30-minute spicy Muhammara Breakfast Shakshuka (w/ NENI am Tisch)

Februar 5, 2021 by katharina.kuehr Kommentar verfassen

A creamy, spicy, tangy and so flavourful tomato sauce with muhammara. In it, perfecty baked eggs with runny yolks, set whites and topped off with some fresh Tahin and paisley. Dip it with some warm and soft pita bread and your brunch is perfect!

What is shakshuka?

Shakshuka is a dish that is believed to have originated in the Middle East, although it is not sure. It usually consist of olive oil, onion, garlic, tomatoes, peppers and sometimes cooked vegetables and minced meat. In this sauce there are poached eggs, which then are baked. It most of the times is sprinkled with a spice mixture of cumin, paprika, cayenne pepper and nutmeg. Today you can find it at many brunch spots or oriental restaurants.

What is special about this dish?

Instead of regular bell peppers, we are using Muhammara. What is Muhammara? This is a dip or spread made out of red bell peppers, walnuts and olive oil and it is SOSO good! It originally comes from Syria and now is very popular in oriental Cuisinie. Where do I get it? It is possible to make it yourself, but it definitely is easier, more convenient and quicker if you buy it ready! And there truly is no better one than the one from NENI am Tisch! You can get this at SPAR, EDEKA, Globus & tegut, so there are many supermarkets! If you do not have one of those near you – it is worth a little trip!

Besides our star of the show, it also is pretty spicy, although this is optional. If you like spicy, go for it (because chilli makes everything better) and if you don’t, just leave it out!

Is this dish health?

Yepyepyep. The muhammara is, as previously mentioned, made from roasted red peppers, and walnuts, which means you are getting a lot of Vitamins, healthy fats and protein. Besides, we have the tomato sauce, also high in vitamins and has some fibre. The extra onions and garlic do not only add more flavour but also more nutrients and the eggs add extra protein and healthy fats! That already is it – super simple!

How to make it?

Also not difficult! You start by frying the onions, garlic and chilli to the oil and let them sautés until soft. Next you add the Muhammara and stir it in so it cooks a little. Then we’ll add some canned (and crushed) tomatoes as well as tomato paste, water, salt and pepper and let it simmer for a few minutes to get really flavourful. If you want, you could now also add some kale or spinach to it to add some extra greens!

To poach the eggs, we are creating some mould in the sauce with the spoon. Then we’ll crack the eggs in and it already goes into the oven for 10-15 minutes until the whites has set and the yolks are still runny. To serve, we are just garnishing it with some parsley and dipping some pita! That is it – super delicious and super easy!

When to best have it?

This is great for a brunch with the family, as it is easy to prepare beforehand if you premake the sauce! Another great occasion is a quick lunch as it really comes together quite quickly and still is full of flavour. Or you could have it as a light dinner – I also really love that!

I hope you are enjoying this at least as much as we did, and that you’ll be making it on repeat! I would love to hear how you like it

Savory French Toast

Februar 22, 2020 by katharina.kuehr Kommentar verfassen

If you have been following me on the blog for a while, you will have probably noticed that I am more on the savory breakfast side. Not that Avo toast and poached egg could ever become boring, but sometimes it is nice to switch things up, or to try out something different whenever you have a little time. This savory French toast is the perfect example for that.

Yes, savory French toast. No that’s not the one that is covered in a liter of maple syrup and a ton of sugar but that one that is covered with cheese and sprinkled with chives and topped with a poached egg. So. Much. Better. Honk breakfast sandwich but with a twist, which takes it next level.

When to have?

I would not have this everyday, because therefore it is a little rich but you can have it every now and then after a sleepin or as a hangover cure. Or make it for brunch when you have friends over or even as a breakfast for dinner because that is a decent option! It does not take long to make, as almost all of my recipes because who likes to wait a n hour when your tummy is growling? No one, right.

What’s it made of?

Very few ingredients. First up; bread. Here I like to use dark or whole grain bread because it has a more intense flavor then white bread I believe, and it is a little healthier, which can never hurt! Next; eggs. Ken for the dipping batter and one poached one on top, which will be super yolk porn with that runny inside. Other than that we need some milk of your choice, grated Parmesan cheese, sea salt, herbs and black pepper for the batter.

