Feel Good Bowl – My Limited Edition Charity Bowl!!

Juni 28, 2021 by katharina.kuehr Kommentar verfassen

For every single project with Une Petite Cuisinière I am very excited. But this time, puh, an extra level for excitement!! Why that? Because you can now buy a limited edition bowl that I have created just for YOU!!

All healthy, all fresh ingredients, a lot of organic produce, a lot of love and some charity going into this bowl. And now you can eat it as often as you want for an entire month!

What? When? Where?

What: a limited edition Charity Buddha Bowl
When: it is available for one month: from June 28th until July 28th
Where you can get it: at Elena‘s Buddha Bowls online or in store
(Praterstraße 16, 1020 Vienna AND Wollzeile 23, 1010 Vienna)
Price: 10€
That‘s special: 50 cents of each bowl sold are donated to Oxfam Germany

Why Feel Good Bowl?

This bowl has been designed to make you feel good. And to make you do good. Feel good because every single ingredient is chosen wisely to not only nourish good but also taste to good. There are plenty of veggies in here, combined with some fibre-loaded carbs, protein packed falafel and healthy fats to round it up. Plus, when purchasing a bowl you also do good. From every single bowl sold, there are 50 cents donated to the charity organisation Oxfam Germany to help fight poverty. You do something good for your body, your soul and the world.

Why Buddha Bowls by Elena?

Elena and I have a very similar opinion regarding food. It needs to be high quality, healthy and and obviously has to taste delicious! So, could there even be a better partner to work together with? At Elena‘s Buddha Bowls everything is prepared in a super careful way, making sure that as many nutrients as possible are kept in the food. The produce is steamed or pan fried only, and most ingredients are organic too! What is more, everything is prepared fresh daily.

what is in this bowl?

The content needs to be divided into 6 categories; a base, a dressing, a protein, some add-ins, a sauce and topping. The base is made up of half spinach and half spelt rice. This then is topped with a lime-ponzu dressing and on top go some falafel as our source of protein. Here it needs to be said that those falafel are not like typical falafel. They are super soft and fluffy on the inside and not quite as crispy on the outside because they are not deep-fried. Yet, you will say that they actually taste incredible in combination with the remaining ingredients.

Now comes the fun part, the add-ins. Here we are having a whole bunch of greens and also two specials. Those are broccolini and cherry tomatoes. They are specials because they usually are not available at Elena‘s but for this bowl they are. Broccolini is a type of broccoli, which you can imagine as a crossover of broccoli and asparagus. So basically broccoli with a long stem. Cherry tomatoes are regular tomatoes, just in small – cherry sized to be exact (who would have guessed). They taste slightly sweeter than regular tomatoes and are just heavenly in summer.

The remaining fruits and veggies are edamame, which are green soy beans and soso tasty, avocado (we can not make a bowl without some guac) and hummus. This hummus is soso delicious and soso creamy!! Real heaven! To add even more flavour, we have got a sauce on top, a tomato-peanut sauce to be exact. May sound a bit odd at first but it taste incredible! Really! If you want it a bit more spicy, you could just ask for the mango-chili sauce instead! Last but not least we have some toppings. Crunchy onions (soso good) and pomegranate for some freshness.

And voilà, ready is your bowl!

You probably can imagine, I am super excited for this to happen. It is just so exciting that we all can make a difference – in the world and in our bodies – by getting (a super delicious) bowl. I really, really hope that you‘ll enjoy it and I would love to hear and see (here or on Instagram) how you like it! Just text me, tag me, comment, whatever you want! I would love to hear from you!

Have an amazing month with lots and lots of delicious bowls!

All the best!
Love,
Katie // Une Petite Cuisinière

My June Top 6

Juni 3, 2021 by katharina.kuehr Kommentar verfassen

Although it really does not feel like it, we are heading into (or are already in) the 6th month of the year. And the previous 5 months have been very very crazy. Nevertheless, and besides all the ups and downs, we have made it through anyway and are now more than ready for Summer! For long evenings, picnics in the park and drinks at a friends house. And obviously, we cannot start into the month without sone seriously good Top 5!

As always, nothing of this is sponsored, all of these following are my personal recommendation, based on my experiences and my own opinion.

Restaurant of the month: NENI am Prater

This really is what I have been looking forward to for months. Ever since they first announced it (and I think that was November). And, oh my goodness, worth the wait – it did not disappoint. The new NENI am Prater is a must visit!

