My March Top 6

März 1, 2021 by katharina.kuehr Kommentar verfassen

We are in March, which means the best season of the year begins – spring. And alsooo we have got a new Top 6! Yes, you read correctly, it is 6 because we have a new category, which is restaurant of the month and let me tell you – I am very excited about that. I mean spring already is amazing by itself and with these 6 things it’ll be next level!

Restaurant of the Month – Budapest Bagels

Ever wondered what real happiness is? Go grab a bagel, your bestie and sit down somewhere in the sun and just appreciate the beauty of this moment. Honestly this category is a real upgrade for the monthly top 5 – apparently you also saw it this way as 132 of you wanted it and only 5 said they wouldn’t need it. But really – can you not need a good food recommendation? I don’t think so 🙂

So this month, for the first recommendation we have got some seriously good takeaway. And when I say seriously good I mean you are willing to take a 10 min walk to go back and grab more. This is how good. Budapest Bagels is a bagel shop which opened last summer in the heart of Vienna, close to the Danube Canal. It is a restaurant from Budapest (who would have guessed) which has next level Bagels.

Their Bagels are made fresh every day and filled and toasted freshly when you order them. When you leave, you have delicious, warm and fluffy bagels. PLUS, you have a great variety to chose from. Veggie with cheese and arugula or caprese. Vegan with vegan lox or vegan monthly specials. Or classic ones as New York salmon or brie and bacon. Whichever you chose, you cannot go wrong.

I went there in summer for the first time and realised that I hadn’t gone there for way to long when I went back recently. I tried the avocado walnut, the inside out cheese and the classic New York Salmon. My favorite way the New York Salmon but all of them were incredibly amazing! Plus, I believe they are really affordable and filling!

Price: 3,5-6,9€ (most are around 4,5€)
Rating: 5/5 (there won’t be restaurants with lower ratings on here anyway)
Location: Lilienbrunngasse 3, 1020 Wien

Have fun queuing up and grabbing yours – it is worth it!

Food of the month – Spinach

„Add a handful of greens“ – if you have been around for a while you probs have heard or read this pretty often already. But seriously, adding a handful of greens into any meal is the easiest thing you could do to make it a bit healthier – so why not? And especially as many of you (which I am very proud of) are participating in the lent greens challenge – I could not choose anything other but a green to be the star of the month.

So we have spinach; very controversial – some love it, some hate it. Spinach is such a cool green because you can have it in so many different ways! Fresh in a salad, puréed in smoothies, creamy as a side, stir fried in woks, wilted down in soups, … it just is so easy to add to anything. Really, the next time you go to the shop, get some fresh spinach and add it to the next meal you make. Such an easy addition and you get so many nutrients.

But which ones actually? Spinach has 2.2g fibre per 100g and consist of 91% water (this also is the reason for why it wilts down so much when cooking). Plus, it is high in Vitamin C, which is especially important right now, as it keeps your immune system healthy. Also it comes with a bunch of carotenoids, which your body can turn into Vitamin A. Besides, as many dark leafy greens, it is high in iron and calcium. Its numerous nutrients have shown to prevent several diseases, which is truly amazing.

So spinach is a real star, helping you to feel good and stay healthy. It deserves a bit more usage so just throw it into your next meal!

Recipe of the month – Cauliflower Wings

This. is. it. In case you were thinking cauliflower is boring – you were now proven wrong. Terribly wrong. This recipe has been developed as more or less a use-up-your-fridge-kind-of-thing, but for real, these often are the best ones. You may have already seen it in my Vegan What I Eat In A Day and now it also is up on the blog.

This recipe is really easy to make and so delicious. A mix between cauliflower wings and a barbecue but with a touch fo stir-fry. Sounds like a lot but really isn’t. All you need to do is toss the cauliflower in a milk-flour-spice mix and then in breadcrumbs and just bake it. After baking, you quickly fry it with some veggies in a pan and add the barbecue sauce and that’s it.

They have this soggy-after-crispy texture and it is SO good. Like the saucy barbecue-ness and the soft veggies to go with it. I don’t know – I just really like it. And have made it on a weekly basis recently. No more words needed, just a cauliflower.

