Creamy Tomato Chili Garlic Prawns (How to Get Your Family to Eat Veggies)

Getting a brother who is a non-vegetable fan to eat veggies seems impossible. But this dish actually makes him ask for it! A creamy, spicy, garlicy tomato sauce that is packed with flavor and deliciousness with soft cooked prawns soaking in it and some bread to dip in – how could someone possibly not ask for this dish? Bonus: it really is not difficult to prepare, meaning anyone could make it and it takes very little time to make.

The claim with my brother is no joke: whenever he gets to choose something I cook for him, he asks for this. And yes, technically tomatoes are fruits and not veggies, but this is such a great way to sneak in some extra vitamins for non-veggie fans!

What is special about this dish?

It is not your regular chili-garlic prawns but a bit fancier. Like a crossover of dish and a a creamy tomato sauce that you‘d add onto pasta. And this is not only what makes this recipe unique but it accounts for the delicious, creamy flavor.

What else is quite special about this dish is that it is really versatile. Depending on season and pantry/ fridge stocking, you can adjust it. For example, if you do not have fresh cherry tomatoes, you could also use large tomatoes or canned ones. That even enables you to cook this in winter, when tomatoes are not in season. Another switch would be substituting the bread. In case of not having bread at home, to go along with it, it can be switched for rice, quinoa or even pasta. Also, the prawns can vary from time to time. If you can only find smaller ones, use those – it‘ll be delicious anyway! If you happen to find large ones though – great! Even better!

Is this dish healthy?

It can definitely be claimed that this dish is nutrient dense. It comes with a bunch of nutrients from all different sources! First of all, the tomatoes account for a solid base of fibre and vitamins. The chili and garlic add even more. The prawns provide a large serving of protein, iron and calcium. Also, they come with a range of vitamins and minerals to keep your immune system strong and stable.

The olive oil and greek yoghurt found in the sauce make sure you have a healthy amount of unsaturated fats and even more protein. The wine we add to the dish mainly is a source of flavor, and no worries, the alcohol cooks down anyway. When serving with some sort of grain (such as bread, rice, quinoa or pasta), we also make sure that we consume enough carbs to stay energized. Make it wholegrain for even more fibre and nutrients! As you can see, this dish indeed is packed with nutrients that will keep you happy and healthy!

Can really anyone make this?

I‘d definitely argue so! It is so easy! The first thing that needs to be done is to thaw the prawns. The probably easiest way to do so is placing the frozen prawns in a bowl with warm water. By changing the water every now and then, as soon as it gets cold, and refilling it with warm water, lets the prawns defrost slowly. Once they are free of ice, they can be drained and laid out on a kitchen towel to let them dry. It is important that they are really dry and do not let any water for several reasons: first, they won‘t turn as crispy if they are still wet and secondly, the water will splash in the hot oil. And this can hurt when touching your skin.

That already was the most challenging part. All that is left to do now is to finely slice or mince the garlic and chili and to half or quarter the tomatoes. Or to chop them into bite sized pieces if using larger ones. First the spices and then the tomatoes and prawns are fried in a little olive oil and then deglazed with white wine. Just before serving we still stir in a little ricotta or greek yoghurt and tomato sauce and voilà, it is ready to be served! Easy right?

To be honest, it is impossible to imagine our staple recipes without this one, I can only suggest you try it out!

Creamy Tomato Chili Garlic Prawns (How to Get Your Family to Eat Veggies)

Imagining out Mealplan without this recipe is impossible – spicy prawns drowning in a creamy, delicious tomato sauce packed with flavor. Some fresh bread to accompany it? Plus, it is ready in 25 minutes (at max!!)! Who could even say no to that?

What you will need

  • 1 kg prawns (thawed if they had been frozen before)
  • 2 tbsp olive oil
  • 1-2 fresh chili (depending on how spicy you like it)
  • 3-4 cloves of garlic
  • 500 g (cherry) tomatoes (you can also use canned tomatoes if not in season)
  • 100 g greek yoghurt or ricotta
  • a splash of white wine
  • 100 ml tomato sauce
  • salt, pepper, oregano

How to

  1. Finely slice the garlic and mince the chili. Half the cherry tomatoes or cut them into bite sized pieces, if using larger ones.

