A Healthy Morning Routine

It’s early, our bed is still so comfy, we just wanna stay in a little longer. Maybe check our phones for the latest posts on IG or if we have gotten any messages, mails or snaps. It is already hard enough to get out of bed and now we should also have a healthy morning routine? Why???

I know that not everyone is an early bird. That partially lies in our genes. Still, mornings are the start of a new day. Meaning they set the foundation of the day. Mornings have such a big impact on the way the remaining day will be. If you start it productively, you will want to be productive for the rest of your day. If you do not believe me try it out.

With this blog post I do not want to tell you what you have to do, or the only way that you will have an amazing day is if you stick to this routine. By no means I am trying to do that. I want to share the tipps and tricks with you that have helped me a lot to have a healthy, not stressful, productive and nice morning. They should be more of a guideline of what can help you if you are struggling to have a peaceful and healthy morning.

Don’t hit snooze

This might be the hardest one to start with, I know. More than half hit the snooze button at least once, and more than a third hit it three times. While it is very nice to stay in bed a little (or a lot) longer, it is not very good for us. Hitting the snooze button messes with our sleep cycle. The first time it rings, we wake up. Whenever we hit snooze our body thinks it has time to rest and with every time hitting the snooze it actually has a harder time waking up and getting up (this has something to do with the REM and NREM sleep, which I do not want to go into more detail but you can read it here). So getting up the first time you hear the alarm does not only safe you time in your morning but it also is healthier for your body.

Read & don’t look on your phone

Is your alarm on your phone? If the answer is yes, then you will probably be very likely to check what has been going on in the past hours as soon as you stop your alarm. But this honestly is not a very good start into the day. Oftentimes, the first thing you see or the first piece of information you receive in the morning is negative. Maybe it is because of a negative event, which a newspaper wrote about or you saw a post somewhere and now feel you have been missing out on something. I mean think of it. If the first thing you experience in a day is negative, how will this set up your mood for the remaining day. I feel like, straight after waking up, our mind is still very vulnerable and therefore easily influenced by bad news because we still are tired and do not have the energy to stay above it or not let it get close to us.

Try reading a few pages of a book instead of checking your phone right away. This way you can stay in bed a little longer (but you are awake, because you did not hit snooze) and you start the day educating yourself. This does not have to be much. Even 10 minutes do just fine. I always enjoy reading more scientific book in the morning from which I can learn something. By reading a few pages of a book, I have new information and knowledge that I can use in this day.

Make your bed

„If you want to change the world, start by making your bed“. I have heard this sentence a few years ago in a speech from an admiral. The meaning and power behind it is tremendous. Of course, this does not only apply if you want to change the world, but if you want to be productive or plan to achieve something big. We always have to start out small. By having this one simple task done every morning, we have feel a little proud of ourselves. And this pride and feeling of accomplishment, encourages us to do many other tasks this day. So one fulfilled task turns into many fulfilled tasks.

Workout or stretch

To be fair, not everyone is a morning workout person. But working out in the morning is something worth trying out. Why is this so beneficial in the morning? In my blog post about „Why working out is more than getting in shape“ you can read about various benefits working out has on our physical and mental wellbeing. But what I think is amazing about working out in the morning is what it does to you for the rest of your day. It gives you energy, makes you happier (and gives you a happier and more optimistic mindset), and boosts your creativity. Considering this, it is amazing what it can change throughout the rest of your day. Each day, we make thousands of decisions. Conscious and unconscious. And whether you are happy, creative and energised has an enormous influence on these decisions. More than you think it does. So working out in the morning has the power to change the way your day will be.
Plus, it is similar to the task of making your bed, you will be proud that you have already accomplished something in the morning and will be encouraged to do more throughout the rest of the day. You do not have to do an hour long workout. Just 15 or 20 minutes will make you feel as if you have done something good for yourself.

Meditate

This is something very important to me and it can actually change the way I see the day. For me, taking 5 minutes to meditate, helps me SO MUCH to get my thoughts in order. When meditating, I can set my focus and decide on how I want to make the day be like. It helps me to remind myself of things that are important to me, to see a chance in every loss or failure and to accept certain things as they are. Plus, or most importantly it makes me be in peace with myself, which is essential (to me!) for having a positive day.

If you have never tried out meditation before, please do not except all of this coming the first time you practice it. This needs time and practice. Nothing comes overnight. But it is worth practicing.

Plan the day

These are both things I only started in Quarantine. But now they are an essential part of my morning routine. Why?

Planing the day out can help you get more organised throughout the whole day. Always in the mornings I like to write down what I would like to do or get done this day On a piece of paper or a note-book. I can tick everything I have done off. This does not only give one a nice and proud feeling of having something accomplished and being productive, but it also helps to get an overview of what you want to do that day. Otherwise you may start the day with a thousand things in your head you want to do and by the time you leave the house you feel super stressed because you do not want to forget about anything or are not sure if you can get everything done. By simply taking 3 minutes and writing everything down, you will know exactly what you want/ need to do, your do not forget about anything and you do not have to stress out. It is such a simple habit that has such a big impact.

Journal

Another thing to do that takes time? Yes! But seriously, this might take 2 minutes, if even, and it has the power to change the whole way your day is going to be.

