A combination that may seem odd at first but actually is incredibly delicious! Spicy, saucy curry in combination with fluffy rice and crispy falafel. Plus a bunch of veggies, so we make sure to get all or greens in. Ready in 20 minutes and tastes like heaven!
Start by preheating the oven to 200°C. Lay the falafel onto a baking tray and bake them for around 10-15 minutes until they are warm and crispy again.
Start preparing your side (like rice or quinoa)
In the meantime chop the veggies into bite-sized pieces. Combine the curry paste with about one third of the coconut milk. Then heat up the oil in a pot and fry the curry-coconut mixture for about 1 minute until fragrant. Add the veggies and stir-fry for another 3 minutes before pouring in the coconut milk and letting it simmer for about 10-15 minutes until the veggies are soft.
Once the veggies and the falafel are done we can plate the curry. Add the grain to a bowl, scoop in the curry and top with the falafel and some finely sliced cucumber and spring onions and garnish with fresh cilantro! Enjoy!
