Roasted Sweet Potato and Hummus Harvest Bowl

Crispy roasted sweet potato, fluffy quinoa, buttery beans, sweet pomegranate seeds and crunchy nuts on a bed of greens. All of this is tossed in a super duper easy hummus dressing to unify all the flavours. I believe you are already hungry. And what if I tell you that this is done in 30 minutes? Put the ingredients on your grocery list and make this!

Truly, nothing is better than a vibrant, colourful bowl packed with lots and lots of different ingredients, lots and lots of nutrients and lots and lots of yumminess. Bowls probably are the best things to eat because you can always switch things up and get creative depending on what you are craving and which foods there are in season!

What’s special about this dish?

This is kind of a mix of a bowl and a salad but it still is super filling. What I love about this dish is that you are getting in a lot of nutrients and greens and still have a comforting bowl.

But what’s most special about this dish is the super easy dressing. It takes 3 ingredients and is done in 1 minute. It is definitely not your regular salad dressing, but one that is full of flavour and tanginess and made with one of the best ingredients ever: Hummus. The dressing simply is made out of hummus, lemon juice and water.

Which Hummus works best?

It is best to use a very creamy one and not a hard one! You can make your own one or you can use a store bought one, whatever you prefer! I love to either use my homemade one or the one from NENI ! This one you can find at SPAR, Tegut, Rossman and EDEKA Österreich!

Is this dish healthy?

It definitely is! Salad, sweet potato, beans, nuts, hummus, quinoa. How can such a combination not be a nutrient-bomb? Let’s start slow; we probably all know that any sort of green is highly nutritious because of its high vitamin and fibre content. Sweet Potatoes actually are super healthy too. They are incredibly high in protein, vitamin D and C and in fibre! Plus, they provide you with lots of carbohydrates, which will give you energy to get going through the rest of your day.

Next up we have butter beans. These are loaded with protein and fibre. Great for your digestion and muscles, plus super tasty. Nuts are high in unsaturated fats, which will keep you full for a while and are important for your brain. Hummus, similar to beans is high in protein, fibre but also in unsaturated fats, which are good for the skin. Quinoa, my favourite grain of all time is a nutrient-bomb itself. Protein, carbs, fibre, vitamins, … you name it – Quinoa has got it!

How to make this dish:

Start by preparing the sweet potato. For this just chop it up into small cubes, toss it in the oil and spices and bake in the oven. Then you can leave them there for 20-25 minutes and in the meantime prepare the quinoa. Add it to a pot along with twice the amount of water and a pinch of salt. Bring to a boil and reduce to a simmer. Once all water is absorbed, turn down to low heat and let it fluff up.

Now you only need to make the hummus dressing and assemble. You could style it prettily or you could just throw everything into a bowl and toss it till you have got the creamy hummus dressing on everything!

When, how, meal prep?

I love this as a lunch because it is fairly quick, but it actually also works as a brunch or dinner bowl. I prefer having it as is but if you feel hungrier r in the need of more, you could serve it with some bread or scrambled eggs!

Yes, it is meal prep friendly, just store the dressing aside, so the salad and the ingredients will not get soggy and keep everything in the fridge until you enjoy it!

What you will need

For the sweet Potatoes

  • 300 g sweet potato
  • 1 tsp paprika powder
  • 1/2 tsp garlic powder
  • 1/2 tsp chili flakes
  • 1/2 tsp salt
  • 1 tbsp oil

For the dressing:

  • 3 tbsp hummus
  • 1/2 lemon
  • 2-3 tbsp water to thin out

For the rest:

  • 70 g quinoa
  • 200 g butter beans
  • 6 handfuls greens such as spinach, lambs lettuce, kale,..
  • 1/2 pomegranate
  • 1-2 tbsp almonds or any other nuts

How to

  1. Preheat the oven to 200°C. Cut the sweet potato into about 1cm sized chunks. Toss them with the spices and oil and bake in the oven for 20-25 minutes.

  2. In the meantime add the quinoa along wit htwice the amount of water and some salt to a pot and bring to a boil. Reduce to a simmer. Once all water has been absorbed turn down to low heat and let it sit for about 5 minutes until it has become fluffy.

