The Ultimate Pesto & Hummus Picnic Sandwich w/ Grilled Halloumi

Sandwiches ALWAYS are a win. There is no way you could go wrong with some good bread, a delicious spread and cheese in-between, right? Good to agree on that! And this sandwich – let me just tell you – is next level. It is not you average lunch sandwich, it is not your average grilled cheese, it is not your average hummus bread. It is next level, everything else than average.

You have some delicious, fluffy bread, creamy, tangy hummus, salty and indulgent pesto, fresh greens and tomatoes, salty and ultra-delicious grilled halloumi and rich avocado. NO way you do not like this. And you know what’s the best part about this? It is so easy to make. literally easier than scrambled eggs on toast.

What’s special about this dish?

By now you probably know that this is not your average sandwich. Here we have a combination that you do not get anywhere else. Hummus from the orient, pesto from Italy, Halloumi from Cyprus and delicious, perfect bread from Austria. And although all ingredients come from so many different places, they work in such perfect harmony together. They do all have a slight mediterranean touch, which makes the combination taste amazing.

And, this recipe is part of the NENI x UPC picnic series. Meaning, this recipe tastes best with the NENI hummus and is perfect to be taken on a picnic. Obviously, you could also eat it at home, for lunch, breakfast, dinner or brunch or any other time of the day you like.

Is this sandwich healthy?

I would definitely say it’s very nutritious. So let’s start at the very bottom layer; the bread. The bread is loaded with carbs and fibre and will not only keep your soul healthy but it’ll also keep you full of energy and full for a while. Next we have the hummus. It is full of fibre and protein and also healthy fats. Next up the pesto. Well, first of all it is loaded with a whole bunch of deliciousness. The salty- and tangyness are just a real dream. Yet, it also is beneficial nutrient-wise. The nuts and oil account for a decent amount of healthy fats and togetehr with the parmesan cheese for a healthy amount of protein too.

What do we have left now? The veggies – tomatoes and green – to provide you all the minerals, vitamins & fibre in order for you to stay full and happy and the halloumi. The halloumi is a source of protein but more than that a source of deliciousness. Lastly, avocados are a great way to get in some more healthy omega-3 fats. All in all, it definitely is nutritious!

How to make this dish?

As already mentioned – it’s as easy as scrambling eggs. All you need to do it slice up the halloumi and add it to a hot pan to fry for 2-3 minutes on each side until golden brown. Then we only spread the bread with hummus & pesto, add the sliced tomatoes and a few greens, the grilled halloumi, some sliced avo and the second hummused (can hummused please be a word – like buttered just with hummus?) bread on top. Voilà!

Picnic friendly

If just left like that it may very well result in a mess when eating it. So we can take some steps to prevent this from happening. This best works if we cut up some parchment paper (like 4-5cm thick) and wrap it tightly around the sandwich. To fix this, we can wrap a string around it and make a knot. This way it is tightly packed together and does not fall apart when eating.

All in all it needs to be said, that this is an incredibly delicious and easy to make dish and a real MUST for every picnic! What you will need

  • 8 slices bread
  • 8 tbsp hummus
  • 4 tbsp pesto
  • 250 g halloumi cheese
  • 2 tomatoes
  • 4 handful greens
  • 1 avocado

How to

  1. slice up the halloumi lengthwise and add it to a cold pan. Heat up and fry on each side for about 3-4 minutes until golden brown. Slice up tomatoes and avocado.

  2. In the meantime spread the slices of bread with the hummus. Top with the greens, the tomatoes, then the halloumi, the pesto, the avocado, some sea salt and another slice of bread with hummus on the inside. Enjoy!

The meanest green sandwich with grilled halloumi and lemon spinach

Who doesn’t love a good sandwich? And not just a good one but a really delicious and healthy one. Marinated lemon tomato spinach paired with pesto, avocado and perfectly grilled and soft halloumi. Every single bite is a pleasure. 

Sandwiches are truly one of the best meals you can have. I mean, they consist of bread, and who does not love bread? And you can fill them with whatever you like!! Pretty genius to be honest. But really, today we are not going to make a basic boring sandwich. We are going to make a next level sandwich that makes your mouth water and still is ready in 15 minutes! 