  2. Pat the thawed prawns dry. To a pan add the olive oil, garlic and chili and heat up all together. Once hot, let them fry for about 1-2 minutes before adding the prawns and tomatoes (in case of using canned tomatoes, let the prawns fry for a 2-4 minutes before adding them in).

  3. Generously salt, pepper and season with dried oregano. After about 4 minutes of frying, add a splash or white wine, turn the heat down to medium heat and let it simmer for about 4-5 minutes. You may need to add a little more wine.

  5. In the meantime prepare a side to accompany it. Just before serving, stir in the tomato sauce and greek yoghurt or ricotta and let cook for another minute. Serve and enjoy!

Super Quick, Family-Approved, Herby Prawn and Avocado Salad

Summer season = salad season. We all know that. When it’s hot outside (which it hopefully is soon) and the sun is shining we neither want to spend hours in the kitchen, nor can anyone really eat something warm. So salads are the perfect dish to eat. They are quick to make, healthy and mostly. But they can be boring so easily.

They definitely can, but they don’t necessarily have to be. If you only make the same one over and over again, I agree, this would be boring. If you switch it up though, and add basically an entire herb garden and make the best garlic prawns ever, and still only spend 15 minutes making it, then it is a really good kind a salad. And yep, it is very delicious too (my brother ate the entire bowl so it‘s got to be delicious!)!

What is special about this dish? 

Well, it definitely is not your average salad! Its not just greens & dressing & maybe some veggies – no; it is way more delicious!! To make it taste a bit more like summer and a bit fresher, we are adding a whole brunch of herbs. Mint, basil, parsley, really, whatever you have on hand. 

And also the dressing is really really fresh, since we‘re adding some lemon and even more herbs to it, but also some honey. It‘s sweetness balanced the sourness of the lemon out perfectly. And not to forget about the prawns. They are SO. good. They are fried in olive oil with fresh garlic. While it probably is not the best recipe for a date, it definitely is the most delicious way to cook prawns!! The combo of garlic and prawns simply is unbeatable! 

Is this dish healthy? 

It definitely is! There are a whole lot of greens in here. All the herbs and also the salad are packed with different nutrient and vitamins and also a lot of fibre. Adding herbs to dishes is such an easy and flavorful way to add vitamins and fibre. We also get a decent amount of essential nutrients, and also a lot of water, from the cucumber. 

The prawns account for the right amount of protein and the olive oil makes sure we are not lacking those unsaturated fats. The lemon keeps our immune system strong with its Vitamin C. The only thing that is not directly included in the salad is a source of carbohydrates. But here you could just have some whole grain bread on the side or add some quinoa or couscous in the salad. 

How to make this dish?

There are three things that need to be done. 1. prepping the veggies; therefore we need to wash the salad, slice the cucumber and peel and chop the avocado into cubes. 2. making the dressing; here we need to mix some olive oil, lemon juice, honey and the finelly chopped herbs. And 3. we need to make the prawns; that really only comes down to finely slicing some garlic, frying it in hot oil for about 30 seconds and then adding the prawns and cooking them on each side for about 3 minutes. And voilà! 

In case the prawns are frozen

just add them to a bowl with some hot water (not boiling one, just warm one) and let them stand for about 30 minutes, changing the water every 10 minutes to let them thaw without cooking. Then just pat them dry with a kitchen towel and cook as the recipe says! 

This salad is amazing for those hot summer days or for whenever you are craving something light and healthy and fresh. It anyway is very easy to make and a must try!

Super Quick, Family-Approved, Herby Prawn and Avocado Salad

Salads in summer are simply perfect. But always having the same one over and over again also can be veryyyy boring. That’s why we need to switch things up and make this delicious goodie.