Workout of the month – Heather Robertson

YouTube Workouts have definitely made it onto our quarantine essentials list. For a good reason. They are easy to access, for free, there is a huge variety to choose from, and they actually are fun. But I also get that doing the same workouts over and over can be pretty boring. So we got to switch things up and try different workouts from different people.

Recently I have found Heather Robertson on YouTube, whose workouts I have never tried before. And I was impressed. I love her style of the workouts, really. What she does essentially is doing a few exercises, then repeating them and then doing new ones. Her exercises usually are 40 seconds long with a 10 second break in-between.

What is unique about her videos is that she is doing a great mixture of exercises and also showing some unconventional, ones I have never seen before. Her HIIT Workouts for example are not only jumping jacks and high knees but also. boxing burpees and also some slower and controlled movement – and yes, you still sweat. Enough.

I tried a 15 minute HIT and a HIT – Pilates Mixture, which I really enjoyed. Especially the pilates one to be honest. Also, if you are not a HIT fan, there is a great variety of other videos to chose from. There are short ones, there are long ones, there is something for everyone. Just check it out and have some fun!

Product of the month – the slow label

The slow label is not just any label but an incredibly thought through, transparent and sustainable, yet incredibly gorgeous and pretty fashion label from Germany. It has been founded by Anna Laura Kummer, who is a founder, blogger, YouTuber, and above all an inspiration to live a better life.

Just as Anna, slow label also inspires to live a better life with its truly amazing products. It has timeless collections in the concept of capsule wardrobe and pieces that fit anyone and go well with everything.

Besides there incredibly beautiful pieces, what I love most is their transparency. In their Instagram highlights and on the website you can find out basically about everything regarding the products. For each product you buy, you get an exact cost split for how the price is made up, where the material is sourced, where the product is produced, where it is manufactured and how much is donated. This incredible transparency is amazing because you really know where your money goes and what you wear. Due to the ethical production and sustainable sourcing the items are very pricey though.

The goal of the slow label is to slow down the fast-paced fashion industry and approaching things with an honest and improvement orientated mindset. They encourage sustainability, timeless and versatile clothing and conscious consumption.

here I am wearing the turtleneck jumper in ecru

I got the Turtleneck Jumper in Ecru and honestly, I cannot go without it anymore. I wear it pretty much every other day and love it. It goes perfectly with anything, no matter if it is just casual with jeans, more elegant with a skirt or just cozy at home with joggers. It is perfect for any occasion. This clothing is not something you just buy, wear a few times and never again but something you’ll wear over and over for years.

Inspiration of the month – Stoic

Stoic comes from the word stoicism, which is a greek philosophy focusing on making the ones practicing more resilient, happier, more wise and virtuous. In other words; just making us better na more reflected people. just like this ancient philosophy the App Stoic does the same.

Stoic is a free app that helps you be a bit more elected, focus on important things in life, journal, see trends in your mental health and improve it overall. You can start your day with stoic by simply clicking on how you feel, what you will do today, writing down thoughts, feelings, important things, focuses in the day through guided questions. Also, in the end of the day you can summarise it, reflect on what you have learnt, what you could have done better, practice some gratitude, and sum up your day.

I downloaded this app a bit more than a month ago and am using It pretty much on a daily basis. What I love is that it sends you notifications to remind you what you are focusing on today and inspiring you with quotes from famous philosophers. This feature especially helps me to return to my intentions during the day and remember what’s important to me.

It is really helpful to keep track of your mental health, your progress but also to train your mind into a more grateful and positive one through different exercises as negative visualisation, relax breathing, journaling, quotes, writing out goals, fear setting, meditation and thoughts. Instead of jumping on social media, you can just practice some of the exercises and take care of yourself and your mental health.

This is something I have included in my morning and evening routine and really has helped me to become more calm, less stressed and just a bit more at peace with myself. Takes 5 minutes of your day, which you can for sure find, and really makes a huge positive impact.

Definitely worth a download, no matter if you are struggling with your mental health at the moment or not. It in anyway will contribute to making your day better.

I hope that you will enjoy all of these things and have an amazing march and a great start into spring!
Would love to hear how you like it!