What is special about this dish?

It is the unusual fillings if the sandwich! How often is the bread just spread with butter or mayonnaise and topped with ham and cheese? Way too often in my opinion. Not only, that it really is not healthy, but kind of boring right? In this sandwich we have an incredibly delicious combination of incredibly delicious marinated spinach that is tossed in a mixture of lemon juice, olive oil, dried tomatoes and chili flakes, some delicious creamy avocado, a gentle spread of pesto, and let’s not forget about the star of the show, the soft halloumi. If you have never had the combination of avocado and halloumi, then now it’s high time.

Are sandwiches healthy and how to make them healthy

There definitely is no yes or no answer to this question. This really depends SO much on what the sandwich is made out of. If you have some white toast with butter, cheese and ham, then no, it is not healthy. There is no fiber but lots and lots of fats in it. But if you make one like this, it is fair to say that it is healthy. You have got nutrients and vitamins from the spinach, healthy fats and vitamins from the avocado, and a bunch of fibre and complex carbohydrates from the whole grain bread. The halloumi is nit super duper healthy but it is super delicious and the combination is what makes it. The sandwich is very well balanced out with healthy ingredients such as spinach and also deliciousness as the halloumi. 

But how can you make a healthy sandwich? With very easy changes, you can get a big difference in the nutritional value. It already starts with the bread. Instead of white toast, you can long for whole grain bread. More fiber and more complex carbs which will provide more nutritional value and will keep you full for longer. Then it comes to the spread. Instead of using butter, you can long for avocado, pesto or hummus for example. They all are loaded with unsaturated fats and are a healthier choice over butter. 

Then, what I always love to do is adding some kind of veggies. You can do some salad, like in this sandwich, or you can also do something else like cucumber, bell peppers, radishes or whatever you like! And for me, personally I always like to have something to be kind of the „star of the show“. So something kn the middle that really fills the sandwich and makes it taste amazing. This could be halloumi, scrambled eggs, smoked or pan fried tofu, smashed chickpeas or anything else to your desire. 

How to make this sandwich:

This is truly simple. First you need to marinate the spinach. For that you just need to combine the oil, tomatoes, lemon juice and chili flakes. Next you need to toast the bread. This is not obligatory but crispy bread just tastes better in my opinion. Next, you need ti spread the pesto on both sides. This way the bread will not taste dry and it adds a bunch of flavor. Now, we need to pan fry the halloumi. For this just add the halloumi to a pan and heat it up. And then it already is down to being assembled. Yep it is that easy! 

I really love this sandwich as a brunch, a quick lunch or an easy but still fancy dinner! It is packed with so much flavor, pretty healthy and incredibly delicious while it still is super easy to make!

Meanest Greenest Sandwich with Lemon Chili Spinach and Grilled Halloumi

a delicious, easy and healthy sandwich that is ready in basically no time! Perfect dor meal prep or as a quick lunch!

What you will need

  • 4 slices Whole grain bread
  • 1/2 Avocado
  • 125 G Halloumi
  • 2 Handful Spinach
  • 1 Tbsp Olive Oil
  • 1 Tbsp Chopped dried tomatoes
  • 1 Tsp Chili flakes
  • 1/2 Lemon juiced
  • 2 Tbsp basil pesto

How to

  1. Combine the olive oil, chopped dried tomatoes, chili flakes and lemon juice in a bowl. Add it to the spinach and mix to combine. Let sit to marinate for about 10 minutes.

  2. Toast the slices of whole grain bread. Slice up the avocado. Heat up a pan and add the halloumi. Fry for about 2-4 minutes on each side.

  3. Spread the pesto on one side of every bread. Add the spinach on top, followed by the halloumi, the sliced avocado and close with the second slice of bread!

  4. Serve and enjoy!

Italian Tomato and Eggplant Stew with fried Halloumi and Pita

Fresh and sweet tomatoes with soft and slightly mushy eggplant plus tangy capers and olives. Oh, and not to forget about the good herbs and the Goey fried halloumi with fresh pita. Hard not to get hungry when reading this right?!

