Healthy Christmas Pancakes

Who doesn´t love a good brunch at Christmas day? For my family, it is very typical to do this. It is like another coming together after a beautiful Christmas eve before the family is leaving. We all cook together and prepare the meal so we can sit down at the table and enjoy! This pancake recipe is the perfect meal to make for all those who have a sweet tooth but don’t want to start their day with something unhealthy. These pancakes are fluffy, juicy, wholegrain and super delicious! You can´t taste the “healthy” part of them, so you can make them for everyone out of your family!

Usually I totally am a savory kind of breakfast and brunch person. I would be the first to grab the avocado toast and scrambled eggs or the smoked salmon and leave the pancakes and waffles for the others because 90% of the time they are too sweet for me. I really do not like them if they simply taste like sugar, plus it is pretty unhealthy. Traditional pancakes are loaded with sugar, butter, and plain white flour, which will not make you feel full for long and raise your blood sugar levels. 

What is in it?

In order not to result in this but still enjoy a really delicious sweet breakfast or brunch, I am sharing this super delicious and healthy pancake recipe with you. Instead of butter, we are using apple sauce, instead of white flour, we aim for whole wheat (you cannot really taste the whole wheat out but if you really do not like the flavor or need something gluten free you can substitute it for other things. Just be careful with gluten-free flour because sometimes you need them in another ratio.), and honey instead of refined sugar. Honey is a natural sweetener and it still contains some vitamins, other than conventional sweeteners. Other than that, there are eggs, to bind and Greek yoghurt to give texture, add some richness, softness, and protein. The Greek yoghurt can´t be left out and I would not substitute it with normal plain yoghurt because it does not have that thick texture. But you can substitute it for Skyr, which is an Iceland-style yoghurt that also is thick. 

What to serve it with?

I love serving these pancakes with extra yoghurt, some cooked blueberries and a nice drizzle of honey. They would also work great with fresh fruits and banana and nut butter, but since berries & co are not in season right now, I did not use them. But if you want something in season to serve it with, you can serve it with my christmas apple sauce. It makes a great topping. Or you can add some cinnamon sautéed apples from the middle layer of my Apple crumble cake. Honestly, you can serve it with whatever comes to your mind, or what you love. If you love a good drizzle of melted chocolate or some fresh butter, because .. I mean it´s Christmas. We all deserve that!

Whether you serve this for your loved ones, or treat yourself, this recipe is a great recipe! You can also make them in a big batch, freeze them separately and heat them up in the microwave before serving. It makes great for christmas or any other brunch, super simple, and incredibly flavorful!

Healthy Christmas Pancakes

A great way to enjoy some delicious, indulging, breakfast pancakes. No matter if they are for christmas morning (they are the best!) or just some brunch. Easy, whole wheat, packed with protein and fiber!

What you will need

For the pancakes:

  • 1 egg
  • 50 g Apple Sauce for some next level pancakes, use my christmas apple sauce
  • 100 g Greek Yoghurt
  • 1 tbsp Honey
  • 1 tsp baking powder
  • 75 g Whole wheat flour
  • 40 ml almond milk Maybe more, depending on the texture

For the rest:

  • some coconut oil for frying
  • greek yoghurt for topping
  • berrie, frozen and cooked or fresh
  • any other toppings, as wanted: nuts, nut butter, fresh fruits, banana,…

How to

Thats how it works:

  1. Seperate the egg. In a larger bowl, add the egg yolk, the greek yoghurt, the applesauce, and the honey. Mix until well combined.

  2. In a seperate bowl whip up the egg white until fluffy and stiff peaks.

  3. Mix the flour and the baking powder well. Fold this mixture and the fluffy egg whites alternating under the remaining liquid ingredients. Once folded in, gently add the milk and mix. If it is too thick, add a little bit more.

  4. The consistency of the dough should be similar to a cake dough. A little runny but stick thick.

  5. Set the dough aside and leave it to rest for about 10 minutes.

  6. In a large skillet heat up coconut oil over medium heat. Bake the pancakes on each side for about 2-3 minutes. Once there are bubbles occuring, flip them.

  7. Add them onto a plate and top them with whatever toppings you desire. Enjoy!

Bircher Muesli with Honey Poached Apple

This Swiss style overnight oats is going to bring your breakfast to the next level! It is a great meal if you don’t have too much time in the morning because it littleraly takes 5 minutes when you have prepared it the night before. 