All the best,
Love,
Katie

The Ultimate Barbecue Cauliflower Wing Stir Fry

Februar 26, 2021 by katharina.kuehr Kommentar verfassen

Really, I do not quite know what this is or how to name this respectively but what I can tell you is that it is seriously good! It kind of is a mix of wings, a barbecue salad and a stir fry. Yepyep, I know this sounds a bit interesting but honestly, it could not be more delicious!

We have got the wing shape and texture since the cauliflower is baked. Then we have got the stir fry flavours, especially in the vegetables and the good old barbecue taste. The cauliflower has the good soggy-after-crispy-saucy taste (I hope anyone understands what I mean here). It’s like when you bake something crispy and then toss it in a sauce and it gets softer and so full of flavour. Definitely amazing! If you only are a fan of crispy wings, you should go check out my cauliflower taco recipe and try this (insane!)

What is special about this dish?

It is not a classic of any cuisine, that needs to be said. We have so many different flavours and textures, like a fusion of the whole world in one bite. And, even though it is such a fusion, it really is not difficult to make. It comes down to a few minutes essentially. Plus, it really is something that everyone will like. It is one of those family meals anyone wants, while at the same time being great for just making it for one self. So, it is kinda extra but not hard to make.

Is this dish healthy?

I would definitely say so. We have got the cauliflower. I think cauliflower really is worth all its hype because it simply is great. Not only can you make an incredible variety of dishes with it, ranging from pizza to gnocchi and wings but it also is really nutritious and very very filling. Cauliflower is high in fibre and antioxidants as well as several Vitamins such as C, K, and B6. Just a really cool vegetable, plus it mostly is grown locally so, no excuses to not get it.

Besides the cauliflower we have got (plant based) milk, wholewheat flour, breadcrumbs, spices, oil and barbecue sauce. Wholewheat flour is a great source of fibre and carbs, same as the breadcrumbs (if you chose wholegrain ones). The spices, milk, and oil also contain several minerals, vitamins and healthy fats, which are great for your body.

Now we have got the barbecue sauce left, which is a tricky one. Let’s put it that way: Homemade ALWAYS is better than store bought. Why? You actually know the ingredients that are in it and you can pronounce them. Store-bought ones are often loaded with sugar, preservatives, artificial colouring, and, and, and. You know, the list goes on. If you decide to get a store bought one, make sure to check the label and see which ingredients it contains. Nevertheless, you can easily make a homemade one. You verrryyy likely already have all the ingredients at home and have it mixed in less than 5 minutes. The recipe will be down below here or in the barbecue chicken salad recipe.

How to make it:

If you have watched my Vegan What I Eat In A Day on Instagram, you by now know. It is everything else than tricky or complicated. No need to pre-cook anything or something like that, just an easy recipe. We start by chopping up the cauliflower and tossing it in a mix of plant based milk, cornstarch, wholegrain flour and spices. Next, we toss them in the breadcrumbs. Now they go on a baking tray, are drizzled with some oil and baked.

That’s it for this part. now you an chop up some veggies. I believe what works best here are bell peppers and spring onions, but feel free to use whatever you like and desire. These are just quickly stir fried in a hot pan with some oil. When the cauliflower is done baking, it is added along with the (homemade) barbecue sauce. Just combine all of this and serve with some rice, salad, bread, potatoes, or anything else you like! That already is it!

How and when to best have it:

You can meal prep it and store in the fridge with some extra barbecue sauce if you want. I most of the time serve it with rice and/or salad but it also must taste great in salad, or with some crispy, fries-style potatoes! That is it!

The Ultimate Barbecue Cauliflower Wing Stir Fry (Vegan)

Soggy-after-crispy sauce & super flavorful barbcue caulidlower wings. So easy, so good and so healthy. Just heaven.

