Easy Peasy Summer Panzanella (perfect for leftovers!)

August 12, 2021 by katharina.kuehr Kommentar verfassen

These days I feel like an ice cream in the sun – just melting away in very little time. And let‘s be honest, who wants to cook and eat something warm when it‘s this hot? I at least, definitely do not want to. And salads are great, yeah, but after a few days I feel like a rabbit when I only eat salads, so we need to switch things up a little. That‘s where Panzanella needs to be introduced. A salad made out of bread, tomatoes and bell pepper, just without salad. And holy moly, when you make this, your salad level will be elevated to the next level.

This is really insanely easy to make, and ideal if you want to use up any leftover (maybe already stale) bread. It only takes a few minutes to make and a few to chill and that‘s it. Plus, (big plus) your kitchen is no mess after making this because it takes very few ingredients to end up with this deliciousness!

What even is panzanella?

Panzanella is an italian bread salad, that traditionally is made from stale bread, tomatoes, cucumber, olives, bell pepper and olive oil. It is like a greek salad, just with bread instead of feta cheese. Although adding feta cheese would probably also be a genius idea!

What is special about this dish?

It is like a regular panzanella, just with a little twist. We here are also adding in some chanterelle mushrooms to add a nice twist. And they taste soso tasty in combination with the remaining ingredients. Besides, this dish is really easy to make. It really takes only 15 minutes to make it and therefore is perfect for those hot summer days. And, it is packed with many, many veggies and can be enjoyed cold. All in all, really, really good.

Is this healthy?

We need to be honest and say that it definitely is not as nutritious as regular salad it. Nevertheless, depending on how you prepare it, it can be very nutritious.

It already starts with the base. Traditionally you would use some white bread or focaccia, which also is what we are using here. In my opinion focaccia works best. If you though want to make it a bit healthier, you could substitute this for some wholegrain or at least partially-wholegrain bread. This will provide even more fibre and will be better for you blood sugar levels. Still, I need to say that it does taste better with white bread.

Then we have all the veggies, which are a pack of nutrients. The cucumber is full of water and fibre, the bell pepper with vitamin C and the tomatoes with antioxidants and different Vitamins. The chanterelle mushrooms help your cells and your immune system in order for you to stay fit and healthy. So, you can really never go wrong with veggies. In the dressing are some more healthy fats from the olive oil to round it up perfectly.

How to make this dish?

As mentioned before, this comes together really quickly!! First we need to cube the bread. The cubes should be about 2 cm on each side, making them a perfect bite-sized pieces. These are now fried in some oil or margarine to make them a bit crispy and golden brown on each side. Once they are crispy, we are taking them out and adding them to a bowl. Now we can add in the chanterelle mushrooms to the same pan (to save dishes ;)) and fry those for about 5 minutes until they are soft and cooked through.

In the meantime we just need to chop the veggies: the flesh from the cucumber needs to be removed and then everything needs to be sliced up. Now everything just needs to be tossed with a mix of olive oil, lemon juice, mustard and honey and that is it for the work.

I would though still recommend to let it sit for at least 15 minutes. This lets the bread soak up all the flavors and get a bit soft. Just like the traditional panzanella salad. The longer you let it sit the softer and more intense it gets. As a maximum I would take 45 minutes – 1 hour.

Serving suggestions:

This really tastes super tasty as is, anyhow you can still upgrade it. For example some fresh mozzarella or burrata would be amazing. Or also, some fresh feta cheese would take it next level. If you want a slight fruity twist, you could even add some berries. As for more veggies, I could recommend some corn or avocado (both not traditional but very good).

All in all, it is super easy to make and tastes super duper fresh and yummy. Honestly, one of my favorite summer dishes and a must make!

The BEST 15-minute Pasta with Rosé Cherry Tomato Honey-Lemon Sauce

August 5, 2021 by katharina.kuehr Kommentar verfassen

Summer can be tough for cooking. When having the choice between sitting in the sun and standing in the kitchen , who (except for me) would choose the kitchen? Probably most people wouldn’t. But still, have something delicious and nourishing to eat also is something we do not want to miss out on. Is that impossible? Definitely not!