Why? For several reasons. First of all, the view. Just like holy damn wow. You have a view above all of Vienna during the sunset. The intense yellow and orange sky just covers every single building and the entire Prater. Just insane. And you have this view from the interior and exterior, since there is glass all around.

Then the atmosphere; chill music, chatting all around, friendly waiters who are in a very good mood, the noises and smells from the open kitchen, the open bar, where you can watch the barkeepers making drinks. It feels like you‘re sitting in some restaurant in the middle of Tel Aviv.

Well, and we cannot forget about the most important part: the food. This. Was. Delicious. The menu is similar to the NENI am Naschmarkt but still pretty different. At Prater it has more of the Balgan style cuisine, more of the sharing, the smaller meals, meals from the stone oven, and ALL sourdough bakery. There are plenty of dishes, no matter whether you want to go vegan, vegetarian, have some fish or enjoy some decent meat. It all was incredibly delicious. Plus, you can there now order the NENI organic Rosé there (which also tastes pretty amazing); from their own production. So worth a try!

If you go there (which you definitely should!) you simply NEED to try the popcorn falafel, the sourdough focaccia and the knafeh. There is no way you‘ll be going home without having tried this.

All in all, what I can say is: amazing. The view, the atmosphere, the service. It all has such a friendly and home-like feeling. Definitely will be going there more often. And once you have visited it, you‘ll be doing so too!

Food of the month: Strawberries

Everyone‘s favourite (at least in ice cream) fruit is finally here. Finally we can find those delicious, juicy, sweet goodies from our local farmers either on the farmer‘s market or in the supermarket shelves. But why are strawberries actually this healthy?

First we‘ll have a teeny tiny history lesson; strawberries are fruits that originally had grown in woods. Even today you can find some very small ones there during June/ July. Strawberries have first been planted in gardens in the 14th Century in France by Charles V.. The ones we eat today have first been cultivated in the 18th century and are called „Garden Strawberries“.

Now, moving on to the health side of it; strawberries are incredibly nutritious foodsl They are loaded with Vitamin C, which is very beneficial for immune and skin health, Manganese, Vitamin B, which is important for tissue growth and cell function and potassium, which, for example, helps regulate blood pressure. But there also are many other nutrients such as iron, copper, magnesium, Vitamin K, E and B6. Plus, strawberries are also loaded with water and with fibre, both good for your digestive system.

All of these nutrients have shown to contribute to many health benefits, such as blood pressure lowering, inflammation decrease and improve overall heart health. Strawberries definitely are very delicious and nutritious fruits!

If you want to try some strawberry recipes, you can try the Strawberry and Chickpea Caprese, the Pesto Couscous with Feta and Strawberries, the Strawberry Chia Jam, or the Asparagus and Strawberry Salad.

Recipe of the month: Pesto

Pesto never disappoints. And this one, let me tell you, definitely does not disappoint!! Really, if you only try one recipe from the blog, try this one. With pasta that is al dente, and creamy burrata – holy cow, the best thing ever.

So why is this the recipe of the month? First of all, I feel like pesto is a real summer recipe. It reminds me of Italy (since it comes from Liguria) and Italy basically equals summer. And since it‘s June, the month in which summer officially starts, it kind of is like a perfect match.

And well, obviously, it is so damn delicious. I made that on a Sunday night when the whole family was here, and believe me. Not a single pasta and not a single drop of pesto was left. If this is not a confirmation that this pesto is tasty, then I don’t know what is.

So all in all we can say; it is healthy, sooo tasty, summery, and damn easy to make.

Product of the month: girlfriend collective

This activewear brand is not just any activewear brand but one with a mission. A mission to make the world a better place. The planet and nature is their number 1 priority, but that does not make their designs any worse or not as pretty as conventional activewear. Actually, the opposite is the case.

So what’s the crux with girlfriend collective? What makes them special? They produce activewear made from recycled materials. To be specific; from recycled plastic bottles and fishernets combined with other materials. They turn plastic bottles into a yard through washing, breaking apart and polymerization. And the result is incredible. When touching or wearing the leggings, you would never guessed that this before has been a water bottle or a fisher net.

I personally just believe that this makes this brand incredibly unique and incredibly cool. Plus, their activewear is super super comfortable. Soso soft, yet sweat absorbing, very well fitting and looking really good. The designs are rather simple, which I love because it makes them even more sustainable because they are not out of fashion after a year.

I have been working out (especially running) in girlfriend collective for almost a year now and and still super super happy. The cloths have not lost any quality, still look the same as on day one and are as comfy. If you live in Europe, you may need to check some european sports websites (I order on thesportsedit), so you do not need to pay taxes and customs when ordering.