What you will need

For the prawns:

  • 800 g prawns*
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic

For the salad:

  • 1 head of salad
  • 1 avocado
  • 6 tbsp olive oil
  • 1 lemon (only the juice)
  • 1 tsp mustard
  • 2 tsp honey
  • 1/2 tbsp chopped mint
  • 1/2 tbsp chopped parsley
  • 1/2 tbsp chopped dill

How to

  1. Peel and finely dice the garlic. Heat up the olive oil and butter in a pan and sauté the garlic in the hot oil for about 30 seconds, then add in the prawns. Fry them on each side for about 3 minutes until pink and cooked through. 

  2. In the meantime finely chop the herbs and mix them with the olive oil, lemon juice, mustard and honey. 

  3. Wash and tear the salad into bite sized pieces. Half the avocado, remove the pit and scoop it out with a spoon. Then cut into about 1cm sized chunks. Also add this to the salad. 

  4. Mix with the dressing and divide onto the bowls. Top with the prawns and garnish with fresh dill. Serve and enjoy!

Notes

*if the prawns are frozen, add them to a bowl and cover them with warm water. Let stand for about 5 minutes, then drain and repeat until they have thawed. Then lay them onto a kitchen towel and tap them dry.

Octopus Salad

A super tasty summer salad. It’s not like your boring greens with olive oil and vinegar. No, it is so much more. Packed with tons of different things, crispy octopus, conch veggies, sweet mango and a super fresh dressing! That’s all we need for a (rather) quick summer lunch.

We always go to Italy for our summer holidays. Every single year. And when we are at the sea we eat a bunch of sea food. (I mean if not there, where else would you have it?). I have eaten pretty much all sea food there and absolutely love it. Except for octopus. I just wasn’t quite mine or what I loved. And then came quarantine. And we wanted to cook as many different dishes as possible (I think the first 4 or 5 weeks we did not make anything twice!). So every weekend we would go to a market close to us and get some good fish. And so, once I saw that Octopus and I just though like: alright, why not trying it out again, maybe I can make it taste good and so I got it. And that was a really good decision because this turned out to be such a delicious dish!

Is octopus healthy?

It actually is super healthy. Just like most sea foods, octopus has a pretty low fat content. Therefore it is not very high in calories. But, it is really high in protein. A 100g serving almost has 30g of protein which is quite a lot. Plus it also is pretty high in iron, selenium and Vitamin B12. So all in all pretty healthy.

Octopus Salad

Octopus is mainly eaten in asian cuisines like Japanese. Also, Mediterranean countries use it a lot in cooking. You can find it very often in the south of Italy, Portugal, Spain and Croatia. Another part in the world where it is pretty common to have it is Hawaii. There it often is served in poke bowls (which I also have a recipe on the blog). Octopus salad though, is often served in Italy. There a lot of times it is prepared with celery, tomatoes and parsley.

While I got my inspiration from the rather „traditional“ salad I kind of changed it up completely. And it turned out pretty bomb. Why? I personally find that it is a bit boring with so little ingredients. Also, I love to eat the rainbow and combine as many flavours as possible. And there probably is not easier way to eat the rainbow than in a salad.

So we are using some basic greens as a base. I love to use a mix of baby spinach and lambs lettuce (Vogerlsalat) but any sort of greens works fine. To make it more filling we also add some potatoes. Those are just steamed in some water. I like best to use baby potatoes because you can eat them with skin but if you can’t find those, just use regular ones.

As for veggies we love using some green beans. Cut them up before steaming and then add them to a pot along with the peas or edamame. For some freshness and crunch we also add some bell pepper, tomatoes, radishes, cucumber and spring onions. And last but not least we are having some mango. This sweetens it up a little and makes it so incredibly tasty.

The dressing also is really simple. It is just olive oil, lemon juice, honey and a little vinegar. Super simple. But honestly, you do not need more because the salad already is really rich in flavour.

When to best enjoy it

I love this, for both lunch and dinner. It is not hard to make, comes together pretty quickly and does not sit super heavy in your stomach. Also, this works really well as meal prep. You can already add the dressing beforehand and just store it in an air tight container in the fridge for up to 2 days. It also is super nice to take this on a picnic and enjoy in the sun!