It may seem a bit tricky to create something delicious in little time but it really isn’t. And given the amazing fruits and veggies that summer brings us, it is as easy as pie to add a whole bunch of nutrients to anything we make. So, we know it is possible to make something delicious and healthy, but what is more, we can even make something fancy. This pasta dish is perfect as a nice lunch that makes you feel as if you were in Italy or as a dinner for two on one of summer‘s long evenings.

Sounds complicated but is easy!

The name of this dish is pretty long and therefore may make the impression that this dish is complicated when it actually isn’t. Making this pasta actually requires very few ingredients, and pretty much all (maybe except for the olive oil and burrata) are available from a local source. It essentially only comes down to cooking the pasta and making the sauce by letting some fresh tomatoes, rosé, garlic, honey, lemon & some olive oil simmer until the tomatoes have bursted and flavours have been able to emerge.

What is special about this dish?

What is special is that it is really simple and yet pretty fancy. We‘re not making a classic tomato sauce here but one that is next level, while not taking much time. The tomatoes are sautéed in hot olive oil with some garlic to on the one hand soften, and on the other hand gain a nice roasted flavour. The honey intensifies the naturally sweet flavour of the tomatoes, while the lemon adds a nice refreshing contrast to them. And since the honey is added to balance it out, the sauce does not have a sour flavour. To make everything merge into a sauce, the rosé wine is used. Why rosé? In my opinion, rosé is just a summer wine. And since, as my dad likes to say, the wine that is used for cooking, also needs be drunken with the meal, there is no way around rosé. The sauce itself already is packed with so much flavour and can totally be eaten as is with the pasta. This way, you would actually have a vegan version of this dish. Nevertheless, in case you want to take everything next level, you can still top this dish off with some fresh, creamy burrata. Because nothing, really nothing, beats some burrata. The creaminess works in such perfect harmony with the sweet and fresh tomato sauce – pure heaven.

Is this dish healthy?

Definitely! Pasta has a reputation of not being healthy but it actually does have a bunch of health benefits. It is loaded with carbs, which make sure you stay full of energy for the rest of the day. Besides, it also comes with a decent amount of protein and fibre. When you chose to go for whole grain pasta, the amount of fibre is increased even more. Personally, I do not like the taste of whole grain pasta in this dish too much, but if you do, it would be a great choice!

The real star of the show though are the tomatoes. Since this fruit (yes – it‘s a fruit!) is currently in season, they are full of goodies for you. Loaded with sweetness they provide a lot of fibre, Vitamin C & K, potassium and folate. Also, they are high in antioxidants, which have been linked to several health benefits. And the biggest benefit probably: they are delicious. Also garlic has a nutritional value that can be shown. It does not contain an excessive amount of one thing, but it has a bit of anything you need. Garlic has also been linked to help as medicine when catching a cold and to a reduction of blood pressure.

Also, the olive oil in this dish provided a decent amount of unsaturated fats, which are essential – especially for the brain. Yes, we are adding wine into this dish, but the alcohol cooks down, and what stays is the flavour. Last but definitely not least is the burrata on top. This heavenly creaminess is full of protein and deliciousness. It needs to be said that it also comes with a bunch of saturated fats but you know what? A little cheese never hurt nobody!

Meal Prep? Yes! But not necessary!

When I made this pasta for the first time, I did meal prep it because I took it to work (where we did not have a kitchen). It worked out perfectly when I heated it up in the microwave, although it would be even better to heat it up on the stove with a splash of water and tomato sauce if you have the possibility to do so.

Please, still keep in mind that this dish only takes 15 minutes to make – only 10 minutes more than when heating it up. So if you do have a stove I can only recommend you to make it freshly! If you really are that crunched on time, you can also pre chop the tomatoes or throw them into the sauce as a whole.

Pasta is always a great idea. Still, this dish is an extra level of great. The sweetness of the tomatoes in combination with the sour-tanginess of the lemons and the comfort from the pasta, plus the creaminess of the burrata = HEAVEN. Writing this only makes me want to have it again. You should really do yourself a favour and try this out and spoil yourself and a loved one with this! Easy as pie and tastes like heaven!