What even is Bircher muesli?

Bircher Müsli has actually been invented around 1900 by a Swiss doctor called Maximilian Bircher Brenner who served it his patients in the hospital as a medicine. The original recipe calls for rolled oats, water, cream, lemon juice, Apple and honey. In my recipe I have used almost the same ingredients but even made it a bit healthier.

Overnight oats vs Bircher muesli

Overnight oats are traditionally made either only rolled oats and milk soaked overnight. Bircher muesli also is made with oats being soaked in milk overnight but most of the time. To make it « Bircher » usually there are some nuts, seeds, dried fruits and yoghurt added overnight. When making “normal” overnight oats, you would only top them with fresh fruit, granola, nut butter and yogurt (usually but really depending on the preference) while for Bircher rules like the recipe calls for a freshly grated apple that you add to the yoghurt base. It then is topped with berries, bananas or apple, so just fruit. 

What do I need for this?

My basic recipe is really simple. You just have to add almond milk, yoghurt, rolled oats, seeds and/ or nuts, and some dried fruit to a jar and let them soak overnight! In the Morning all you have to do is take it out of the hat, mix under some grated apple and more yoghurt and serve! Honestly it already is incredibly delicious like that!! I love to eat it that way! 

But in case you want to go next level, you can add the poached apple on top. This is not difficult either but takes some time. You can make this by adding an Apple into some simmering water with honey and apple sauce and let it simmer for about 20 minutes. Then you take it out, peel it if you want but it’s not necessary, drizzle some more honey and add it to the muesli! This takes it next level and is super good

My favourite honey utensil!

I think if you have been following me along on the blog, you probably know that I am in love with honey. The only thing is that it always is some plastic whenever you finish a packaging when squeezing it out. Because of this reason I have ordered the honey spoons from Tuuli kitchen ( http://www.tuuli-kitchen.com )! They are made out of natural wood and such a great utensil for honey! This way I can always buy and use honey from glasses and produce less waste. Plus they look super cute when serving! 

Is this Healthy?

Also the Bircher muesli is really healthy and nutritious. The oats provide you with good carbs, essential fiber, a good amount of protein and a lot of vitamins. The ains milk also adds some vitamins and liquids while the Greek yoghurt is packed with protein. The nuts and seeds give you the healthy fats you need and the dried fruit add some natural sweetness. The Apple also provides you a lot of vitamins and deliciousness.

Bircher Muesli

A delicious swiss breakfast recipe. It is similar to overnight oats, packed with nutrients and incredibly delicious! Enjoy!

What you will need

The night before:

  • 100 g rolled oats
  • 200 ml almond milk
  • 1 heaped tbsp greek yoghurt can be substituted for a thick plant based yoghurt if making it vegan
  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp dried cranberries or raisins
  • 1 tsp honey

The morning of:

  • 1 large apple
  • 3 tbsp yoghurt preferably thick such as greek yoghurt or skyr
  • a few nuts
  • some fresh berries for serving

How to

That is how it works:

  1. In a large jar or bowl add all the ingredients for "the night before" and stir until all mixed up. Place it in the fridge for at least 6 hours to overnight.

  2. In the morning take the jar out of the fridge and transfer it into a bowl. Grate an apple and add it to the soaked oats along with the yoghurt. Gently mix until evrything is combined. Sprinkle some more nuts or seeds and top with some fresh fruit or honey poached apple (see recipe below). serve and enjoy!

Honey Poached Apple

This is a great way to prepare apples to use as a topping for bircher muesli, overnight oats, yoghurt or anything you like!

What you will need

  • 1 Apple
  • 2 tbsp apple Sauce
  • 1 tbsp honey

How to

This is how it works:

  1. Bring a pot with water to a boil. Add the apple sauce and honey and reduce to a simmer. Add in the Apple and let it simmer for 20 minutes.

    Once done take the apple out. You can peel the apple if you want, but it is not necessary. Drizzle some more honey and enjoy!

Ulmtimate Breakfast Tacos

Breakfast is the most important meal of the day, at least it is for me. It is the first meal that you are consuming after a long time of resting, recharging and fasting. It contains the first nutrients you decide to nourish your body with and it sets the mood for your day. For me, I always feel like If I am enjoying a healthy, balanced, nutritious and filling first meal of the day I am way more likely to make healthy decisions for the rest of the day. If I decide to start my day with a very sugar heavy breakfast that is not filling and satisfying I probable will not make good decisions regarding my food choices throughout the remaining day.

