Summer Rolls with Peanut Tofu

Picture summer in a better way than having summer rolls in the sunshine with your loved ones on a picnic, maybe at a lake. Doesn’t this sound like a dream? To me it does. But wait, where’s the catch? Oh yes, maybe to get those summer rolls. I mean, sure you could order them at your favourite Vietnamese restaurant but why not making them yourself? It is so easy and way cheaper.

If you have been a little active in the food scene of instagram you probably have already seen those. I think summer rolls have become very popular a few years ago and have become part of the whole health food industry. Besides that they are super duper tasty. So here we are, and I have made a recipe for you to make them at home. If you are not very familiar with summer rolls here is just a brief introduction!

What are summer rolls?

Summer rolls is a dish popular in Vietnam. They are also called rice paper rolls, or fresh spring rolls. It is believed though, that they originally come from China and only became popular in Vietnam. Anyway, today you can find them in most asian restaurants, even in Japanese or Thai ones.

These cute rolls look very much like spring rolls. Same size and shape. The difference is the filling and the preparation. Spring rolls are mostly filled with pork and vegetables and then deep fried. Summer rolls on the other hand are filled with vegetables, prawn, pork or tofu and oftentimes also rice vermicelli (super thin rice noodles). Also those are not deep-fried or prepared with any oil and they are served at room temperature or cold. Both, spring and summer rolls, come with a sauce on the side.

Are summer rolls healthy?

Definitely! Since the main component are vegetables, they are super healthy. Other than vegetables you often have rice vermicelli, which also are not unhealthy. They are not high in sugar or fat but also not super nutritious. For your source of protein you can use prawns, pork or tofu. They are all great sources of protein. Prawns and they also are not high in fat at all. Pork on the other hand can be high in fat, depending on which part you use.

Summer rolls kn general are not high kn fat because, unlike spring rolls they are not deep fried, and prepared with rarely little fat. The only fat may be used when preparing the protein source or in the sauce.

The sauce is the only thing you should look out for when you have those. They often are served with a sweet chili sauce or lots of soy sauce. Sweet chili sauce mostly has a lot of sugar in it and soy sauce is high in sodium. If you only get a little on the side, that’s more than fine just be aware of that!

so what’s in these summer rolls?

This is a vegetarian (actually vegan) version. I do not use rice vermicelli because I prefer them without (plus it is less work). So, as a base we have a bunch of vegetables. We use a mix of carrots, bell pepper, cucumber, lettuce and radishes. You could also add red cabbage or anything else of your preference.

To not keep it boring we also are adding some fruit. I absolutely love mango in here but papaya also works. But mango is better tbh. And of course avocado. What would a meal be without avocado? (btw, did you know that avocado is a fruit?) And of course, our source of protein, the peanut tofu. It adds a bunch of flavour and is so tasty. But still, it is not so flavourful yet, that’s why we are adding some more peanut sauce and, if you want, also some sriracha or hot sauce.

The rice paper

Rice paper is not such an easy thing to find. You will probably not find it at your regular supermarket but you can find it in pretty much and asian store. It has the form of a circle and is almost see through but a little white-ish. I get mine from Reishunger because it is super good, easy to get and they ship it right to your door!

Summer rolls with peanut tofu

a perfectly fresh and light summer dish for those hot days!

What you will need

  • 10 rice papers
  • 200 g tofu
  • 2 carrots
  • 1/2 cucumber
  • 1 red bell pepper
  • 100 g radishes
  • 1/2 mango
  • 100 g lettuce
  • 1/2 avocado
  • 1 tbsp oil

For the peanut sauce:

  • 150 ml light coconut milk
  • 2 tbsp peanut butter
  • 4 tbsp soy sauce
  • 2 tsp sriracha hot sauce
  • 1/2 lime
  • 1 tbsp coconut sugar or brown sugar
  • 1-2 tbsp water

How to

  1. Combine all the ingredients for the peanut sauce. Slice the tofu into 1 cm thick and about 6-7cm long strips (or hwo ever it works best for you).

