Incredibly Easy Crispy Smashed Potatoes, Asparagus & Pesto

Juni 10, 2021 by katharina.kuehr Kommentar verfassen

There probably are a billion ways to cook potatoes – and (almost) all of them are delicious. But this one, this recipe – damn damn damn. This is pure deliciousness! And it is soso easy to make, so little mess and perfect to prepare ahead of time.

The crispyness on the outside of the potatoes and the softness on the inside just work so perfectly together in your mouth. Paired with some greens and a little tangy pesto and an herby dipping sauce, it is perfection. Perfection with so little ingredients.

What‘s special about this dish?

The way the potatoes are prepared. So, instead of just cooking and peeling, or baking regularly or frying them in a pan, they are prepared differently. First, they are boiled in water, just as regular potatoes. Then, they are patted dry and smashed with something heavy, like a pot. Now, we drizzle them with oil and sprinkle some salt and bake them in the oven until they are crispy.

Which potatoes should be used?

Definitely some from which you can eat the peel. We need to be able to do this because otherwise they won‘t get as crispy. Usually, the young and small potatoes can be eaten with the peel, such as the „Heurigenkartoffel“.

Is this dish healthy?

Oh yes. Potatoes often get a lot of (undeserved) hate because of their high carbohydrate content. Actually though, potatoes are such a healthy vegetable. They do have a high carbohydrate content, which though is very good because they‘ll provide you enough energy to stay fit and motivated throughout the entire day. Plus, they also add a bunch of fibre, which satisfies you and keeps you full! Moreover, they are packed with antioxidant, which help to prevent diseases. And obviously, they contain a whole bunch of vitamins such as Vitamin C and Vitamin B6. All in all, it needs to be said that potatoes are really healthy and definitely do not deserve all their hate.

What is more, is the asparagus, pesto and dipping sauce. Asparagus is full if fibre and vitamins, and also great to add some color. The pesto is not only delicious but also packed with many healthy, unsaturated fats. And the dipping sauce adds some more protein and also vitamins from the herbs. All in all it definitely can be said that this is a very well balanced meal or side dish.

How to make this dish?

As explained a bit above already, there are a few different steps to this. And yes, it takes long but it is one of those things that can just chill in the pot or oven and you can go do something else in the meantime.

So we start by preparing the potatoes. To do this, we just add them to a pot along with some water and bring it all to a boil. Depending on how big your potatoes are, you need to cook them somewhat between 20 and 25 minutes. At approximately 5 minutes before they are done, we also are adding in the asparagus. Once they have finished cooking, we can drain them.

Now comes the fun part. Therefor we need a baking tray lined with parchment paper. We are going to have some fun and smash the potatoes (I know mom would say „don’t play with food“ but I guess in this case it is fine ;)). First, we need to gently pat them dry with a kitchen towel. They cannot be wet anymore because then they won’t become crispy. Then, we are taking one potato at a time and placing it on the parchment paper. Then, we‘ll take the pot we previously cooked them in and press it onto the potato so the peel tears apart and the potatoes are smashed. Now we need to repeat this with the remaining potatoes.

Now all thats left to do is adding the asparagus, drizzling with olive oil, sprinkling with some salt and into the oven they go. While this is baking for approximately an hour, we can prepare the dip by mixing the herbs, greek yoghurt, sour cream and cream cheese.

One the potatoes are done, we just add the dip and pesto on top and voilà, we can enjoy it!

Great to prepare!

This way of cooking potatoes is amazing for when you have friends over for example. You can just pre-boil the potatoes, smash them and prepare the dip, and then drizzle with oil and bake them freshly whenever you need/ want them, and you do not make a mess anymore, you just pop them into the oven.

We really, really love this way of making potatoes because the crisp and the flavor is just genuinely soso good. I really, really hope that you‘ll also enjoy it as much!

Incredibly Easy Crispy Smashed Potatoes, Asparagus & Pesto

This recipe is at least 5x better than your average way of making potatoes. Crispy on the outside, soft on the inside and really simple to make. Paired with the dip and the pesto it is pure heaven.

Course Main Course, Side Dish
Prep Time 10 Minuten
Cook Time 7 Stunden 30 Minuten
Total Time 7 Stunden 40 Minuten
Servings 4 sides

What you will need

  • 1 kg small potatoes (which you can eat with the peel)
  • 500 g green asparagus
  • oil
  • sea salt
  • some pesto to serve

For the dip:

  • 200 g greek yoghurt
  • 2 tbsp cream cheese
  • 100 g sour cream
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil

How to

  1. Start by adding the potatoes to a pot and covering them with water. Bring them to a boil and let simmer for about 20-25 minutes. About 5 minutes before they are done, add the green asparagus (before adding it, cut 2 cm of the bottom off). If a fork goes in and comes out easily when picking into the potato, they are done. If not, they still need some time to cook.