I genuinely hope that you‘ll enjoy it and make it on repeat – at least for as long as tomatoes are in season!
Enjoy,

The Best Ever 15 Minute Veggie & Tofu Peanut Noodle Stir-Fry

Juli 19, 2021 by katharina.kuehr Kommentar verfassen

This sounds very complicated, I know, but indeed it actually is super super easy. And don‘t be fooled, easy does not mean boring. Because this is everything else than boring. We have got crispy, stir-fried veggies and tofu combined with saucy, peanuty noodles and topped with a decent amount of fresh herbs. The combo? Insane! The time needed? Insanely little!

When I asked you all on instagram which dishes you would like to see more of, there were soso many that said „quick meals“. And really, I get you! Some days we just cannot stand spending large amounts of time in the kitchen preparing dinner and still want to have something healthy. And this can be a challenge. So recipes like these are perfect for when you want something quick and yet healthy and delicious!

What is special about this dish?

Well, it is super super quick. All we need to do is fry the veggies and tofu, cook the noodles and combine everything with the sauce! It comes together in something like 10-15 minutes, really!

And then also, it is not very traditional. You could say it is pad-thai inspired, just way simpler, with fewer ingredients and a bit healthy. Maybe something like a mix between a pad-thai and a wok. So basically, with this we are inventing an easy and healthy dish.

Is this dish healthy?

Yup Yup, it is. How come so? It is packed with all the nutrients we need to stay happy, healthy and full. The large amount if different veggies that we are using add a whole bunch of fibre and vitamins to the dish. The fibre helps our digestion and the vitamins our immune system and organs. Then we also have the tofu, which is another great source of fibre and also of protein, to help us strengthen and repair muscles.

Now what’s left are the noodles and the sauce. So as for the noodles, they are our source of carbohydrates, which we need for our energy. And the sauce, which is made up from peanut butter, honey (or maple), soy sauce, sesame oil and lime juice, is a great way to sneak in some healthy fats and more protein (from the nuts and oil). Yes, the soy sauce makes it contain a lot of salt too, so if you want less of that, you could just go for sodium-reduced soy sauce.

How to make this dish?

As the name implicates, this is easy peasy. So, what we need to do is chop the veggies, here you can really use whatever you want. I personally love asparagus, edamame (you don‘t have to chop this), bell peppers, spring onions, or broccoli and carrot, but really, just use whatever’s left in your fridge. That‘s what makes this so easy and versatile.

Then we also need to finely chop some ginger and cube some tofu and them throw everything into a pan with hot oil. This then is stir fried for 2-3 minutes until crispy. Then we turn it down to medium heat and cook the noodles. Depending on what you package instructions say, the cooking time may vary, but should probably be around 5 minutes. While they are cooking, we can mix everything for the peanut sauce. Then, once drained, we add the noodles to the pan, take it off the heat and mix it all with the sauce. Voilà, that‘s it! Now we just need to garnish it with the mint and cilantro and a lime wedge and our meal is finished!!

Perfect for meal prep!

How come? Shouldn’t it be served warm? Definitely! Surprisingly though, it also tastes incredibly delicious when being served cold! The sauce gives it kind of a salad-vibe, so it tastes at least as tasty when it is cold. You could just add it to a tupperware and enjoy it cold.

Honestly, this is one of my favorite quick and lazy meals! Perfect for busy work days or evenings when you are just tired and don’t feel like cooking! It is just perfect!

My July Top 6

Juli 4, 2021 by katharina.kuehr Kommentar verfassen

With the start of this month, we are also starting into the second half of the year. These monthly favorites always make me realize how crazily quick time flies. And these monthly top 6 are for sure going to bring you through July in the best possible way. Honestly, everything you need for summer. As usual, nothing here is sponsored, everything is based on personal experience and recommendations. I hope you‘ll enjoy everything and have the best summer ever!

Restaurant of the Month – Himmelblau

It really is a surprise that this restaurant has not been on the blog before, except for the brunch guide. This café, which is located in the 18th district of Vienna, is one of my favorites, if not my favorite café in town. Right in the middle of the Kutschkermarkt you can get heavenly coffee, breakfast, and cakes. And a weekly changing lunch menu.