Even studies have found out that when eating a balanced and filling breakfast, it has several health benefits. Still, many people are not eating breakfast. This often results in snacking on a lot of foods that might not always be very nutrient dense throughout all morning. Also whenever going to school in the morning I notice that if I haven’t eaten before it is so much harder to concentrate and it takes a lot more energy for my brain to work. So having that all said, remember to always have some breakfast, especially if you can have these ultimate breakfast tortillas.

They are a perfect balanced meal. You have got carbohydrates to provide you with energy, protein for your brain and satisfaction, fibre for your digestion and being full for longer, vitamins for your overall health, healthy fats for that glowy skin (don’t worry, it has many other benefits too! :)), and some unsaturated fats because why not? This sounds like a lot of things at one time, I know. But don’t worry, making this won’t take you much longer than 15 max 20 minutes.

I am just talking about the benefits here but what actually are the ingredients now? First up whole wheat tortillas. Whole wheat contains a lot of fibre and vitamins which will keep you satisfied until lunch and give you energy because of the carbohydrates. Of course, if you are not a fan of whole wheat you can swap that out for white wheat but you will also loose some nutrients. If you can not find small tortillas at your local supermarket you can either swap it out for a large one and wrap it up as a tortilla or if you want to keep the look of tacos, you can cut about 10-12cm large circles out of your larger wrap and use the rest to make some chips, or simply dip it in guac.

Next up some protein. Here we have 3 different foods. First, eggs. I mean what are breakfast tacos without eggs (actually breakfast in general)? Eggs have so many different nutrients and are so healthy but so damn delicious. I scrambled them up with a little oil, for some healthy fats, and made them really creamy. I believe they are easiest to eat in those tacos when scrambled. If you prefer though, it is totally possible to fry them, poach them, or soft or hard boil them. This is really up to your preference but I simply love scrambled eggs with all that creaminess paired with the warm tortillas.

As a second protein source I used bacon. Bacon is not necessarily the healthiest food in the world but I feel like it is totally fine when enjoyed in moderation. In this recipe I believe that it works really well because it adds a crunch and saltiness, which works really great! The last but definitely not least protein source is cream cheese. It contains a lot of protein too and not too many calories as other cheeses. If you want to cut down the saturated fats here, go ahead and use yoghurt cream cheese or cottage cheese. For this recipe you are not using huge amounts of it so normal one works great! It adds a creaminess and works as a sauce on the bottom of the tortilla.

For the assembling it is really simple. Heat the tortillas up in a non-stick pan until slightly browned, do not use oil here, it really is not necessary and only makes it too crispy, so the tortillas loose their softness. Scramble up the eggs in a pan with a little oil until fluffy. Spread the heated up tortillas with the cream cheese and add the eggs on top. Next comes the cut up bacon strips. As topping slice up some avocado and add some pickled onions. The onions on top are sooo good! They add a sour- and addictiveness and rounds it all up. Sprinkle some salt, serve & enjoy!

Ultimate Breakfast Tacos

A perfect dish for a big brekfast or brunch! It has everything you need in the first meal of the day!

What you will need

  • 6 soft taco shells
  • 3 eggs
  • 1 tbsp olive oil
  • 3 brekfast bacon strips
  • 2 heaped tbsp cream cheese
  • 1 small Avocado
  • 2 tbsp pickled red onion

How to

Thats how it works:

  1. In a non-stick pan without oil heat up the tortillas until slightly brown on both sides.

    Meanwhile heat up the bacon in a pan without oil on medium-high heat. Fry them on each side for about 2-3 minutes until golden and crsipy.

    In a seperate pan heat up the olive oil and whisk the eggs in a bowl. Once hot, add the eggs into the oil and slowly scramble them up on medium heat. Add a sprinkle of sea salt and steadily stir them through the pan. While the eggs are cooking, the tortillas should be done heating up.

    Also the bacon should be done be now. Take it out of the pan and lay it on some kitchen paper to let the excess fat drip of and get it extra crispy.

    Spread ech tortilla with 1 tsp of cream cheese on the bottom. Then add the scrambled eggs on top. Take the bacon strips and bread or cut them into smaller pieces. Seperate them on the tacos. Cut the Avodaco into strips and also add them into the tacos. Last place the pickled red onions on top and spinkle with some sea salt!

