Super Easy Healthy Matcha Cheesecake in a jar

Oktober 20, 2020 by katharina.kuehr Kommentar verfassen

Easy, Matcha, Cheesecake perfectly portioned out just to take one whenever you want. Crispy, delicious cookie swirled in slightly sweet matcha-flavoured no-baked (healthy) cheesecake cream. Sounds good? Well, because it is good! And the best thing, it also is easy!

What is special about this dish?

Everything, basically. Cheesecake usually is made of a buttery-cookie crust and a cream cheese and cream filling, and then it is baked. This recipe could not really be further away from this. But it still is as delicious. Instead of buttery-cookie crust, we have a delicious healthy cookie. And instead of natural flavoured, high fat filling, we have a lighter, super creamy filling, that is not baked. And of course, there is the matcha in here!

What is Matcha?

Matcha is a green tea actually. It is most of the time sold in a powder form which is made from green tea leaves. IT originated in east Asia, where it is consumed a lot too. Especially in Japan it is very common to drink it. But how has it made it way to Europe and America? Well, Matcha contains a lot of caffein (because green tea does so too) and it has an incredibly high amount of antioxidants, which means it is really healthy. That’s why it has kind of been celebrated as a superfood in the past years and that also is why you can find a matcha latte on basically every menu in any coffee shop! It has a slightly bitter flavour and definitely is not something for everyone’s taste buds. To be honest, I do not even like it too much really. But in this recipe it tastes amazing! I promise. SO it really is for matcha lovers and non matcha lovers!

Is cheesecake healthy?

I am sorry to tell you that, but no it is not. Why? Lets start from the bottom. As I already mentioned, it is usually made out of cookies combined with butter. Extremely high in fat and sugar and with basically no nutritional value. And then the filling; cream cheese, cream and sugar. Not very nutrient-packed either. But is has loads of sugar and fats. The only positive thing is that it is pretty high in protein in comparison with most other cakes.

How to make cheesecake healthy

I have never made a regular baked cheesecake in a healthy form to be honest. BUT I have made a vegan healthy baked cheesecake and it turned out beyond bombastic! You can find the recipe here! But I can tell you a little about how to make no bake cheesecake (mousse) healthy. Instead of a regular cookie crust, you could make healthier cookies with oats or wholegrain flour and natural sweetener! And for the filling you could mix a few things. I like to mix yoghurt, greek yoghurt, curd cheese (topfen) and some cream cheese. The combination tastes really good, is way lower in fat and very high in protein! As we still need some sweetness, I like to swap out refined sugar for a more natural sweetener like maple syrup or honey for example.

How to make Matcha Cheesecake in a Jar?

This is incredibly easy actually. It comes down to two things; Making the cookies and making the cream. To make the cookies you need to blend oats, coconut shreds, coconut sugar and egg, then spread it on a baking tray and bake. That’s it. The mousse is not much more difficult. You simply add all the ingredients to a bowl and mix until creamy. Yes, that’s it! When the cookies are done and cooled, you break them apart and swirl them into the cream. Then you only have to portion them out and that already is it! Incredibly easy right?

When to have it

Whenever you want. I think it is perfect as a snack or dessert because it has the perfect serving size for just a little sweet craving, but you can really have it at any time of the day. I also think it is great if you are having friends over for dinner because you can prepare it beforehand and just take it out of the fridge!

I genuinely hope you enjoy this recipe (as much as my cousin and my best friend, because they keep asking me for when I am making it again 🙂 )! It is super easy, super delicious, and pretty healthy. Definitely worth giving a try for both – matcha lovers and non matcha lovers.

Healthy Rhubarb Crumble Cake

Mai 29, 2020 by katharina.kuehr Kommentar verfassen

A nice, fluffy and juice layer of cake underneath a fresh and sweet layer of rhubarb topped with a healthy and crispy almond oat crumble. Is there anything else you want? Maybe having this healthy rhubarb crumble cake with a nice cup of coffee? you better don’t say no!

Why crumble cake?

Crumble cakes are one of my favourites. I love the different tastes and textures in each layer and the combination of them melting together in my mouth. Also, I think they are very fun to make and they always have something fresh in them with the fruits. I already have one crumble cake on my blog, an apple crumble cake, and it is so good! In this recipe I just added a spring twist on it instead of a fall one! Imagine this cake as a mix between my healthy apple crumble cake and my rhubarb compote!

I had my first crumble cake about 2 years ago. It actually also was a rhubarb one, and it was amazing! I can remember it very well because it was at a small café in Dublin where they had soo many different cakes! I shared one piece with my friends and let me tell you, it was amazing! So when I saw all the fresh rhubarb at the farmers market the other day, I decided to try to recreate it, but make it healthier. And let me tell you, I did not expect it to turn out THAT GOOD. I thought it would be fine but when I tried the first slice, I just wanted to eat the whole tray before photographing it. It is insane!! And really, it does not taste healthy or boring at all.

