoghurt, porridge, nice cream or whatever. Pretty amazing. And pretty easy to make. Not convinced yet? Pretty healthy and soso delish! 

It’s been a while since I shared my last granola recipe – which was a mango coconut granola. We are in December now, which makes it kinda unsuitable for me to be eating a tropical granola (tbh this would only make me miss summer ever more) so I needed something else. First I though Chai Granola, because obviously everything chai is unbeatable but then I realised that I maybe already have shared quite a lot of chai recipes sooo – we are doing hot chocolate! And it is not in the tiniest bit less delicious! 

What’s special about this dish?

Not that it is a chocolate granola – no – it is a double chocolate granola. Chocolate before baking and chocolate after baking. Because who could have enough chocolate? Plus, it is really easy to make, and you can really top off anything with it. Or you could, as I do, eat it straight from the jar. And it works perfect for the pre Christmas time but tbh it is delicious at any time of the year!

Is it healthy? 

It definitely is healthyish. Oats are a great source of carbohydrates and protein, nuts provide essential fats and protein too. The cacao powder is extremely high in antioxidants and has actually been shown to have several health benefits. But as any dessert or sweet dish, we need something to sweeten it up and make it delicious! In this case we are using maple syrup or honey. Yes, these both still contain sugar but they also come along other nutrients and therefore are a bit more beneficial for our bodies than refined white sugar. And since we are not using tremendous amounts of it, it won’t hurt anyone. 

How to make this dish: 

This is fairly simple. OK you probably read this in all my recipe blog posts haha buttt it really is. Why? All you need to do is chop the nuts, mix them with the oats. Then you melt together the cacao powder, honey or maple and oil and hat it up. When this is combined well, you need to mix the oat-nut mixture with this and pop it onto a baking tray to bake. 

When done, just sprinkle some fresh chocolate and let it melt into the granola. When this hardens again, you’ll have these super nice little chocolate chunks in your granola, which is so good. Now you just need to toss in the cranberries and that already is it! Super easy right? 

Perfect Christmas gift

Homemade presents always are the most loved ones. And this granola is a perfect idea for such. Just make a bit more of it, pack it into a cute jar along with a kind little letter and bring it to your loved ones. It is not only easy to make for you but it definitely will also make them smile!

Super Easy & Cozy Double Chocolate Granola

It's like having hot chocolate in form of granola. So easy. Se delicious. Pretty healthy. All you need this winter!

What you will need

  • 200 g rolled oats
  • 30 g almonds
  • 30 g hazelnuts
  • 30 g walnuts
  • 5 tbsp cacao powder
  • 2 tbsp oil
  • 4 tbsp maple syrup
  • 1 tsp cinnamon
  • a pinch sea salt
  • 80 g dark chocolate
  • 3 tbsp cranberries

How to

  1. Preheat the oven to 180°C.

    Roughly chop up the nuts. In a bowl combine them with the oats.

  2. In the meantime heat up the oil, maple, cinnamon, salt and cacao powder until everything has motlen together. Toss the oats and nuts in the mixture.

  3. Lay on a baking tray with parchment paper and bake for about 10-12 minutes till crispy.

  4. In the meantime chop up the chocolate in small chunks (about 0.5cm) and toss them into the baked granola. Let cool completely and then toss in the cranberries.

  5. Enjoy with yoghurt, milk, oatmeal, ice cream, nice cream or just snack it straight form the jar!

Cinnamon Roll French Toast Sticks that Anyone Can Make

This is beyond good. I am not even such a big French toast or sweet breakfast lover but this … this is some seriously addicting stuff. Cinnamon-sugar, crispy on the outside, soft on the inside bread, dipped in a berry compote. Just saying, if you are not trying this, you are missing out!!

When it comes to breakfast I pretty much ALWAYS go for savoury. The only times I do not choose a savoury one is when we do not have bread, avocado or eggs at home or when I come up with a new recipe. Even when I am out for brunch, I never order something sweet. BUT this recipe made me reconsider my decision and this French toast is about to compete with avocado toast. And that means a whole lot.

What is special about this dish?

Think of it as French toast meets cinnamon roll – what do you want more? You have all the classics you love so much about French toast – the soaked bread, the sweet marinade, the maple syrup – and then you also have what you love most about cinnamon rolls – the cinnamon sugar!

PLUS this recipe is super simple, easy to make, requires very, very few ingredients and is healthier than your normal French toast. It is perfect for those cozy Sundays in bed or for Christmas morning or brunch. Ideal for those mornings where you just want good food but do not want to go to the grocery store.

Is this dish healthy?

Healthy-ish. It still does contain sugar, otherwise it would barely be a French toast, but instead of white, refined sugar we are using coconut sugar, which also comes along other nutrients such as fibre and vitamins. Instead of white toast we are using sourdough bread, which not only tastes great in French toast but also is partially whole wheat (in most cases).

And instead of only serving it with maple syrup, which also would be too sweet in my eyes, we are serving it with some greek yoghurt and stewed, frozen berries, that balance out the sweetness perfectly.

How to make this dish?

This probably is the best part about this. Anyone can make this. This is so incredibly easy because lets be honest who wants to spend hours in the kitchen when their tummy is empty and already growling?

We start by slicing the bread into sticks that are about 1- 1,5cm thick and 3 cm wide. Now we need to mix the ingredients for the „marinade“, so eggs (could be subbed for chia egg), milk (you could sub for plant based milk) , honey and cinnamon. Now we let the bread take a little bath in the mixture, for about 5 minutes. That way they soak up a lot of flavour and become juicy when frying, which is our next step.

We heat up some oil/ butter and fry the sticks for about 2-3 minutes on each side. In the meantime we are preparing a cinnamon sugar cover by simply mixing cinnamon and coconut sugar. Once the bread is done in the pan, they get a good shake in the cinnamon sugar and they are ready to be eaten!! Delicious!

When and how to best have them?

Anytime, anyway with anything. Not kidding, you’ll want them all the time. I love them as a brunch, a breakfast, a breakfast for dinner kind of thing or even a lunch. Yes, they would also work great as a snack or dessert.

It is great to make this when you have some (stale) bread from the day before and do not know how to make use of it otherwise or when you just want an easy but fancy breakfast!

Cinnamon Roll French Toast Sticks that Anyone Can Make

Delicious. Easy. Healthyish. Like a crossover of french toast and cinnamon roll. Perfect brunch in bed!

What you will need

  • 3-4 slices sourdough bread (about 1.5 cm thick)
  • 1 egg
  • 100 ml milk or plant based milk
  • 2 tbsp honey
  • 2 tsp cinnamon
  • 1 tbsp oil or magarine/ butter
  • 1/2 lemon juiced
  • 300 g frozen berries
  • 3-4 tbsp coconut sugar
  • 3-4 tsp cinnamon
  • some greek yoghurt to serve with

How to

  1. Cut the slices of bread into about 2,5-3cm wide sticks. In a large bowl combine the egg, milk, honey and 2 tsp of cinnamon. Add the bread slices into the mixture and let them soak it up for about 5 minutes.

  2. Heat up the oil in a pan and fry the sticks for about 2-3 minutes on each side until golden and crispy. In the meantime heat up the frozen berries with the lemon juice on medium high heat.

  3. To a bowl add the coconut sugar and remaining cinnamon and mix through. Once the bread is done frying, toss it in this mixture and add to a plate. Serve with greek yoghurt and the berries! Enjoy!