To be honest I have never had Halloumi until a few months ago. I spent a day with my besties in Bratislava and we were so tired after this super long day and went into a super cute little café. We just ordered some small snack like avocado toast and a greek bowl and in this bowl there was halloumi. And let me tell you, I instantly loved it. Maybe it is because I am a huge salt-addict (I know, that’s not very healthy but I just love it). Halloumi is pretty salty but tbh, that makes it real good right?

What goes well with Halloumi?

So I believe that everything that is with Mediterranean flavours goes super well with it! And everything with lots of herbs because herbs + halloumi is just the best combination. It tastes really yum with tomatoes, cucumber, olives, eggplant (=aubergine). Also, this might sound a little weird but believe me, it is also really good with oriental things like curry, hummus, falafel. Yes curry and halloumi goes with with each other. Might sound a little off but it is really good. If you want another halloumi recipe you can check out my Honey Eggplant and Chickpea Salad with Grilled Halloumi because that’s also really good!

Why Eggplant & Tomato?

Well because this combination with Halloumi is just so good. And Eggplant works so well in stews because it has a rather soft texture and makes it a little creamy-ish. Also it adds such a nice flavour. And tomatoes are always good. Especially in sauces or stews they are a must! They kind of build a „base“ for it and makes it saucy. And they are coming into season, so why not?

Fresh or canned tomatoes?

This really is up to you. They both work perfectly fine. If they are in season and you have them on hand, I would always recommend using fresh produce! But if you used canned ones make sure they are not all puréed. The best is if you mix them both. So use some fresh ones and some puréed sauce. That way you get some texture and sauciness. All the good things in it.

30-minute meal

You thought this couldn’t get any better? Well, it can! Because this comes together in less than 30 minutes. I know, so easy. Which means, it is perfect for a quick and healthy lunch or a cozy and simple dinner. Also, making it is not complicated at all! Actually the opposite is the case. It essentially comes down to chopping the ingredients and throwing them all together into a pot plus frying the halloumi in an extra pan. Yes, that simple.

What to have it with

Pita is my favourite go-to here because it is perfect to soak up the sauce and it has such a nice texture and taste. But if you do not like it or are intolerant to gluten or cannot find a good one you can also substitute it out for other things. Something like Quinoa, Pasta, Couscous or Rice would also work really well here. If you want to on the lighter side, you can also just serve it with a salad, which also is really good!

This is such a tasty meal for whenever you ar craving something comforting but healthy. Comes together really quick, is super family friendly, has lots of vitamins (& cheese ofc) and tastes amazing!

Italian Tomato and Eggplant Stew with fried Halloumi and Pita

Healthy, comforting and so full of flavor. A 30-minute, super quick and good weeknight dish!

What you will need

  • 1 red onion
  • 1 tbsp Olive Oil
  • 650 g Eggplant about 2 medium sized ones
  • 300 g tomatoes fresh ones (best is a mxi of large ones and cherry tomatoes)
  • 1 tbsp tomato paste
  • 200 g canned tomatoes (puréed)
  • 2 tbsp rosemary
  • 2 tbsp oregano
  • juice from 1/2 lemon
  • 60 g Capers about 3-4 tbsp
  • 40 g Olives about 3 tbsp, sliced olives
  • 300 g Halloumi
  • 2 Pita

How to

  1. Finely dice the onion. Heat up the olive oil in a pan and add the onion when hot. Sautée for about 2 minutes until fragnant.

    In the meantime chop the eggplant and tomatoes into about 2 cm sized chunks or half the cherry tomatoes, if using. Add them into the pan and sautée for another 2 minutes on high heat. Reduce the heat to medium high and stir in the tomato paste and sauce and the herbs. Let simmer for 10 minutes and then add in the juice from half a lemon, the capers, olives, some freshly cracked black pepper and some salt. Let simmer for another 10 minutes.

    While this is simmering slice the halloumi into about 1/2 cam thick slices. Place them on a grill or a preheated (grill)pan and fry them on medium high heat for about 3 minutes on each side until golden brown.

    Heat up the Pita in the oven.

    When everything is ready add the stew onto the plates and place the fried halloumi on top. Serve with the fresh pita and enjoy!