Next time you want to get some new activewear, make sure to check this brand out before, you won‘t regret it!

Workout of the month: supercycle

There were a bunch of things I missed in the pst months of lockdown. Going out to restaurants, leaving Vienna, seeing a bunch of people, and so on… but there has been very little that I missed as much as supercycle.

For all those of you who do not know Supercycle yet, it is a fitness studio in Vienna with cycling classes. The cost is at 14€ for students (per class) and at 16€ regularly. Normally, you‘d sit in a dark room, only with disco lights, loud music, and the best instructors ever shouting at you. And the feeling is unreal. If you haven’t experienced it yourself, it is hard to describe. Such pure happiness combined with pure sweat. Definitely a lot of both.

Happily, they were able to open again, so I literally ran to get there. And just saying; So so so worth it. I went to the outdoor studio (which very very sadly) closes soon, and the view was amazing, the feeling out of the world, and the instructor (steph), well she just made every drop of sweat so worth it.

Yes, you‘ll be feeling dead by the end of your class, you‘ll be sore for the next day and your legs will be shaking. Still, you will want to come back. So, give it a shot.

Inspiration of the month – the daily stoic:

Actually, this is not an inspiration of a month or for a month but an inspiration for a year. The daily stoic is a book with 366 pages with little stoic life lessons and meditation prompts, one for each day.

Usually, you‘d buy the book in December and start reading it on January first, since the pages are numbered after the days in the month (e.g Jan 1st, October 15th, …). But really, it is not necessary to buy it in December, you can get it and start at any time of the year. I myself got it in April and started it then.

The book itself is divided into 3 categories, each spanning over a period of 4 months; the discipline of perception, the discipline of action and the discipline of will. And those again are split into 4 subcategories, 1 for each month.
The cool thing about this is that you are focusing on one topic for a whole month, and then the next month a different one, but one that builds on the topic from last month.

I myself kind of included it into my morning routine because I really enjoy having a little something to think about during the day or to live my day by.

The book itself can be ordered at most book shops, or there even is a download of an e-book version in the internet that is for free.

I really, really hope that you‘ll be enjoying all of these things and that your June will be amazing!! Wishing you all the best,
Love,
Katie // Une Petite Cuisinière

Easy Peasy 20-Minute Green Falafel Curry (=heaven)

April 26, 2021 by katharina.kuehr Kommentar verfassen

May sound a bit weird – I get you. Falafel and Curry? Is that really good? And let me tell you, oh my gosh, it is not good – it is heaven. This combination has rested undiscovered for way too long and now deserves all the attention. It is just super delicious. Imagine a veggie-packed, spicy and saucy curry with fluffy rice and then those crispy falafel that soak up all the sauce. How can you not get hungry?

This combination was more like a coincidence. I really badly wanted to make a curry since I haven’t had one in way too long. But I did not have any tofu, chickpeas or chicken or anything at home that I could add in. What I had were falafel. So I combined one and one and just decided to try this combo out and it was a very very good decision. Really, it is not too far off – you would also eat a curry with chickpeas! So why not with mashed and fried chickpeas?

What’s special about this dish?

First of all I want to apologize to all those from Thailand or Israel who feel offended by this combo, because this dish really is not than traditional. Usually curry would be eaten with some sort of fish, seafood, meat, vegetables, tofu or chickpeas. Rather something plain. Falafel on the other hand, are usually eaten in a pita, or with hummus or just as they are with a dip. Yeah, you can already see – quite different types of eating those two foods.

And special thing about this dish is that we are combining two cuisines – and two of the best foods/ dishes in the world to create a new one, even more flavorful, even more delicious one. What is more, this dish is everything else than complicated or difficult and is ready in 20 minutes, which is amazing if you want a quick lunch or an easy weeknight dinner.

Is this dish healthy?

Yup, definitely very nutritious. Curry really is one of the best ways to sneak in as many veggies as possible. And it really is a great way to clean out your fridge. (I used only green veggies for picture’s sake). If you have carrots left, throw in carrots, if you have zucchini or bell peppers or broccoli or frozen peas – into curry you can really add in any veggie you have and you like. And that also makes it very very nutritious. Depending on which veggies you choose, you get different vitamins and nutrients, but you in any case get a bunch of fibre and deliciousness!

Besides all the veggies, we cannot forget about the falafel. Are falafel healthy? I would say -ish. They are mainly made out of chickpeas and herbs. This way they are loaded with protein, fibre and nutrients, which makes them really nutritious. Yet, they are deep-fried, which makes them being loaded with fat. Fat is super essential and can definitely not be left out in a healthy diet, yet too much of it is not healthy either. So yep, I would say falafel are healthy in moderation. Plus, they are super tasty.