Course Appetizer, dinner, Main Course
Prep Time 10 Minuten
Cook Time 25 Minuten
Total Time 35 Minuten
Servings 2 servings

What you will need

For the barbecue sauce:

  • 100 g unsweetend ketchup
  • 4 tbsp soy sauce
  • 2 tbsp maple syrup or coconut sugar
  • 1 tbsp vinegar
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce
  • 1 tsp salt

For the rest

  • 1/2 head of cauliflower (or one small one)
  • 200 ml plant based milk
  • 5 tbsp wholegrain flour
  • 1 tbsp cornstarch
  • 5 tbsp breadcrumbs
  • 1 red bell pepper
  • 3-4 spring onions
  • rice to serve with

How to

  1. Preheat the oven to 200°C. Break the cauliflower apart into smaller, bite-sized florets. Combine milk with flour, cornstarch, paprika and salt in a bowl. Add the cauliflower florets and toss them in the mixture.

  2. Add the breakcrumbs into another bowl and toss the cauliflopwer in it after the mixture, so they are all covered with the crumbs. Add them noto a baking tray and drizzle with oil. Here it is important that every floret is covered with some oil, otherwise they won't be crispy after baking and bake for 20-25 minutes until golden brown and crispy.

Combine all the ingredients for the barbecue sauce!

  3. In the meantime deseed and chop the bell pepper and pealed spring onions into about 1cm sized pieces. Heat up about 1tbsp of oil in a pan and stir-fry those for about 2-3 minutes. Then add in the baked cauliflower and the barbecue sauce and give it a good mix! Fry for another 2 minutes, then serve with some rice and/ or salad! Enjoy!

Super Tasty, Healthy & Messy Vegan Pan Lasagna

Februar 22, 2021 by katharina.kuehr Kommentar verfassen

Soft Pasta sheets in-between creamy, warm tomato sauce, tossed with a vegan, veggies-sneaked, creamy and tangy “bechamel”-style sauce. Topped with some vegan cheese and baked till molten and crispy. Not kidding, this stuff is seriously addicting. And no, you won’t miss the meat – this easier, healthier and messier version of the classic lasagna is a comfort dream. You`ll want to have this for dinner every night!

What’s special about this dish?

A lot. A whole lot actually. To be honest, we need to say a classic lasagna is pretty much untoppable, but we also need to say that it is not very nutritious, as delicious as it may be. So in this recipe we are making a few (rather a bunch) changes and swaps to make it more nutritious, plant based, easier but also at least as delicious!

For example, instead of the regular béchamel sauce we are using a lighter, veggie packed & vegan version of it, which is ready in a few minutes. Also instead of layering everything neatly, as it is common, we are making a messier version of it. I don’t know what it is but I really feel like messy dishes having this passionate and loving touch to it.

Vegan Bolognese

I am using the one from Pastafani and omg, it is so good. To be honest, I was very sceptical regarding vegan bolognese and thought this could not be good … BUT I was proven wrong. Terribly wrong. To make this clear, it does not taste like bolognese but rather like tomato sauce with Tofu chunks in it. But in a good way. I really love cooking with it, I also have another recipe on the blog with this – the Baked Bolognese Spaghetti Squash – and this recipe is at least as good. It is vegan, organic and delivers suuuuupeer quickly!! You can head to their online shop and check it out – which you really should. PLUS, if you want to same some money you can use UNEPETITE10 for 10% off your order. Really, really worth getting it.

You can use „UNEPETITE10“ to save 10% when getting the best vegan sumo

Otherwise you could also use a homemade vegan bolognese or a lentil Bolognese or just a regular tomato sauce. Or, what would also work great is if you fried some vegan ground meat in some oil for about 4-5 minutes, then add some tomato sauce and use this. A really quick version of a vegan Bolognese.

Is this dish healthy?

Yesso. Contrary to regular lasagna, this one actually is very nutritious. Why? Instead of regular lasagna sheets, we are using whole-grain ones. These contain a bunch of fibre and protein and also some good carbs. Next up we have some tomato sauce or vegan bolognese. Either one has a bunch of vitamins and fibre. Just make sure you check the ingredients when buying the sauce because a lot have a bunch of added sugar.

Then we have the „béchamel“ sauce. This is pretty nutritious. How? So, instead of milk, butter and flour or cream we are using completely different ingredients. We have cauliflower, which has been steamed before, some soaked cashews, plant based milk and nutritional yeast. This way it gets the whole color, the creamy texture, and the cheesy taste and it is really healthy!

How to make this dish?