Why is it so special and so good? Well, first up the location. Himmelblau probably is the café with the best location in Vienna. When you‘re sitting outside, you find yourself in the middle of colorful fruit and vegetable vendors, fishers and butchers and a lot of smiling and chatting people. The atmosphere is just incredibly relaxed and happy.

Then the food: it may not be that instragrammable, fancy brunch but that is what makes it so loveable. It is hard to oversee how much love goes into every single dish prepared. The breakfast combos are versatile, delicious, and there for sure is something for everyone. You could get an avocado or also just a Semmel with Jam. The range is from traditional Austrian to international cuisine, but always with this grounded touch and lots of love.

What is more, everyone there is super friendly and super happy. If you have 5 extra wishes that also works perfectly fine. And waiting times are minimal. The food and drinks don‘t take long until they are on your table. The only disadvantage: Himmelblau does not take reservations on the weekend, so you probably have to wait for a table (which is no big deal to be honest, since you can have your first coffee while waiting )

Food of the Month – Tomatoes

In summer there is no other way but to choose tomatoes as the food of the month. Plus, tomatoes are my favorite fruit of them all (yes, I like them even more than avocados). When I was a kid I would ALWAYS snack on tomatoes. Yes, I would choose tomatoes over chocolate or gummy bears – that is how big my love for them is. Nowadays I still snack on tomatoes all the time, which definitely contributes to the fact that summer is my favorite season of them all.

Anyway, besides their incredibly delicious flavor and my addiction, why are tomatoes the food of the month. Tomatoes, being part of the nightshade family, have a super high water content. They are made up of 95% water. This on the one hand is very beneficial for us, because they are very hydrating, yet it is harmful for the environment because they need a lot of water to grow.

In terms of nutritional value, tomatoes are a super star. They contain a decent amount of fiber and are very low in carbohydrates. One regular sized tomato provides more than 25% of the recommend amount of vitamin C for a day. This makes it a great fruit for your immune system. Besides, it also contains potassium, Vitamin K1 and Folate. In addition, tomatoes have also been linked to several healthy benefits.

What is more, tomatoes are super easy to prepare and super tasty in any way. They are very delicious in any way of preparation. As a warm or cold soup, dried or pickled or as tomato sauce. Also in dishes like the Honey Roasted Tomato Caprese or the Eggplant Tomato Stew, or the Tomato White Wine Pasta.

Tomatoes are just unbeatable. Their flavor, their versatility and their nutritional value all together make it a well-deserved food of the month!

Recipe of the month – Crispy Smashed Potatoes, Asparagus & Pesto

Potatoes always are a good choice. But crispy potatoes are not just a good choice, they are an excellent choice. Crispy, salty and golden brown on the outside, soft and warm on the inside. Paired with tangy pesto and fresh asparagus and the combination is perfect. And it really is not difficult to make.

This recipe is one I personally really love. Making it is actually easy. All you need to do is boil the potatoes, dry them, smash, and bake them. In the meantime, you can prepare the herb dip if you want to. What also is great about this recipe is that you can easily prepare it beforehand and the just bake it whenever you want. This also makes it very suitable for when you have guests over!

Plus, the recipe is pretty nutrient dense. Both, potatoes, and herbs are very nutritious, making this a very balanced meal. You could just enjoy them as they are or have them as a side or with a salad and some avocado. Regardless of the way you‘ll eat them, I am sure you will love them.

Product of the month – Charity Special Feel Good Bowl

This product of the month is, contrary to the ones before, one, which I have a personal connection too. If you have read my previous Monthly Top 6 you know Elena‘s Buddha Bowls. It is a restaurant/ Buddha Bowl Bar in Vienna that focuses on creating high quality, delicious and healthy buddha bowls. Most ingredients are organic and everything is prepared in a healthy way, either steamed or pan-fried.

Together with Elena form Elena‘s Buddha Bowls, I have created this Feel Good Buddha Bowl. Why feel good? It is designed to make you feel good and make you do good. Feel good because all ingredients are very nutritious and amazing for your body, and feel good because it simply tastes reallyyyy good! And do good because this bowl also has a charity impact. 5% of every single sold bold is donated to the NGO Oxfam Germany to help fight world hunger.