The layers:

The first layer is kind of a biscuit layer but a little healthier. It essentially comes down to only 5 ingredients! Who thought that you could make a cake with 4 ingredients only? Eggs, maple syrup, apple sauce (Apfelmuß in German, because so many asked me what this was), wholegrain flour, baking powder. That is it. The egg whites are separated from the yolks and whipped up until super fluffy and stiff. This makes the cake really airy. The applesauce makes it really juicy and the maple syrup makes it sweet. Both are combined with the egg yolk. Afterwards, the flour and baking powder as well as the egg whites are folded in. This need to be pre-baked a little.

The second, and middle layer is a fruit layer. This is even easier than the first one. You do not even need to peel the rhubarb (if you buy organic one preferably), just cut it into smaller pieces. Add it to a pot with some lemon juice and a date to sweeten it up (could use sugar or honey as well) and a splash of water. The heating up helps it to get a little softer and absorb the flavour of the lemon and date. Then this is added on top of the biscuit layer.

The last but definitely not least layer is the crumble. Contrary to conventional crumbles it is not based of sugar, butter and flour. NO. The base are oats and almonds. I like to use sliced ones but you could also just chop the up a little. Together with some chia seeds (optional) and coconut sugar (again, another sweetener works fine too, just a liquid one will not have the same crunch effect, so I would recommend substituting it out for white or brown sugar), and a little coconut oil it creates a sticky consistency. This on top of the fruit just tastes bomb. It is kind of like granola just on top of a cake. So good.

When to enjoy best?

So honestly, you are going to want to eat this at every time of the day. And basically you could. It would even work as a nice breakfast. It has about than 2.6g fibre, 3.3g of protein, and 14.2g of carbohydrates per slice. So having two slices for breakfast with some yoghurt on top wouldn’t be unhealthy. But this also makes a great snack or dessert. Even when having guests over this will be amazing! Or take it to a picnic?

Substitutions

If you do not like rhubarb at all, but still want a crumble cake, you can also substitute them out for berries, such as strawberries. It really is versatile but I believe that the little sour taste of the rhubarb just goes really well with the sweetness of the cake. Instead of whole grain flour, you could use plain one, and instead of the maple syrup you can totally go for honey, agave of coconut sugar. If you do not have almonds on hand, you can use any other nuts as well!

I hope that you like this recipe and it gives you some inspiration for cooking healthy! Enjoy!

Happy cooking,

Oey-Goey Salted Caramel Chocolate Bars

Februar 13, 2020 by katharina.kuehr Kommentar verfassen

I think we all need a good treat from time to time. But eating something delicious and sweet does not necessarily have to unhealthy. I can tell you these are so fricking addicting and so incredibly good. Crunchy oat base, oey-goey creamy date coconut salt caramel layer, which is the best thing ever and you will want to top everything with it, and last but not least some crunchy chocolate on the top to give it the finishing touch. The combo = holy moly good.

So I love having some treats or sweets from time to time. Either as an afternoon pick me up or as a dessert after dinner or just somewhen in-between. If I do not have something healthy prepared I just long for cookies or chocolate or anything other sugar loaded. I think we all do that because most of the times we are craving something sweet we do not want to get in the kitchen and make something healthy that takes like 15 minutes when we can just grab some chocolate in 5 seconds. Thats why these bars are for making ahead and can be stored in the fridge and enjoyed anytime.

They may sound pretty fancy, and they are but they are super simple to make. 6 ingredients, 1 blender, 20 minutes (max). You can grab one with your coffee or pack it for work or school. When I make those, it is sooo hard for me not to eat them all at once. Always when I make them I have a few before I can even store them in the fridge because they are just too good. Portion control is just impossible with those, sorry not sorry. It is IMPOSSIBLE to just have a single one.

Those bars are, although they taste bombbb, pretty healthy. The layer at the very bottom is made out of oats, dates, and coconut oil. Oats are a great food because they are packed with vitamins, protein and fibre. They are not only great in your oatmeal but also in granola and bars. The coconut oil helps to bind it all together and the dates do so as well. This layer is full of crunch and tastes a bit fresh do to the coconut oil. It gives the base to a super good bar.

The next layer is the best of them all I think. It tastes like salted caramel, just better and it is much healthier. instead of cream, butter and sugar, we are only using dates and coconut milk. May sound a little bit off but it really is not! We blend the dates until they have a smooth and creamy consistency and are sticky. At this point the ´caramel´ is pretty thick, but we want it oey-goey (ok, I don’t know if this is a word but I´ll still use it) and smooth. Thats why we add it to a pot and add some coconut milk. I like to use light coconut milk because if using normal one, I believe the coconut flavour overpowers the caramel one. We bring it to a boil, add some sea salt and let it simmer and thicken a bit. It still is a bit runny, and we will add it on top of the oat base. so good.