    Place them in the peanut sauce and let them marinate for about 1 h or longer if possible.

  2. Peel the carrots and either grate them or slice them into thin strips. Also slice the peper and cucumber into thin strips. Peel the mango and also cut it into bite sized pieces. Finely slice the radishes and chop up the lettuce.

  3. Heat up a pan with the oil. Take the tofu out of the sauce and fry on each side for about 2 minutes. Set it aside.

  4. To assemble prepare the rice paper according to package instructions. It most of the time works best when you take a kitchen towel and make it wet. Lay that on a flat surface. Then run the rice paper under water for about 3-4 seconds. Place them on the wet kitchen towl. Add a little bit of each filling and some of the remaining peanut sauce into the rice paper, rather on th elower end but not on the edge.

    First, fold in the rice paper from the bottom. Then fold in the sides and roll it up, so all of the fillings are in the rice paper and it is tightly closed. This takes a little practice but after a few it will work out.

  5. Pour the remaining sauce in a little conatiner and serve it with the summer rolls! Serve and enjoy!

Creamy Basil Feta Pasta

Summer to me is lots of fresh herbs. Mint, basil, rosemary, parsley, all of the good things. No matter where. Whether it is in salads, as a garnish, on toast, in drinks, in pesto or in pasta. It is just a sign and part of summer. So fresh, so tasty. But, as good as pesto is, here we are gonna switch things up a little bit and make an extremely easy, 10 minute pasta dish! No, that’s not a typo, it actually only takes 10 minutes (maybe 15 max)!

What does summer mean to you? Laying at the beach, toasting barbecues and summer parties, going for a swim? To me it is lots of sun, good times and fresh food! Definitely! That is why I love herbs so much! I love how they add so much freshness to every single dish you add it in. Also they just add such a nice flavour!

Are herbs healthy?

Definitely! It honestly is very surprising to some! In most kitchens you will find some sort of herbs. Some prefer them in a fresh form to add them to dishes or as a garnish and some have them in their dried form. I personally prefer the dried form for seasoning because they are more intense in flavour but I always have fresh herbs on hand for garnish. Also they make pretty much everything look nice.

Back to the point. Herbs actually are super healthy. Their are extremely high in vitamins, minerals but also fibre. Some even have a decent amount of protein. The great thing about them is that it is so easy to add them to anything to give all of your meals an extra nutrient boost.

How to add more herbs to your diet

This part I believe is really easy. One of my favourite ways is to add it into salads. Like adding a little bit of mint and basil to your salad not only makes a great flavour but also adds a bunch of vitamins. Other ways are to stir is into sauces like into tomato sauce, into stir fries, here cilantro would work amazing, when marinating something or just make pesto out of it. All of these ways are super easy.

Is this sauce like pesto?

No, but also yes. So it is kind of similar but also different. What is pretty much the same is the strong basil flavour. But we are not using parmesan cheese and pine nuts and loads of olive oil. So basil as a base is same. Instead of parmesan cheese we are using feta. If you do not know, feta is a cheese made out of sheep’s milk. It originated in Greece and still is very popular these. It is a firm cheese but has a rather „light“ and fresh taste. So as said, it is a firm cheese but when you blend it up it becomes very creamy.

We still, also use a little bit of olive oil to add some flavour but not as much as in pesto. No nuts in here, which pesto does have. What is „new“ here, which is not usual in pesto is that we add some greek yoghurt. The greek yoghurt adds some creaminess and makes it really good.

How to make the sauce & substitutes

Well, that’s the easiest thing ever. Blend it all up, that’s it. First only the basil, which allows it to become very fine and smooth. Then we add the feta and lastly, some salt, olive oil and greek yoghurt. Also reserve some water from the boiling pasta and add it again when combining the pasta with the sauce. This really is key to making a super creamy sauce and to allow it to combine it well.

If you do not do feta, you can use cream cheese instead. I would recommend using one from goat though, because I believe that the flavour just goes in better harmony with the basil but regular one works too. If you do not have greek yoghurt on hand, you can use some regular yoghurt or half the amount and substitute it for cream cheese.