  3. Mix all the ingredients for the dressing. If it is too thick, add more water, if too thin, more hummus.

  4. Once the sweet potatoes are done add them to a bowl along with the salad, quinoa, pomegrenate, beans and toss in the hummus dressing.

  5. Serve and enjoy!

Oatmeal with Caramelised Bananas

The new year is starting the day after tomorrow, which means that are are Honigbrot be coming a lot of healthy recipes up on the blog (plus a guide that will help you to stick to your New Years resolutions tomorrow)!! I bet a bunch of us wants to live a healthier life in 2020, so here is an amazing recipe to start off the new year.

Although the name doesn’t sound super healthy, it really is. Usually when we hear caramel, the first thing we think of is that sticky, rich super sweet paste that we can find in chocolate bars and ice cream. But caramel does not have to be made out of refined sugars, cream and butter. No, it also is the same when natural sugars in fruits are heated up, and caramelize, and turn sweet. This is how we are doing it in this recipe.

Yes, caramelizing sounds pretty fancy, but trust me, it is super easy. You can basically do this with any fruit of your desire, but it works better with some than it does with others. I would not recommend doing it with berries or mango, but it works great with anything thicker or more solid, like bananas, apples, pineapples or pears. To caramelize the fruit, you simply have to heat up some coconut oil (or any oil, but I like the light sweet taste of coconut) in a pan. Then you add some coconut sugar, or some brown sugar and let this combine well with the oil. If you want to make it even healthier, leave out the sugar, it also works without if the fruit is sweet enough, but I think it is better with. Once the sugar has kind of melted into the oil, you can place the fruit into it and let it fry for 1-2 minutes on each side. Depending on the fruit you are using, this will be quicker it slower. Bananas go real quick, apples for example need some more time.

But only the caramelized fruit would not be a balanced meal so we need some protein and carbs to do that. That’s why we are making some oatmeal! Oatmeal is super rich in protein, carbohydrates, and fiber plus it has a lot of vitamins. It really is a great and affordable food. Oatmeal for breakfast will fill you up a lot and keep you satisfied until lunch! 

To make a delicious oatmeal, you should know a few things. The first few times I made it, it turned out real boring, in my opinion but you can honestly take it next level by changing a few things. First, I would recommend using rolled oats. They are easy to cook and super nutritious. The second tip is to not only cook it with water. This makes it taste super boring. I always do one part water, and one part plant based milk. I love using oat milk for this because it has a slight sweet flavor, plus I get a local and organic one in Austria. Almond milk works great too, I just do not like to use it that much because it mostly comes from other continents. Next tip is to add some mashed fruit. This can be mashed banana or apple sauce. It helps to make it creamy and adds some sweetness! Next up: spices! You need to add some salt and a little bit of spice when cooking it! Last, for the cooking, is to add some yoghurt. Do not add it while cooking, but when it is done cooking, turn off the heat and stir it in, it makes it real creamy and super delish! 

Another really important aspect when making oatmeal are the toppings. This can change everything. Here we are doing caramelized bananas and hazelnuts which is bomb but there are so many more Options! You can top it with some n butter and stewed berries, fresh fruit, granola, the options are endless…

Oatmeal with Caramelized Bananas

Delicious and healthy breakfast! Packed with nutrients but tastes like dessert!

What you will need

  • 80 G Rolled Oats
  • 100 Ml Oat milk
  • 100 Ml Water
  • 2 Tsp Cinnamon
  • 1/2 Tsp Salt
  • 3 Tbsp Apple sauce
  • 3 Tbsp Yoghurt (Plant based if available)
  • 2 Tsp Coconut Oil
  • 1 Tbsp coconut sugar Can sub for brown sugar
  • 2 Bananas

How to

That’s how it works:

  1. Place the oats, the milk, the water, cinnamon, salt, and apple sauce in a sauce pan. Bring it all to a boil then reduce to a low heat and let it simmer until it thickens. 


    In a small pan melt the coconut oil. Add in the sugar and still until the sugar is dissolved. (If you are leaving out the sugar, leave out this step and just heat the coconut oil) Take the bananas and cut them in half lengthwise so you get 4 long & thin pieces. Add them to the oil-sugar and fry them for about 1-2 minutes on each side. 