Honey Eggplant and chickpea salad with grilled halloumi

Sounds like a lot and it is. So many flavors, so much goodness but still so simple and quick. Leave the boring salads behind and start making those next level ones. Salads have never tasted that good! 

Sunmer ist getting closer and closer, which means many people try to live and eat healthier. And whats the stereotype thing to do in order to eat healthiet? Salads! But contrary to commin believes, the plain ones only containing leaves and a dressing, maybe a piece of chicken, are bot the healthiest ones! 

Why are conventional salads not necessarily healthy?

Because they will fill you up for an hour maximum and wont leave you satisfied! Whats the problem with that? If you are not filled and satisfied for long, you will start to get hungry again very soon and snack or binge eat on unhealthy things as you will develop cravings for that. In order to bot develop these, it is important to have a filling, nutritious and delicious meal. And I know that this can be difficult with salads but believe me, this one is everything else than boring. 

Whats in it?

You bake the chickpeas and eggplant in the oven, with a slight olive oil and honey drizzle to get them crispy and a bit sweet. Honestly, life changing! If you habe never done chickpeas or eggplant with honey, I‘d say you should head straight to the kitchen and get started! And its so simple! You place the main components of the salad in the oven for 20 minutes and you are already half way there. 

The most extra dressing

The remaining base of the salad is some basic spinach. Bot a lot, just to add some color and vitamins! But whats a salad without a dressing? My brother would say rabbit food! And he is right. It is boring and plain. I do not get those people who skip on salad dressings because they literally are the easiest thing ever and add a ton of flavor. Honestly, don‘t skip on that. In here we have a super extra, still super simple dressing. 3 ingredients (!!) so much flavor! The ingredients are purred tomatoes (the ones from the can or box), Tahini and lemon juice. I do not know why I have never thought of making dressing with tomato sauce before but it is good. I wouldn‘t do it with a green side salad but on top of buddha bowls or italian inspired ones or ones that are pretty extra, as this one, this is so good! Highly recommended!

The star of the show

Last but definitely not least, the grilled halloumni. I have never had halloumni up till a few months ago and from then on it is a must in my diet! So addictingly good. On salads, on bowls, on pasta, on everything. It really adds this last pinch of salt to anything. Like here. It adds the extra wow, the saltiness and satisfying touch. We essentially only need to grill it for a few minutes on each side and thats it! Assemble! You can serve it with some bread, although I believe that this is not necessary because it is amazing and filling as is! 

You can meal prep it, just leave the dressing extra and keep in mind that the halloumni won’t be as melty and good but it still tastes pretty solid. My recommendation: make it fresh, it is better.

Honey Eggplant and Chickpea Salad with grilled Halloumi

Next level salad. Has nothing to do with the boring image of salads you have in your head. Sweet and tangy eggplant & chickpeas, combined with salty fried halloumi and the most extra dressing. Enjoy now & Thank me later!

What you will need

  • 2 large handful spinach
  • 160 g chickpeas from the can, rinsed, drained, and pat dry
  • 1 eggplant
  • 2 tbsp olive oil
  • 1 tbsp honey
  • some salt & pepper
  • 200 g halloumi
  • 1/2 lemon juiced

For the dressing:

  • 2 tbsp Olive Oil (just pured tomatoes from the can/ boy without anything)
  • 1 tbsp Tahini
  • 1 lemon juiced

How to

That is how it works:

  1. Slice the eggplant into about 2 cm sized cubes. Drain, rinse and pat the chickpeas dry. Place both in a bowl. In a seperate bowl combie the olive oil, lemon juice and honey. Generously salt and pepper the eggplant and chickpeas and then toss in the dressing. Bake for abou 20 minutes at 180°C.

  2. Meanwhile combine all the ingredients for the dressing.

    Heat up a grilling pan to high heat. Slice up the halloumi in about 0.5 cm thick slices. Just before the chickpeas are done baking, fry the halloumi on it for about 2-3 minutes on each side until it gets some grilling marks and melts nicely.

  3. When the tray is done baking, combine the ingredients with the spinach and the dressing. Seperate on bowls and top with the grilled halloumi!

    Serve and enjoy!