Which falafel are the best?

To make this dish as easy and quick as possible we are using pre-made falafel from the supermarket. This is just super convenient. Still, when you buy those, make sure the main ingredient really is chickpea and that they do not have a thousand additives. I love the ones from NENI (I buy them at SPAR) or you could also make homemade ones. I have a recipe for a version that’s a bit lighter and super easy to make! If you want to try them, you can find the recipe here!

How to make this (super tasty) dish?

As the title says, it’s easy peasy. We need to start by chopping the veggies. Then we mix the curry paste with a part of the coconut milk. Why do we do this? This helps them to combine. If you add the curry paste first and then only later on in the cooking process the coconut milk, there often stay lumps of curry paste in the curry, and we don’t want that. Then we heat up some oil in a pot and fry the coconut-curry mixture. The frying helps it really intensify the flavour.

Now the veggies are added and the remaining coconut milk. This just needs to simmer a bit until the veggies are soft. In the meantime we can prepare our side, something like rice, quinoa, naan or whatever you want. And, we must not forget about the falafel. Those need to be reheated in the oven so they get crispy and warm and fluffy again. Heating them up really is a game changer so don’t forget about that! And lastly, we only need to plate (or bowl) everything and that’s it.

As you can see, this is really simple to make, fairly healthy and soso delicious (I promise!). This really is perfect for short lunch breaks, exhausted evenings and just a quick family meal. I hope you really try this because you really should not miss out on this combo for longer and I genuinely hope that you’ll enjoy it!

The Easiest 20 Minute Garlic Curry Eggplant

März 24, 2021 by katharina.kuehr Kommentar verfassen

20 minutes in combination with curry and soft eggplant? Who can say no to that? Seriously, standing in the kitchen for hours when we are hungry and don’t have much time is just not great fun. So we often grab something quick and often not the healthiest options. But this does not have to be the case! It is sooo easy to make something healthy and delicious is like only twenty minutes! And really, these 20 minutes of cooking probably are the most meditative break during your busy day.

What’s special about this dish?

it is not quite a regular curry – but it also is not a stir fry. It is something inbetween. Actually I have been inspired by Baba Ganush when I came up with this dish (which is a middle eastern eggplant dip) and wanted to make a curry version of it that is not quite as creamy. And that kind of is what it turned out to be – a mix of Baba Ganush, Curry and Stir Fry. Anyway, no matter how you label it, it is super addicting.

Contrary to regular curry, it does not contain many different veggies and it not as saucy. The only veggies in it are the eggplant and the edamame. Why? Because we’re keeping it simple. This way the flavors also come through more intense and you can really focus on the eggplant and edamame. The eggplant is basically the base and adds some softness and the edamame gives a nice & fresh contrast.

Is this dish healthy?

OH YES! The main star of the show is eggplant! Besides being super tasty, eggplant also is super healthy! Eggplants are loaded with vitamins, minerals and fibre. Plus they come with a bunch of antioxidants and they are incredibly easy to cook! You could roast them like in the Sesame Roasted Miso Eggplant Recipe or you could add it to an italian tomato stew or throw it into a salad! Options are endless!

Then we also have edamame. Edamame actually is one of my favourite foods ever! The actually are a bean, and therefore extremely high in fibre and protein!! Plus, obv. a bunch of minerals! That all comes with a side of rice, which provides us the carbs to stay happy and healthy and full of energy throughout the entire day!

How to make this dish?

That now really is easy as pie!! It really only comes down to chopping garlic and eggplant and frying them in oil untl soft. Here we need to salt the eggplant, because the salt helps to get the water out of the eggplant, which makes it cook quicker. All that’s left to do now, is to add the edamame and the curry paste that has been mixed with the coconut milk and let it simmer. To garnish we only chop up some spring onions and cilantro and there you go! Easy as pie!

Meal prep friendly?

Yepyepyep! Curry actually is one of the foods that is the meal prep friendliest. It actually enhances in flavour when you let it stand overnight. You can just store it separately from the rice and either heat it up in a pot with a splash of water or in the microwave. This really makes it even more suitable as a quick lunch, because then it really only takes about 5 minutes!

Honestly, this has become one of my new favourites and it is soso good! Easy, quick, super tasty, and healthy! I do not know what you are waiting for any more and why you are not already in the kitchen cooking! Have fun cooking!