    Meanwhile take the oatmeal off of the heat and stir in the plant based yoghurt. Place in bowls and add the caramelized bananas on top. Sprinkle some hazelnuts and serve!

Winter Salad with Baked Apple

Crunchy kale tossed in a creamy Honey Mustard dressing, with juicy, sweet baked apple, rich chestnuts, and fresh Feta cheese… this is like the BEST salad to make up for all of those Christmas cookies, and the 1 or 2 too many we’ve been eating all month long. 

Main or Side dish?

This recipe also makes an awesome side for your Christmas dinner. It is not too difficult, and it will impress your guests! Even the name itself will “Winter Salad with Baked Apple”, already sounds pretty fancy.. no? Although it sounds pretty fancy, and tastes delicious, it is not too hard to make. I love eating a larger serving of this as a light lunch or serve it along with some meat or fish as a side dish. 

Why is it special?

This salad recipe is not as refreshing as other ones are, but it is winter, so I think something more comforting and cozy is just right. These are also all seasonal foods, which I love. The ones I used for the salad, which basically is kale, apple, chestnuts, and sheep’s cheese, are all from Austria. This means that the transportation did not produce a lot of CO2, which is better for the climate. If you wish to make this recipe vegan, you can simply leave out the cheese, and there you are. 

What is in it?

The Apple adds a sweetness to the earthy kale, which, I believe, balances the entire salad out a lot. It also adds a kick and makes the salad not taste boring! The chestnuts add a winter feeling, because they are a very typical food at this time of the year (at least in Austria you can find them at every corner in December). The ingredients just work in great harmony.

Also the honey mustard dressing goes along perfectly with the apples and the kale. If you have fresh figs on hand, go ahead and throw them in because this combination is bomb too! Or if you don’t like the raw kale, you can steam it for a few minutes to make it softer, or use lambs lettuce instead! But, we are going to massage the dressing into the kale anyway, which is going to make it taste better and easier to digest. 

When to serve?

Because we don’t add the dressing at the very end, as you would do with a regular salad, this is a great make-ahead dish. You can prepare the salad before the guest are coming, then simply bake the apples, cut them up, and you are ready to go! It also works as a leftover the next day. 

Along with my green beans with almond bread crumbs, my caramelized pecan and fog salad or my vegan fall harvest salad this dish is a super delicious side dish for your Christmas dinner. Delicious and nutritious, plus it will impress your guests!

Winter Salad with Baked Apple

A delicious winter salad that includes all the delicious and warming ingredients of the season. Sweet and soft apples pair perfectly with rich chestnuts and earthy kale. All tossed in a honey mustard dressing!

What you will need

That is what you will need:

  • 6 handful kale stems removed
  • 2 apples core removed
  • 150 g chestnuts
  • 100 g Feta Cheese
  • some nuts (optional)

For the Dressing:

  • 2 tbsp Mustard
  • 1.5 tbsp honey
  • 2 tbsp orange juice fresh preferably
  • 1 tbsp Olive Oil
  • 1.5 tbsp white wine vinegar or apple cider vinegar
  • salt & pepper

How to

That’s how it works:

  1. Preheat the oven to 200C. Cut the apples in half. Take the chestnuts and cut a thin slice on one side (this is a necessary step, because otherwise they will explode, and your kitchen will look like a mess, talking from experience :)). 

    Once the oven is preheated, add the apples and chestnuts onto a baking rack. This works best if you place the chestnuts in a bowl, and put this on the rack, and take another bowl, and place on the very bottom of the oven, so the juice that will drop from the apples doesn’t stick and burn on the oven bottom. Bake them for 15-18 minutes.

    Meanwhile wash the kale and rip it into small bite-sized pieces. In a separate, smaller bowl add the honey, mustard, orange juice, oil, vinegar, and salt. Stir until well combined. Pour the dressing over the kale and gently massage it into it with your hands. This way the kale is able to absorb the flavor, taste less butter, and is easier to digest. Set it aside for at least 10 minutes. 

    Cut up the feta into about 1cm sized cubes. Once the apples and chestnuts are done baking take them out. Cube the Apple into small bites. Also peel and  roughly mince the chestnuts. Add everything to the kale and give it a gentle mix until it is all evenly distributed. 