What you really need to do, is to prepare the béchamel sauce. Which means steaming some cauliflower and blending it with the milk, cashews, nutritional yeast, dijon, salt, garlic and pepper. Next we just have to add everything to a pan. It would be best if you started by adding the tomato sauce to the pan, then adding the lasagna sheets into it. Now we are just adding some dollops of the béchamel sauce. Now, we try to mix it a mix, as good as possible. What’s left to do now is to add some vegan cheese on top and bake it in the oven.

When you take it out, you can either eat it straight from the pan, which I need to say is pretty legit or you divide it onto plates/ bowls. But what you should do, is add some (vegan) pesto, because this really makes everything better. Anyway, it is super tasty, saucy, comforting and healthy!

I hope you’ll like this dish at least as much as we do and that you’ll make it on repeat!! Have a great time cooking & enjoy!

Incredibly Quick & Easy Tomato Soup w/ Caramelised goats Cheese Bread

Februar 15, 2021 by katharina.kuehr Kommentar verfassen

Tomato soup in winter? Yes that’s possible – because we are using canned tomatoes! Don’t worry – it is at LEAST as delicious as the one with fresh tomatoes. Creamy, tangy and really easy. Plus, with the bread on the side you do not have your average one but a fancier (still super easy) version of it!

I, as a HUGE tomato lover (more like addict), have the hardest time in winter not eating everything with tomatoes. Tomatoes really are one of the things I miss most about summer! Anyway, we cannot have them fresh, but we can have the in their preserved way. Canned tomatoes are harvested when they are in season and then preserved in cans. Therefore you can enjoy them all year around, which is life-saving for tomato lovers like me.

What is special about this dish?

First of all it is made with canned not fresh tomatoes. Why? Tomatoes are not in season at this time of the year. You could still buy some but they are 1) not as tasty as in summer, 2) more expensive, 3) not good for the climate. Just because they are not in season right now, does not mean that we cannot enjoy some tomato soup – we just have to find other ways to make it! So we are using canned ones!

Plus we do not have some baguette to dip or some regular grilled cheese but a way fancier version of grilled cheese. Crispy wholegrain bread with goats cheese & honey straight out of the oven and still warm. This really goes perfectly with the creamy tomato sauce.

Is this dish healthy?

I would say so. We have got vitamins from the tomatoes, onions and garlic. Some carbs and fibre from the bread and some protein from the cream cheese. It definitely is no nutrient-bomb but it does provide your body with some essential nutrients! If you wanted to make it a bit more nutritious, you could serve it with a side salad!

How to make this?

Really, super easy!! It essentially comes down to frying some garlic, onion and herbs in some oil until golden. Then we only need to add some tomato paste, vegetable broth, canned tomatoes and some fresh herbs. This just simmers for about 15 minutes so it can absorb the flavours of the herbs. In the meantime we can prepare the bread.

Therefore we slice up the wholegrain bread and place it on a baking tray. To this we are adding some goats cheese. The creamier and fresher it is, the easier it is to spread on top of the bread, but here you can go for whatever you like most! Just add a drizzle of honey and bake it for about 10 minutes and that is it for the bread.

To finish off the tomato soup, we are now removing the herbs and adding it to a blender. To make it creamy and a bit tangy, we are also adding some ricotta cheese and a little touch of honey to recreate the sweetness of those beautiful summery honey tomatoes! Blend and serve!

Meal prep friendly and how to have it:

This really works great for meal prep or also for being made in a big batch. You can just make more servings, let it cool down and freeze it in Tupperware. Whenever you want to have some, just heat it up in a pot and you have got it ready in minutes.

The bread can not be meal-prepped but it really does not take very long to make 🙂 Beside the bread, I also love to serve it with some burrata cheese and balsamic vinegar!

  • 2 slices whole grain bread
  • 4 tbsp goats cheese (the younger and fresher it is, the easier it is to spread)
  • 2 tbsp honey

  1. Preheat the oven to 200°C.

  2. Finely dice the onion and chop the garlic. Heat up the oil in a pot and sautée both of them in there for about 2-3 minutes until fragnant and glassy. Add the canned tomatoes, vegetable broth and fresh herbs and let simmer for about 15 minutes.