Octopus Salad

Crispy octopus with many many fresh veggies, comforting potatoes and sweet mango. All packed up into one super delicius bowl!

What you will need

  • 500 g octopus about 4-5 tentacles
  • 2 garlic cloves
  • 1 red chili optional
  • 250 g potatoes I prefer using baby potatoes
  • 1 bell pepper
  • 1 cucumber
  • 1 mango
  • 4 spring onion
  • 150 g green beans
  • 100 g peas or edamame
  • 100 g cherry tomatoes
  • 4 tbsp olive oil
  • 1/2 lemon juiced
  • 1 tbsp vinegar
  • 2 tsp honey

How to

  1. Add the baby potatoes to a pot. Cover with water and bring to a boil. Let simmer for 20 minutes. Then drain them. If you are using larger potatoes you may need to cook them longer and need to peel them after cooking.

    Slice the octopus into slices, each about 0,5-1 cm thick. Heat up 1 tbsp of olive oil. FInely slice the garlic cloves and chili and add to the hot oil. Sauté for about 30 seconds. Add the octopus in it and pan fry for about 5 minutes on medium high. Then reduce the heat to low and let it kind of simmer a bit for 5 minutes.

  2. I the meantime chop up all of the veggies. Cut the cucumber into thin cubes just as the bell pepper. Half the cherry tomatoes and cut the spring onions into thin slices. Peel the mango and chop it up smaller. Cut the green ebans into bite sized pieces.

  3. Bring another pot with water to a boil and steam the green beans and peas for about 4-5 minutes.

  4. When the potatoes have cooled a little bit, cut them up into slices or cubes. Add all of the ingredients to a bowl. In a seperate one combine the remaining olive oil, lemon juice, vinegar and honey. Generously salt and pepper the salad and toss in the dressing. Serve and enjoy!

Summer Poke Bowl

The all beloved and super trends bowl. I mean, how can you not love it? Rice, fresh seafood (or tofu), all the veggies, fresh fruits, covered with a super good sauce. What do you need more? Step away from classic and make this super tasty summer version!

What even is poke?

Poke is a traditional dish that originated in Hawaii. It usually is raw fish (just like Sashimi) over rice. This rice mostly is prepared as sushi rice. The fish usually is marinated before with soy sauce and then it all is assembled in a bowl with lots of veggies.

My poke bowl love

I have always been loving sushi. I also have always loved all kinds of bowls. And therefore I love poke bowls. Before it even was a trend I would always get it when I saw it on the menu. Because it is so good. And then, luckily, it became a trend and now you can find lots of places in Vienna that serve extremely delicious poke bowls. My absolute favourite one is HONU TIKI Bowls because they are just the best ones! Me and my bestie almost always go there to have them! Insanely good.

Since we went there (and still go there) very often, we also spent a lot of money on them. And they are not cheap. Raw and fresh seafood is pretty expensive and so are other fresh ingredients. So I thought, why not making it at home? It is easy, healthy and pretty tricking tasty.

How to build up a poke bowl:

Similar to my guide for a buddha bowl I am now gonna explain to you how to best build up a poke bowl.

  • We need to start with a base. Traditionally I would use white rice or best, – – Sushi rice if you have that on hand. It is filling and adds a nice texture. If you want to can also use greens as a base to have more of a salad version or you could also do half half.
  • Next we need our source of protein. Raw (or also cooked works fine) fish such as tuna or salmon but you can also long for tofu or grilled chicken, prawns or beef.
  • Next up our marinade. This is important because it adds a lot of flavour to your protein and the entire bowl. I love doing a teriyaki sort of marinade but feel free to do something else.
  • Of course we also need some veggies. Here you are totally free and you can add whatever you want. For me, edamame or peas, cucumbers and tomatoes are always a must! But honestly, everything works well here!
  • Not to forget: Fruits! May sound a little weird a first but it is a game changer. It adds so much sweetness and freshness to it, that’s insane! I promise you, you will love it
  • A crunch: Here I love to use spring onions, sesame seeds, nori, or some sort of nuts. This just adds such a nice twist to the texture! Absolutely love it!
  • The sauce: Maybe this is the most important part of the entire bowl! Why? Because you are going to mix everything with it, and if it is not good, everything won’t be good. Here you can long for a mayo based one (which not always is the healthiest choice) or some soy sauce or peanut sauce.