    Serve and enjoy! If wished, add some cracked nuts on top, for extra crunch!

Healthy Christmas Pancakes

Who doesn´t love a good brunch at Christmas day? For my family, it is very typical to do this. It is like another coming together after a beautiful Christmas eve before the family is leaving. We all cook together and prepare the meal so we can sit down at the table and enjoy! This pancake recipe is the perfect meal to make for all those who have a sweet tooth but don’t want to start their day with something unhealthy. These pancakes are fluffy, juicy, wholegrain and super delicious! You can´t taste the “healthy” part of them, so you can make them for everyone out of your family!

Usually I totally am a savory kind of breakfast and brunch person. I would be the first to grab the avocado toast and scrambled eggs or the smoked salmon and leave the pancakes and waffles for the others because 90% of the time they are too sweet for me. I really do not like them if they simply taste like sugar, plus it is pretty unhealthy. Traditional pancakes are loaded with sugar, butter, and plain white flour, which will not make you feel full for long and raise your blood sugar levels. 

What is in it?

In order not to result in this but still enjoy a really delicious sweet breakfast or brunch, I am sharing this super delicious and healthy pancake recipe with you. Instead of butter, we are using apple sauce, instead of white flour, we aim for whole wheat (you cannot really taste the whole wheat out but if you really do not like the flavor or need something gluten free you can substitute it for other things. Just be careful with gluten-free flour because sometimes you need them in another ratio.), and honey instead of refined sugar. Honey is a natural sweetener and it still contains some vitamins, other than conventional sweeteners. Other than that, there are eggs, to bind and Greek yoghurt to give texture, add some richness, softness, and protein. The Greek yoghurt can´t be left out and I would not substitute it with normal plain yoghurt because it does not have that thick texture. But you can substitute it for Skyr, which is an Iceland-style yoghurt that also is thick. 

What to serve it with?

I love serving these pancakes with extra yoghurt, some cooked blueberries and a nice drizzle of honey. They would also work great with fresh fruits and banana and nut butter, but since berries & co are not in season right now, I did not use them. But if you want something in season to serve it with, you can serve it with my christmas apple sauce. It makes a great topping. Or you can add some cinnamon sautéed apples from the middle layer of my Apple crumble cake. Honestly, you can serve it with whatever comes to your mind, or what you love. If you love a good drizzle of melted chocolate or some fresh butter, because .. I mean it´s Christmas. We all deserve that!

Whether you serve this for your loved ones, or treat yourself, this recipe is a great recipe! You can also make them in a big batch, freeze them separately and heat them up in the microwave before serving. It makes great for christmas or any other brunch, super simple, and incredibly flavorful!

Healthy Christmas Pancakes

A great way to enjoy some delicious, indulging, breakfast pancakes. No matter if they are for christmas morning (they are the best!) or just some brunch. Easy, whole wheat, packed with protein and fiber!

What you will need

For the pancakes:

  • 1 egg
  • 50 g Apple Sauce for some next level pancakes, use my christmas apple sauce
  • 100 g Greek Yoghurt
  • 1 tbsp Honey
  • 1 tsp baking powder
  • 75 g Whole wheat flour
  • 40 ml almond milk Maybe more, depending on the texture

For the rest:

  • some coconut oil for frying
  • greek yoghurt for topping
  • berrie, frozen and cooked or fresh
  • any other toppings, as wanted: nuts, nut butter, fresh fruits, banana,…

How to

Thats how it works:

  1. Seperate the egg. In a larger bowl, add the egg yolk, the greek yoghurt, the applesauce, and the honey. Mix until well combined.

  2. In a seperate bowl whip up the egg white until fluffy and stiff peaks.

  3. Mix the flour and the baking powder well. Fold this mixture and the fluffy egg whites alternating under the remaining liquid ingredients. Once folded in, gently add the milk and mix. If it is too thick, add a little bit more.

  4. The consistency of the dough should be similar to a cake dough. A little runny but stick thick.

  5. Set the dough aside and leave it to rest for about 10 minutes.

  6. In a large skillet heat up coconut oil over medium heat. Bake the pancakes on each side for about 2-3 minutes. Once there are bubbles occuring, flip them.

  7. Add them onto a plate and top them with whatever toppings you desire. Enjoy!