  2. Drain both, the potatoes and the asparagus and pat them dry with a kitchen towel. They need to be really dry or else they won‘t get crispy.

  3. Onto a baking tray lay some parchment paper and add a potato. Take a pot and smash the potato down, until the skin has torn and the potato is about 1-2 cm thick. Repeat with the remaining potatoes. Now, add the asparagus to the tray as well, drizzle all with some oil and sprinkle some sea salt. Bake for 50-60 minutes until golden brown and crispy.

  4. In the meantime mix the greek yoghurt, sour cream and cream cheese with the chopped parsley and basil.

  5. Once the potatoes & asparagus are done, serve them with the dipping sauce and the pesto. Enjoy!

Have fun cooking,
Love,
Katie // Une Petite Cuisinière

My June Top 6

Juni 3, 2021 by katharina.kuehr Kommentar verfassen

Although it really does not feel like it, we are heading into (or are already in) the 6th month of the year. And the previous 5 months have been very very crazy. Nevertheless, and besides all the ups and downs, we have made it through anyway and are now more than ready for Summer! For long evenings, picnics in the park and drinks at a friends house. And obviously, we cannot start into the month without sone seriously good Top 5!

As always, nothing of this is sponsored, all of these following are my personal recommendation, based on my experiences and my own opinion.

Restaurant of the month: NENI am Prater

This really is what I have been looking forward to for months. Ever since they first announced it (and I think that was November). And, oh my goodness, worth the wait – it did not disappoint. The new NENI am Prater is a must visit!

Why? For several reasons. First of all, the view. Just like holy damn wow. You have a view above all of Vienna during the sunset. The intense yellow and orange sky just covers every single building and the entire Prater. Just insane. And you have this view from the interior and exterior, since there is glass all around.

Then the atmosphere; chill music, chatting all around, friendly waiters who are in a very good mood, the noises and smells from the open kitchen, the open bar, where you can watch the barkeepers making drinks. It feels like you‘re sitting in some restaurant in the middle of Tel Aviv.

Well, and we cannot forget about the most important part: the food. This. Was. Delicious. The menu is similar to the NENI am Naschmarkt but still pretty different. At Prater it has more of the Balgan style cuisine, more of the sharing, the smaller meals, meals from the stone oven, and ALL sourdough bakery. There are plenty of dishes, no matter whether you want to go vegan, vegetarian, have some fish or enjoy some decent meat. It all was incredibly delicious. Plus, you can there now order the NENI organic Rosé there (which also tastes pretty amazing); from their own production. So worth a try!

If you go there (which you definitely should!) you simply NEED to try the popcorn falafel, the sourdough focaccia and the knafeh. There is no way you‘ll be going home without having tried this.

All in all, what I can say is: amazing. The view, the atmosphere, the service. It all has such a friendly and home-like feeling. Definitely will be going there more often. And once you have visited it, you‘ll be doing so too!

Food of the month: Strawberries

Everyone‘s favourite (at least in ice cream) fruit is finally here. Finally we can find those delicious, juicy, sweet goodies from our local farmers either on the farmer‘s market or in the supermarket shelves. But why are strawberries actually this healthy?

First we‘ll have a teeny tiny history lesson; strawberries are fruits that originally had grown in woods. Even today you can find some very small ones there during June/ July. Strawberries have first been planted in gardens in the 14th Century in France by Charles V.. The ones we eat today have first been cultivated in the 18th century and are called „Garden Strawberries“.

Now, moving on to the health side of it; strawberries are incredibly nutritious foodsl They are loaded with Vitamin C, which is very beneficial for immune and skin health, Manganese, Vitamin B, which is important for tissue growth and cell function and potassium, which, for example, helps regulate blood pressure. But there also are many other nutrients such as iron, copper, magnesium, Vitamin K, E and B6. Plus, strawberries are also loaded with water and with fibre, both good for your digestive system.

All of these nutrients have shown to contribute to many health benefits, such as blood pressure lowering, inflammation decrease and improve overall heart health. Strawberries definitely are very delicious and nutritious fruits!

If you want to try some strawberry recipes, you can try the Strawberry and Chickpea Caprese, the Pesto Couscous with Feta and Strawberries, the Strawberry Chia Jam, or the Asparagus and Strawberry Salad.

Recipe of the month: Pesto

Pesto never disappoints. And this one, let me tell you, definitely does not disappoint!! Really, if you only try one recipe from the blog, try this one. With pasta that is al dente, and creamy burrata – holy cow, the best thing ever.

So why is this the recipe of the month? First of all, I feel like pesto is a real summer recipe. It reminds me of Italy (since it comes from Liguria) and Italy basically equals summer. And since it‘s June, the month in which summer officially starts, it kind of is like a perfect match.