What is in this bowl?

As a base we are using Sushi rice. The one I use is from Reishunger and it is super tasty! Btw: with the code REISKATIE you can get your favourite rice for free there!

As for veggies we use peas, broccoli, tomatoes, asparagus, cucumber and wakame (these are alleges which you can get at your asian restaurant or your fish market).

Fruitwise, we are going for apricots. they are coming into season now and they are regional. If you don’t like those, go for mango instead.

Our protein is salmon or tuna. I always make both of them because in my family we like different ones. But you can also use tofu if you want a vegan version, and leave out the fish sauce in the marinade

So next on to the marinade, it is sort of a teriyaki one. Super good and addicting!

Our crunch are spring onions, which are super good here! They add a crunch and some freshness.

Last but not least: the sauce. A peanut sauce. This stuff is seriously good. And seriously addicting. But also super easy!

Are poke bowls healthy?

Yes they are! Well usually, you always have exceptions. But rice is not unhealthy, raw fish is healthy because of its high protein content and it is not fried or prepared with a lot of oil. Plus, in poke bowls you always have tons of veggies, which also give you loads of vitamins, just as the fruits does. The sauce on top is not always healthy, so make sure to check what you are using. Mayo-based ones are not always healthy. What you should also look out for is that you do not always choose soy sauce based sauces because they are loaded with vitamins. So all in all, pretty healthy.

I hope you love this recipe as much as I do (because I am obsessed with it) and enjoy it all throughout summer. It is such an easy one, I would really recommend making it!

Summer Poke Bowl

A summery version of the all time favorite and healthy dish! Raw fish with plenty of veggies, rice and a super tasty peanut sauce!

What you will need

  • 600 g tuna or salmon in sashimi quality (meaning you can eat it raw)
  • 250 g rice
  • 1 tbsp rice wine vinegar
  • 1 tsp sugar
  • 200 g broccoli
  • 100 g peas
  • 200 g asparagus green or white whatever you want, but when using white you need to peel it first
  • 1/2 large cucumber
  • 200 g tomatoes
  • some wakame optional
  • 4 apricots
  • 1 spring onion

For the marinade:

  • 50 ml soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce optional
  • 2 tbsp coconut sugar
  • 1 lime juiced
  • 1 tbsp sriracha/ hot sauce optional
  • 1 tbsp honey or maple

For the peanut sauce

  • 100 ml full fat coconut milk
  • 30 g peanut butter about 2 tbsp
  • 30 g soy sauce about 2 tbsp
  • 1 tsp hot sauce
  • 1/2 lime juiced

How to

For the fish:

  1. Combine all the ingredients for the marinade in a large bowl. Cut up the fish into 1-1.5 cm sized cubes and add to the marinade. Marinate for 2 hours or longer. The longer, the more intense the flavor will be.

The rice:

  1. Prepare the rice according to package instructions. When done, remove from the heat and let cool for about 5 minutes. Then mix the rice wine vinegar with the sugar and mix it into the rice. Set aside.

The veggies & fruit:

  1. Steam or boil the broccoli, (green) asparagus, and peas for about 5 minutes in salted water, then drain. Cut the cucumber into small cubes. Half the tomatoes when using cherry tomatoes or also cut them into small cubes when using large ones.

    Depit the apricot and also cut it into small cubes. Finely slice the spring onions.

The sauce.

  1. Mix all of the ingredients for the sauce in a bowl. When it is too thick, add some water to thin it out.

Assemble!

  1. Divide the Sushi rice onto the bowls. Next add the fish with the marinade followed by all the veggies and fruit except for the spring onions. Top with the sauce and then lastly add the spring onions! Serve and enjoy!