When to have it & meal prep

I LOVE this as a quick and easy lunch or dinner. It is perfect for a large number of people because it is super easy to make and very versatile. If you want, you can also add some grilled chicken or prawns on top, which also is really tasty.

I would not recommend it for meal prep just because I personally do not like reheated pasta and it only takes very little time anyway. If you do not mind reheated pasta, you can totally meal prep it. Or you just meal prep the sauce, this works really well.

Creamy Basil Feta Pasta

A great summer pasta. Not like your pesto but much better. And easier. 10 minutes, 6 ingredients. Super good.

What you will need

  • 500 g spaghetti
  • 300 g feta
  • 100 g basil about 3-4 large handful
  • 100 g greek yogurt
  • 2 tbsp olive oil
  • some dried tomatoes

How to

  1. Bring a large pot with salted water to a boil. Cook the pasta according to package instructions. Before draining the pasta reserve one cup (about 200ml) of the pasta water.

  2. While the pasta is cooking add the basil to a food processor, until it is very finely chopped. Then add the feta and blend again until a creamy consitency is reached. Last add the olive oil, greek yoghurt and a pinch of salt. Add at least half of the reserved pasta water and blend again.

  3. After draining the pasta add it back to the pot along with the sauce. If it still is too thick and does not combine well, add some more pasta water.

  4. Divide onto the plates and garnish with extra feta, dried tomatoes and fresh basil.

My favorite brunch spots in Vienna

[ Brunch ] – a meal eaten when you wake up too late to have breakfast, but do not want to go until lunch without having eaten. Instead you have a single meal called brunch.

Ok, let’s make that be a katie definition. The favorite meal of the day because it gives you an excuse to have pancakes and avo toast all at the same time and you do not need to get up early. 

I feel like brunch has become a very popular thing in the recent years. Although making it at home is very fun and I have several recipes for this on my blog it also is super nice to go out and get it served. That’s why in this blog post I have written down my favorite places to go and have brunch in Vienna. They are in no particular order but they are all super good!

Cafe Telegraph

Garnisongasse 7, 1090 Wien

Cafe Telegraph is a very cute coffee shop pretty much in the heart of Vienna. You can find a very nice seating both, outside and inside which makes it perfect for any season! On their menu you can find traditional breakfasts from all over the world such as an english breakfast with baked beans and sausages but also such as Shakshuka. Plus, this restaurant is great for all avocado lovers because they even have a certain part of their menu dedicated to avocados. Their you can find fancy items such as avocado pancakes! Definitely worth going their and trying out their super tasty menu!

Ramasuri/ Drechsler

Linke Wienzeile 22, 1060 Wien

Both of these are super cute! Why did I put them both in one bullet point? They are both part of the same group of restaurants and have pretty much the same breakfast menu! Ramasuri is located very close to the Danube canal while Cafe Drechsler is close to the famous Naschmarkt. What I like most from the menu? definitely the pancakes (so fluffy omg) and the avocado toast. It’s one of the best in town! And also, their service is so super friendly. Always a good choice going there!

Babula

Heinestraße 15, 1020 Wien

Babula is a pretty new hotel. But Babula also is breakfast heaven. Not only do they have such a nice service and interior but they have super tasty and pretty looking (!!) breakfast too. Their menu is creative but still has all the basics covered. So you can find beet root porridge but also French toast and eggs Benedict. Moreover, they have adorable looking drinks such as a pink latte. Just wow.

Motto am Fluss

Franz-Josefs-Kai 2 EG, 1010 Wien

This one is very popular among the Viennese. This café has one of the nicest location in Vienna. it is located on a ship ( which stands still al year) right on the Danube canal. Always booked out, so you need to make a reservation. They have a rather small breakfast menu but it’s delish! Just be aware, that on the weekend, when there are a lot of people, you might need to wait a little longer!