Dates actually are a super healthy food. They contain big amounts of anti oxidants, no matter if fresh or dry. fresh dates actually are super good but it is really hard to find them, especially in Europe. Yes, dates do contain sugar but the fiber in the fruit helps to control the blood sugar levels, so you do not get that high peak and then feel really crapy after a while. Plus, dates can even help you to reduce your blood pressure because of their high magnesium content and help you with your memory because of their B vitamin content. As already said, they are pretty high in fiber with 10g per 100g, which is pretty much, and helps with digestion. All in all, they are a super food.

On top of the date caramel only goes some good molten chocolate. I like to use a healthy one here, preferably a dark one with a high cacao percentage or one from HuKitchen, because they just have the best chocolate ever! The chocolate on the top adds an extra crisp.

I honestly hope for you that you will make those because this is the best treat you could ever make. They (theoretically) last about 2-3 weeks in the fridge (but they’re gonna be gone in like 2 days, no joke). Enjoy them a lot!

Healthy Protein Hot Cacao

Dezember 5, 2019 by katharina.kuehr Kommentar verfassen

It is Christmas time and there already is some snow outside which means that it definitely is the season for huge cups of tea and hot chocolate with a mountain of whipped cream. We all love either of that but to make this time of the year a little bit healthier without making it less delicious I am sharing a healthy Protein Hot Cacao Recipe with you, which contains 8g of protein in each serving!!

Drinking hot chocolate for me means sitting in the bed underneath a warm blanket in my PJ´s reading a love story or watching a Christmas movie. Or it means sitting in a ski hut with my friends or family and taking a break from skiing and escaping the cold. Either one of them bring back a lot of beautiful and meaningful memories. This is why I like to drink this since it gives me some good vibes and reminds me of lots of love.

To be honest I am not a huge fan of hot chocolate, if it is prepared as it is in Italy, with a tiny bit of milk and something like a molten chocolate bar. This is wayyy too rich for me! I am more on the tea side of hot drinks but I also do like hot Cacao. The only thing is that when drinking it, the store-bought ones are often packed with a lot of added sugars, and very little Protein. They are good, but unfortunately not healthy.

To make them less indulging I decided to change the ingredients a little bit. In my recipe I ask to use raw cacao. This is different from Cocoa because it is not roasted at high temperatures which helps to keep the health benefits of it and not make it lose any nutritional value. Cocoa Powder often contains a lot of added sugar and is a totally processed food. It sometimes even contains food coloring to make it look more appetizing and artificial flavoring. Cacao is the raw product that does not contain anything else then the bean. Without the heating process it is a food very high in antioxidants and a great source of magnesium, potassium, iron, and calcium. It also contains a healthy amount of protein and it is shown to improve memory and lowering blood pressure as well as insulin resistance! What a superfood?!

Ok, now I think we have enough theory about cacao. So next time you go to the store think about what you buy. When buying raw cacao, you can still add sweeteners but YOU know exactly what is in it and it does not contain a billion other add-ins.

Other than that, I like to use winter spices to flavor the (plant-based) milk, a dried fig to add sweetness and fiber and different seeds to give it a protein kick. To make a health substitute for the whipped cream, you can easily go for coconut whip. You can make tis by buying canned coconut milk. You place it in the fridge overnight and when making it, you open the jar, only take the solid part of the coconut milk, whip it up and tada.. a healthier and plant-based version of whipped cream! I hope that you will enjoy this recipe more than once in December and if you do, it would be great it you could tag me on Instagram with @uneptcuisiniere and leave a rating here on the blog, so I know that you like it!

Have a beautiful Christmas time!

Healthy Protein Hot Cacao

The Cacao Recipe to make your Christmas time healthier but not a tiny bit less delicious! Each serving contains 8g of protein!

Course Breakfast, brunch, Dessert, Drinks
Prep Time 3 Minuten
Cook Time 5 Minuten
Total Time 8 Minuten
Servings 2 servings
Calories 170 kcal

What you will need

For the Milk:

  • 500 ml Almond Milk you can use any milk you like
  • 2 sticks cinnamon
  • 4 cloves
  • 1 dried fig
  • a pinch of salt

For the Cacao Mix

  • 3 tbsp raw cacao powder
  • 2 tsp hemp seeds
  • 2 tsp pumpkin seeds
  • 2 tsp sunflower seeds

How to

That is how it works:

  1. In a pot add the milk, along with the cinnamon, cloves, fig, and salt. Bring it to a boil.

Meanwhile add all of the ingredients for the cacao mix to a food processor and process until a very fine texture is reached.

  2. Through a sieve pour the milk into a blender (preferably a high speed one). This way the spices will be removed since we do not want them to be blended, they should only add flavor. Take the dried fig and add it to the blender aswell.

Add the cacao mixture and blend everything together until a smooth consistency is reached.

  3. Serve in jars and top with some whipped cream, coconut whip or with some freshly grated cacao! Enjoy!