    Serve and enjoy!

French Toast with Whipped Ricotta and Figs

When it comes to breakfast I am usually the savory, and quick kind of person. I´ll mostly go for some avo toast with scrambled eggs or if I want something sweet for a yoghurt-chia pudding bowl with fresh fruit. Both of these come together in like 3 minutes and are really good. But on the weekends when I am not in a hurry I like to make something a little more time consuming. Sometimes I´ll go for something like eggs benedict or a beautiful fruit platter and eggs, pancaked or whatever I feel like. 

Last week though, we had this really nice, fluffy bread that was so good!! But I simply didn´t feel like having something savory so I decided to try making a french toast. I hadn´t made French toast often before that and I have actually never eaten until a little over a year when I visited the US for the first time. We used to get it in the cafeteria a few times a week and it was soo good! I remembered this French toast instantly when I saw this bread so I immediately decided to make it. 

The secret to making the best French Toast is thick bread slices, like 3cm, and a good amount of butter or coconut oil for frying. This makes it really crispy on the outside but really delicious and gooey on the inside, which equals the perfect French toast. The perfect bread to use is Brioche bread, but latterly ever bread works fine. If you are using a rather sweet bread like brioche, you do not have to make the dipping as sweet, but if you go for a dark on, you should make it a little sweeter. I have made both, with a brioche one and with one that actually was a potato-sourdough one, and they both turned out insanely delicious and addicting!

It actually is super simple to make and only asks for ingredients most people have on hand, which makes it a perfect Sunday morning breakfast when all the stores are closed anyway. For the dipping I used whole eggs because I think that they simply taste better than just the egg whites, almond milk, but you can use any dairy or dairy-free milk you like, some honey and a ton of cinnamon – because you can never have too much cinnamon. 

The toppings are the best part of every meal I think – also here. The whipped honey Ricotta is so insanely tasty and has such an addiction effect, it is soooo good! It has the perfect sweetness, the sweetness that already is in the rich Ricotta, and then that super good honey flavor. Mixed together and whipped fluffy, just good. Let me tell you, you won´t ever eat French toast without that again. It is not as fatty as butter or cream but it definitely beats it in flavor. Such a great variation to the good old piece of butter on top. 

The fresh figs perfectly round up the entire dish. They add a freshness and a bite, while not giving a contrast that is too harsh. I like using figs as they are seasonal and grown local at this time of the year but if you prefer berries, bananas or any other fruit that would work perfectly fine too. If you feel like getting extra fancy, you can even caramelize your fruits a little if you heat up some coconut oil or butter in a pan, add some sugar and then the fruit. This gives it an extra dish but I do not like it to be too sweet, so I leave out this step. The toast still tastes amazing. The crispy on the outside soggy on the inside toast, the creamy, tangy whipped Ricotta, the fresh fruits, and then that drizzle of honey on top. What do you want more?

French Toast with Whipped Ricotta and Figs

Perfect Sunday Brunch Meal for a sweet tooth.

What you will need

For the toast:

  • 160 G Brioche Bread or any other bread you like
  • 200 ml Almond Milk
  • 2 Eggs
  • 1 tsp Cinnamon
  • 2 tsp Honey can substitute for Maple if you prefer
  • pinch of salt
  • 1 tbsp Coconut Oil maybe more depending on your pan

For the Whipped Ricotta:

  • 160 g Ricotta
  • 1 tbsp Honey

For the toppings:

  • 3-4 figs
  • some honey

How to

  1. Thats how it works:

  2. Add the milk, the eggs, the cinnamon, honey, and salt in a big bowl and mix until all combined. Meanwhile heat up the coocnut oil in a pan. Once hot, dip the bread slices into the milk mixture so that both sides are covered with it.

    Place the dipped bread into the pan and fry on each side for about 3-4 minutes, until golden brown. If you feel like they are sticking to the pan simply add more oil.

  3. While the toast are frying add the Ricotta and the honey into a bowl. EIther with a hand mixer or simply with an egg whisk, whip it up until its all creamy and fluffy.

  4. Cut the figs in half or quaters.

  5. Take the bread out of the pan once it is finished. Top it with the Ricotta, the figs ad an extra drizzle of Honey.

  6. Enjoy!