Café Marché

Währinger Str. 6-8, 1090 Wien

I feel like this is a rather secret spot. It is also pretty much in the heart of Vienna, and in my opinion the cutest cafe in Vienna. They only have very few seats, both inside and outdoors, which makes it super cute and special. I believe that they have THE BEST AVO TOAST in entire Vienna. I absolutely love it. Also their coffee and coffee art is amazing there. Plus, what’s super cute is that they always have freshly baked treats.

Klyo

Uraniastraße 1, 1010 Wien

Klyo is a pretty popular restaurant in Vienna. It is located in the Urania, an observatory in the middle of Vienna, which is right next to the Danube river. You have a super nice view from there in in summer you can even enjoy your break on their terrace. This one, especially on Sundays, is always booked out so make sure to reserve a table ahead of time! My favourite breakfast item? The scrambled egg with the bread. This freshly toasted bread is a pure dream. You cannot get enough of that!

Mae Aurel

Salzgries 3, 1010 Wien

This spot is rather new in town but amazing. They serve all day breakfast, which is not your average breakfast menu. You can get pancakes with caramelised banana and bacon, Toasted sourdough with beet hummus and avocado or eggs Benedict all day long. And what’s a bonus there: the drinks are heavenly and so creative. Perfect for a nice brunch with your friends. Mae Aurel is also located in the heart of Vienna.

Ulrich & Erich

Sankt-Ulrichs-Platz 1, 1070 Wien
Neustiftgasse 27, 1070 Wien

These two coffees are also super duper cute. They are in the seventh district and right next to each other. They also are part of the same group. Very similar, but still a little bit different. I feel like the breakfast menu from Erich is a bit more extra and the one from Ulrich a bit more regular. But honestly, I love them both. The area around them also has super cute and nice shops, which are all a bit special. Definitely worth visiting.

Café Himmelblau

Kutschkergasse 36, 1180 Wien

If you’d ask my mom what her favourite breakfast spot in Vienna was, shed probably tell you that it is Café Himmelblau. No wonder. I have never had a bad experience when going there. The service also is super friendly, the location super cute since it is located in the middle of a market in the 18th district, and the food is a dream. It is not a super fancy breakfast menu, more typical Viennese but you do not want anything else or more when going there. This, is ALWAYS a good choice and almost always completely fully booked – no matter if it is during the week or on the weekends. A super good tip!

Superfood Deli

This place is very popular amongst the young. It serves super tasty and ice cold smoothie bowls with a side of amazing avocado toast, coffees and smoothies. You can, of course, enjoy them all day long either indoor or outdoors, or also to go! Their menu is completely vegan and organic but it also comes with a price. If you decide that you want to bring their breakfast home, you can also purchase their açai pads and make an açai bowl at home. Still, theirs is unbeatable I believe. The best açai bowl in Vienna!

Karma Food

Ausstellungsstraße 63, 1020 Wien

How to describe this best? Cute. Tasty. Super friendly. Karma food also serves food which is mostly organic, healthy, and vegetarian or vegan. Although you can find some items with meat products on their menu, the most part is plant based. But don’t think this is boring or anyhow not tasty. Because that would be a huge lie. Their food is AMAZING. So fresh and flavourful. And let me tell you, if you go there, you NEED to try their banana bread! Amazing. Plus, you get some of my favourite bars, Lini´s bites, there!

Joseph Brot

Last one on that list, but definitely not least, Joseph Brot. As the name says (Brot = bread), this actually is a bakery. They have lots of different and super tasty breads with all organic ingredients. You can get their bread and enjoy it at home or you can simply have breakfast there. This photo does not quite do it justice, but their breakfast is amazing. And I love that it is all organic and mostly regional.

These are my absolute favourite breakfast spots in town. I need to say, I have not tried every single one yet but I probably will, and add some to that list. I hope that this helps you the next time you wonder where to go and have brunch!

Ultra Green Pesto Salad with Burrata

All the healthy greens, in an insanely delicious pesto dressing topped with a dreamy creamy burrata. Oh yes. Healthy eating made tasty. You get your vitamin fix in while still enjoying all of that creaminess from the burrata cheese. Pure goodness.