The Feel Good Bowl is available for 1 Month, from June 28th until July 28th and costs 10€. It is prepared like a typical buddha bowl, so made up of a base, a dressing, a protein, add-ons, a sauce, and toppings. As a base we‘re using half spinach and half spelt rice. I know that spelt rice sounds very interesting and very healthy, but trust me – it is really, good. I promise you; it tastes good. I was really surprised myself. The add-ons are cherry tomatoes and broccolini as specials (those usually are not available), hummus, avocado, and edamame. All those taste really delicious!! Then as a sauce we have a tomato-peanut sauce and on top of this are some pomegranate seeds and crunchy onions. All together it tastes like summer in a bowl – just delicious.

This project really is one that means SO much to me, because it shows that we can make an impact together.

Workout of the month – ShapedbyIB Scorch

You need to know that I am currently writing this in my chair and I haven‘t quite walked for a few hours because my legs are so sore. Sore from yesterday‘s Shaped by IB Scorch. Maybe you know the Shaped by IB online workouts from previous monthly Top 6 and already felt like dying doing those. But scorch in real life is another level of intensity.

What is Shaped by IB and what is Scorch? Shaped by IB is a fitness studio in the heart of Vienna at the Danube canal and soon in Taborstraße. It was founded by three friends and claims to be the hardest workout in town. All workouts are a mix of cardio and strength parts and you will definitely sweat in every single class. You train in a dark room with super loud music and colorful disco lights. May sound a bit odd at first but the atmosphere is so energizing and motivating.

Scorch is one of their three trainings. It is a mix of boxing, strength training and cardio. After a warm-up, you start with 6 minutes of one of those aspects. During the last 30 seconds of each 6 minute interval, the read light is turned on. That means you now must go all in and give everything that is left.

So, let‘s say you start with the treadmill. For 6 minutes you will now do intervals on the treadmill and switch between sprinting and rather relaxing phases. Then you move on to the strength part, which is made up of several different exercises which you repeat as often as possible within those 6 minutes. After, you go to the boxing station and will box different combinations for 6 minutes straight. The last 30 seconds are freestyle boxing, which honestly is the best way to release any tension or stress that has been carried around for a while within you. When you are done, and everything already feels like gummy, then you repeat everything one more time.

I am not exaggerating when I say you‘ll be drenching in sweat afterwards but I also am not exaggerating when I say that you will feel incredible afterwards. All this pushing towards your limits and beyond makes you become a so much stronger person inside and out. If you want to leave your comfort zone and push yourself, you really NEED to go to a Scorch session.

One trial session costs 15€, then depending on which rate you chose it varies from 20-25€. Not cheap, but very well invested money for sure.

Inspiration of the month – Nate O’Brien

This month the inspiration is not a book, not a movie, and not a documentary. It is a youtuber. No, not one doing vlogs and pranks but one who really can inspire. I have found Nate O‘Brien a few months ago, when a friend recommended him to me. She said that he is a pretty cool youtuber. So I checked him out. And I really started to like his videos.

They are focused on how to improve your life (mostly from habits) and on economics. The main topics he is covering, are minimalism, stocks, habits from successful people, productivity, books and investments. What is so great about his videos, is that you can really learn and take away so much from every single one and implement it yourself.

The videos are around 10 minutes long and are uploaded pretty much weekly (although he took a little break last month). I personally enjoy his habit videos (e.g. millionaire habits or minimalist habits) because especially the learnings from those videos are some, which you can implement immediately. And therefore you can also see a difference in your daily life immediately.

I can only highly recommend checking out his youtube channel and watching one video. This only takes 10 minutes and may actually make a big change. Give it a shot and afterwards you can still decide whether you like it or not.

I genuinely hope that these Top 6 will help you make the most of July and enjoy it to its fullest. I would love to hear and/ or see what you think of those and how you like those Top 6. So, feel free to just comment here or on Instagram @uneptcuisiniere or send me a DM! Have an incredible summer!