And well, obviously, it is so damn delicious. I made that on a Sunday night when the whole family was here, and believe me. Not a single pasta and not a single drop of pesto was left. If this is not a confirmation that this pesto is tasty, then I don’t know what is.

So all in all we can say; it is healthy, sooo tasty, summery, and damn easy to make.

Product of the month: girlfriend collective

This activewear brand is not just any activewear brand but one with a mission. A mission to make the world a better place. The planet and nature is their number 1 priority, but that does not make their designs any worse or not as pretty as conventional activewear. Actually, the opposite is the case.

So what’s the crux with girlfriend collective? What makes them special? They produce activewear made from recycled materials. To be specific; from recycled plastic bottles and fishernets combined with other materials. They turn plastic bottles into a yard through washing, breaking apart and polymerization. And the result is incredible. When touching or wearing the leggings, you would never guessed that this before has been a water bottle or a fisher net.

I personally just believe that this makes this brand incredibly unique and incredibly cool. Plus, their activewear is super super comfortable. Soso soft, yet sweat absorbing, very well fitting and looking really good. The designs are rather simple, which I love because it makes them even more sustainable because they are not out of fashion after a year.

I have been working out (especially running) in girlfriend collective for almost a year now and and still super super happy. The cloths have not lost any quality, still look the same as on day one and are as comfy. If you live in Europe, you may need to check some european sports websites (I order on thesportsedit), so you do not need to pay taxes and customs when ordering.

Next time you want to get some new activewear, make sure to check this brand out before, you won‘t regret it!

Workout of the month: supercycle

There were a bunch of things I missed in the pst months of lockdown. Going out to restaurants, leaving Vienna, seeing a bunch of people, and so on… but there has been very little that I missed as much as supercycle.

For all those of you who do not know Supercycle yet, it is a fitness studio in Vienna with cycling classes. The cost is at 14€ for students (per class) and at 16€ regularly. Normally, you‘d sit in a dark room, only with disco lights, loud music, and the best instructors ever shouting at you. And the feeling is unreal. If you haven’t experienced it yourself, it is hard to describe. Such pure happiness combined with pure sweat. Definitely a lot of both.

Happily, they were able to open again, so I literally ran to get there. And just saying; So so so worth it. I went to the outdoor studio (which very very sadly) closes soon, and the view was amazing, the feeling out of the world, and the instructor (steph), well she just made every drop of sweat so worth it.

Yes, you‘ll be feeling dead by the end of your class, you‘ll be sore for the next day and your legs will be shaking. Still, you will want to come back. So, give it a shot.

Inspiration of the month – the daily stoic:

Actually, this is not an inspiration of a month or for a month but an inspiration for a year. The daily stoic is a book with 366 pages with little stoic life lessons and meditation prompts, one for each day.

Usually, you‘d buy the book in December and start reading it on January first, since the pages are numbered after the days in the month (e.g Jan 1st, October 15th, …). But really, it is not necessary to buy it in December, you can get it and start at any time of the year. I myself got it in April and started it then.

The book itself is divided into 3 categories, each spanning over a period of 4 months; the discipline of perception, the discipline of action and the discipline of will. And those again are split into 4 subcategories, 1 for each month.
The cool thing about this is that you are focusing on one topic for a whole month, and then the next month a different one, but one that builds on the topic from last month.

I myself kind of included it into my morning routine because I really enjoy having a little something to think about during the day or to live my day by.

The book itself can be ordered at most book shops, or there even is a download of an e-book version in the internet that is for free.

I really, really hope that you‘ll be enjoying all of these things and that your June will be amazing!! Wishing you all the best,
Love,
Katie // Une Petite Cuisinière

Better than Store-Bought, 10 Minute Homemade Basil Pesto

Juni 1, 2021 by katharina.kuehr Kommentar verfassen

There only is one green sauce that actually everyone likes – pesto. Contrary to all other green sauces, pesto somehow manages to convince, despite its very healthy looking color. And if you buy it at the store, it’s so easy, right? It is. But let me tell you, once you have made your homemade one, you‘ll never go back to store bought. This salty goodness just won‘t compete with the one from the store. Plus, it really just takes 10 minutes to make.

What’s special about this dish?

To be honest, this is not too fancy or has a special twist. This is one of the few classic recipes. Because really, pesto is so heavenly as is. Actually making pesto yourself already is kinda really special.

Traditional pesto

What even is pesto? What is it made of? And what differentiates traditional pesto from most store bought ones. So, pesto is a green sauce from Liguria, Italy. It is eaten with pasta, burrata, as a topping or a dip. It is made of fresh basil, grated parmesan, garlic, pine nuts, salt and olive oil. For a really good pesto, it is essential to use high quality ingredients, especially a good olive oil and some good parmesan cheese. And that already is the difference to most store bought ones. In order to make them cheaper, the quality is compromised. Often, there is water added to it or olive oil is partially substituted with some cheeper oil. This way it does not taste as intense and as good.