I know that many of us are now wanting to become healthier for summer. And also, with the nice and warm temperatures we are craving food for which we do not have to heat up the oven or a pan, that is super quick and rather light. Because who loves standing in the kitchen for ages when the sun outside is so nice?

This salad is the perfect dish for such occasions. Do not be afraid by the word salad. It is not a boring one that won’t fill you up. It is full of so many nutrients, different veggies, cheese and the pesto dressing takes it next level. Nothing with boringness!

What is pesto?

Pesto is a sauce that originates in Italy. It most of the time is used for pasta dishes. Traditionally the pasta to make it with are trofie. Also, they add in some small pieces of potato. Honestly, if you have never tried and are afraid, I can tell you: don’t be. It tastes at least as good as tomato sauce if not better!

What is in pesto?

The ingredient list for pesto is very short. The main ingredient is basil. That gives it the colour and the amazing taste. As important: pine nuts. Not to confuse with peanuts. Oftentimes instead of pine nuts, other nuts are used, to make it cheaper, but the taste just is not the same. At all. Besides basil and pine nuts we need olive oil and parmesan cheese. This is the classic pesto. And this is the best way you can make pesto There are oil-free, and cheese-free versions out there, but if you do tolerate all of the ingredients I would recommend you use them.

Is pesto healthy?

I would say so. It has a little cheese, which is not necessarily the healthiest but all the other ingredients are pretty healthy. Basil is packed with vitamins and nutrients. Pine nuts and olive oil contain a good amount of healthy fats and minerals as well. Just be aware that pesto, because of its rather high fat content is also rather high in calories.

What else is in the salad?

Well, of course, a base: the salad. What works best here, is a mixed salad but you could also long for lambs lettuce, spinach or iceberg salad if you prefer. Besides that, we have a ton of different greens. Cucumber, for freshness, zucchini for crunch, peas, for that spring feeling, avocado, because we ain’t have a salad without avocado, and spring onions for the finishing touch. To add a nice touch to the taste, we are also adding some fresh herbs, mint and basil to be exact.

Does the salad work for meal prep?

A hundred percent, yes! Just make sure to pack everything separately. So salad and veggies in one box, dressing in an extra box, and the burrata in another box. It lasts in the fridge for 2-3 days. When wanting to have it, just mix everything through and enjoy!

Ultra Green Pesto Salad with Burrata

A perfect light summer salad, that is everything else than boring. Healthy but tasty and filling!

Prep Time 15 Minuten

What you will need

  • 6 handful mixed greens
  • 2 zucchini
  • 1 cucumber
  • 150 g peas
  • 3 spring onion
  • 1/2 handful mint and basil
  • 1 avocado
  • 1 burrata 1 large one or two small ones
  • 4 tbsp sesame seeds optional

For the pesto dressing:

  • 1 handful basil
  • 30 g parmesan cheese cut into smaller pieces
  • 30 g pine nuts
  • 3 tbsp olive oil
  • 2 tbsp olive oil or water (optional to thin out)
  • some bread to serve

How to

  1. Peel the zucchini into thin strips (lengthwise) and cut them in half (in width). Cut the cucumber into small slices. Boil the peas in boiling water for about 4 minutes. Cut the spring onions into small rings. Add all of those into a large bowl along with the mixed greens.

  2. In a food processor finely mince the basil and pine nuts. Add the olive oil and the parmesan and a sprinkle of sea salt. Blend until you have reached a smooth consistency. If you prefer your pesto on the thinner side, add another 2 tbsp of water or olive oil and mix again.

  3. Toss the salad and veggies in the dressing and divide onto four bowls. Cut the avocado in quarters. Put the sesame seeds on a plate and dip one side of the cut up avocado quarters onto them. This adds a really nice look to them. Add one quarter to each bowl.

  4. Cut the burrata into 4 and also divide this onto the bowls.

  5. Serve with some fresh bread !