As for the toppings, it is really up to you. I can’t leave out on Avocado of course (what’s a break my without?), and poached egg. Some more cheese and some super flavorful sautéed cherry tomatoes for that color touch and more flavor. I finished of with a sprinkle of chives. If you wanna do bacon, do bacon, if you are all the way down for hummus, you can top it with that! Really it is up to you. With such a delicious base you can’t really fail with the toppings!

This recipe will make you look like a perfect chef at the next dinner party because it is so good. And super simple and versatile.

Breakfast Quinoa 2 Ways

November 10, 2019 by katharina.kuehr 1 Kommentar

This recipe is for all of the breakfast lovers out there who want to switch up their usual morning game. With these breakfast quinoa recipes you can add a healthy twist to the absolutely best meal of the day, which, with no doubt is breakfast! If you do not know what breakfast is so important you can go check out my Ultimate Breakfast Tacos Blog Post.

Ok, I get it, you know how important this meal is but still do not want to spend a lot of time in the mornings cooking your meal because sleep?! Well, no problem! I got you. These recipes are super quick and come together in under 10 minutes in the morning, which is so amazing! This also works great if you are the type of person, which I am, who eats breakfast food for every meal of the day, no matter what time it is, because these meals are perfectly balanced meals with great nutritional value. The contain carbohydrates, protein, fibre, vitamins, and fats. So what do you want more? Delicious, quick, healthy, and super nutritious!

Although I rather am the savory type of person, I know that not all of you are so I decided to make both, a version for the sweet tooth, and one for hearty lovers. And honestly, I could not say, which one I like more. They are both super delicious and can be adapted to whichever season it is if you want.

The sweet breakfast bowl is made with frozen fruit to sweeten it up and give it flavor, which I love because if you buy frozen fruit you 1) can be sure it is fresh because it is frozen directly after being harvested and 2) it does not vary depending on the season, which means you can have berries in winter, since they have been grown and frozen in summer. The frozen berries are mixed with the pre cooked Quinoa, the sweetener of your choice and the Almond milk when the grain is reheated. This actually is great because you do not have to heat them up separately!

Once this mixture is heated up it can be transferred into a bowl and topped with whichever toppings are at your preference. Here you can totally decide on what you like most and be creative. I like to top mine with some plant based yoghurt, some fresh fruits such as bananas or other seasonal fruits, nuts and nut butters and some granola for that extra sweetness and crunch. That’s it is what you are thinking? Yes! It is as simple as that. And with such little effort you just created a super delicious and nutritious breakfast. Amazing, no?

The savory option is not much more complicated but you do need one more pan than for the sweet one (but it actually is not necessary). So first you fry up the bacon in a pan to get it nice and crispy. When it is done, you take it out of the pan and lay it out onto a kitchen paper to let any excess fat drip off. The bacon grease that remains in the pan does not have to wasted because we can use this to fry up an egg if you want to. I personally prefer poached eggs over fried ones so I would use the bacon grease if I wanted to add some more sautéed vegetables, but this is optional.

So if you want to poach an egg you have to bring a small pot with water to a boil. Once it boil, add about 1 – 2 tablespoons of vinegar to it and reduce it until it barely simmers. Crack a room temperatured egg into a small bowl and let it slide into the hot water slowly and carefully. The whites will set around the yolk and the egg can be taken out of the pot after 3-6 minutes depending on how soft you want the yolk to be. Place it on a kitchen paper to let any water that is still on it drain off. Meanwhile reheat the quinoa in a small frying pan with some fat. Here you can use olive oil, butter, or even the bacon fat. When I made this I actually had some truffle butter leftover in the fridge and heated it up in this and it was heavenly. You can also find truffle oil in any supermarket which will totally bring this to the next level for your upcoming Sunday brunch. Once this is reheated you can assemble everything. The quinoa on the bottom, topped with the egg, bacon, some fresh greens, and some sliced up avocado. If you feel like doing it, add some hot sauce on top or sprinkle some grated cheese. This is a perfectly balanced meal which is so decadent and delicious while still being healthy!

I hope that you will really like these recipes and if you do so be sure to show me if you recreate them and tag me with @unptcuisiniere or #unepetitecuisiniere!

Enjoy!