Also, when it comes to making pesto, it is really important which ingredients you blend, any which you stir in by hand. The basil, garlic and pine nuts need to be blended. The parmesan needs to be grated and then stirred in by hand along with the olive oil. You must not blend the parmesan and olive oil!!!!!! This needs to be stirred in by hand.

The only store bought pesto I buy is either the one from our local delicatessen store or the one from pastafani. They both have the right texture and high quality and taste like real, authentic pesto. So I can highly recommend this.

Is this dish healthy?

Definitely healthy-ish. It is packed with lots and lots of healthy fats and vitamins. The basil accounts for a bunch of fibre and different vitamins. The nuts on the other hand are a great source of protein and also unsaturated fats. The olive oil, if high quality, also is an excellent source of omega-3 and other unsaturated fats. The parmesan cheese is packed with a bunch of protein but also saturated fat. So overall, a quite balanced meal.

How to make this dish?

As the title says, this really takes 10 minutes only. All we need to do is blend the basil with the garlic cloves, roasted pine nuts and a pinch of salt. This should be blended really finely and make a thick paste. Then we need to grate the parmesan cheese and stir in a little parmesan cheese and a little oil a bit at a time until we get a creamy consistency. And yup, that already is it.

When and how to best have it and meal prep friendly?

Pesto definitely is one of the most meal-prep friendly dishes. When you make it and have something left, you can just store it in a jar and cover it with oil. It‘ll last up to 2 weeks, if covered completely with oil, because then it is not in contact with fresh air.

In terms of what to vest have it with, I‘d definitely say pasta!! Either Trofie (that‘s what you would typically get with pesto in Italy) or definitely on top of burrata or mozzarella, on top of salads, or, one of the best combos, which I have recently discovered is Pesto and Hummus. A MUST try! On bread, rice crackers or whatever – it is life changing.

Homemade Pesto is a must try and a real game changer. It is SO easy and honestly one of the most delicious things you could make. I know I have told you a bunch of times here, but there is no way you dl not try this!

Super Easy Honey – Lemon Chickpea, Avocado & Feta Wraps

Mai 27, 2021 by katharina.kuehr Kommentar verfassen

You asked for 10 minute meals, so that’s what you get. And nope, we‘re not talking boring sandwiches or bread with butter. Very little time and very much flavour. That‘s what we’re talking. And there wraps definitely fit this category!

A soft wrap on the outside filled with all the deliciousness you could imagine. Soft, mashed avo, crunchy greens & veggies, slightly sweet and damn addicting honey chickpeas and asparagus and some tangy feta to top it all off. All of this goodness is wrapped and rolled up. And with every bite you get an explosion of flavors.

What‘s special about this dish?

It comes together super super quickly and still is packed with flavour. It‘s not like your normal wrap that doesn’t take long to make but also does not taste very exciting. This is quick and still contains so many different flavour, although there are not many ingredients needed. Plus, it is vegetarian (vegan except for the feta) and still super versatile.

Is this dish healthy?

Yes, it definitely is. It is packed with different nutrients of all categories. The wraps deliver us some good & comforting carbs so we‘ll have energy all throughout the afternoon, and when choosing a whole grain one, we‘re also getting some extra fibre for our digestion. Speaking of fibre, there‘s a bunch more of that in the cucumber, the greens, the asparagus and the avocado. And we also get a ton of vitamins therefrom.

Not to forget about the real star of the show; the chickpeas. Chickpeas are an amazing source of plant based protein and also fibre. They also make this dish really filling, and delicious. If you are not a fan of chickpeas, you can also try this recipe with tofu or even with chicken. And lastly, the feta. Feta cheese does not have a huge nutritional value but it comes with quite some protein and a lot of deliciousness!

How to make this dish?

As previously mentioned, this is super super easy. It essentially really only comes down to chopping the veggies and preparing the chickpeas. To make the peas, we only need to add them to a pan along with some olive oil, honey, lemon juice and some chopped up asparagus. We are then turning it onto medium heat and letting the honey caramelize. Since we are adding everything at once, nothing will burn or be more cooked through at the end.

For the veggies we only need to smash an avocado, slice up some cucumber, wash the greens, slice up some spring onions and crumble the feta. Yep, that‘s already it. All that’s now left to do is wrap it up.

Definitely meal-prep friendly!

This really is amazing for meal prep. You just wrap it up, pack it into a tupperware and then take it to work or to school or to home office. Whenever you want to eat it, you can just take it out and enjoy! It is perfectly filling and very easy to be carried with you!

I really hope that you‘ll enjoy this dish as much as we do and that you‘ll have an amazing time cooking!!