Try to write down 3 things you are grateful for, 1 good gesture you want to do to someone else today and a positive self affirmation. You might wonder what this helps, and I understand you doubt. Focusing on good things in the morning, primes you for good things throughout the day. If you take just a little amount of time in the morning to make you brain concentrate on the positive aspects of life, it will automatically look out for the more positive things throughout the rest of the day (I have learnt this in the book „the happiness advantage“ by Shawn Achor). And it actually works wonders. Even after the first time doing it! But of course, the longer you practice it, the more beneficial it is!

Healthy breakfast & Hydrate

Last tip on my morning routine list is start your day with a healthy breakfast. When you start your day with a healthy breakfast you are actually going to be more likely to stay healthy through the rest of your day. First of all this is because if you know you started your day healthy, you do not want to make the rest of the day unhealthy. Additionally, when your first meal of the day is full of all the nutrients your body needs, you will also be far less likely to have cravings throughout the rest of the day! Drinking water also is very important in the morning because your body has been without any for several hours. Probably somewhere between 6-9. To rehydrate it, it is very important to drink water when you wake up. This will also get your metabolism going.

Conclusion

Getting up even a little bit earlier is not easy. But once you are into it, you know how worth it it is! When you stick to a healthy morning routine you will feel the impact it has on your whole day immediately and you will be surprised by how immense they are.

Just one really important note:

If you have been always getting up super last minute lately, do not try to get up an hour earlier from one day to the other to fit everything of the list below in. You will be tired and frustrated after a week. Start with incorporating one thing at a time into your daily routine. That way you can slowly adapt and change your habits. Remember: change needs time!

So now you know a lot on how to get the most out of your mornings and it solely is up to you to stick to it or not! Anyway, I hope that I could give you some inspiration to start your day the best way you can!

Black Quinoa Teriyaki Burger (vegan)

Burgers; the ultimate comfort and fat food. The embodiment of unhealthy. But can you make it healthy? I can tell you, yes you can! This is a healthy, plant based and incredibly delicious version of the most popular fast food. A healthy black quinoa teriyaki burger.

Why aren’t burgers healthy?

First things first. We always hear burgers aren’t healthy. But what exactly is it that is not healthy? A lot of people think it is the bun. Because bread has the reputation to be unhealthy. But I need to disappoint you if you were believing that because this is not true. Bread is a good source of carbohydrates and vitamins. Also it has some protein and little fat and sugar (although store bought burger buns may have a lot of sugar, so keep an eye out for that). Sure, if you choose a wholewheat burger bun it would be healthier. But this is not what I am referring to. The unhealthy parts of most burgers are the meat, cheese, bacon and sometimes even sauces.

The meat oftentimes is not healthy because usually fatty meat is used. This adds more flavour but also more calories and more fat. Bacon goes along the same way. Bacon mainly is made of fat and sodium. Which both is not healthy for us. And of course the cheese. Sure, cheese does have protein but again, the fat is the less healthy macronutrient here. Do not get me wrong, fat is not necessarily bad for our bodies and we do need it to live but the amount which is in one burger is not really healthy anymore.

The when I said that sauces aren’t always healthy, this may have surprised you. Why , you think? In most burgers you can find mayonnaise. High quality mayonnaise is made out of oil and egg yolk. This is not unhealthy when consumed in right amounts. It is high in calories but those calories have a nutritional value. But most store bough mayonnaises have hundreds of other ingredients in them. Most of which you cannot pronounce. This is not very good for our bodies. To summarise: high quality mayonnaise can be healthy when consumed in right amounts, highly processed ones are not good for us.
But mayonnaise isn’t the only sauce. In many other sauces there is a lot of butter or sugar added to get more flavour. Butter and sugar both, I think most people are aware of that, are not great sources of nutrients. While oftentimes we assume that the sauces do not make much of a difference, they actually do. 2-3 tablespoons of high calorie sauces can quickly add up to 200-300 kcal. So be aware the next time you choose it.

About balance

But please, after reading about the nutritional information about burgers, do not say that you will not have them again. Having a good and super tasty burger once in a while is more than alright. Not stressing out about it too much also is important for a healthy relationship with food. Just be aware that this is not the ideal meal to nourish your body and it should be consumed in moderation if you want to eat a healthy diet.

How to make it healthy

I think we now have talked enough about why it is not healthy. So let’s focus on making it healthy. This comes down to super easy swaps. For example instead of taking a beef patty you can substitute it for a plant based one. Here we are making one out of black quinoa from Reishunger (you can get it here). But you can also long for one made out of beans of ground turkey for example. Instead of bacon we are using mushrooms. May sound a little boring at first, but once you’ll try it out, you’ll be convinced. Instead of store bought low quality mayonnaise, you can use a homemade one. Or you can use ketchup without added sugar. If that’s too boring for you, I am sure you are going to find sauces at the supermarket that do not have a lot of added sugar. Last but not least, we probably need something else. Avocado. Don’t be fooled thinking that this is just another ago trend because it isn’t. Avocado in your burger is life changing.

How to build the perfect burger:

This is a very important part. This can change your burger 180°. No but honestly you can ruin so much when you build it the wrong way.

  1. toast your bun. This crispness it up and adds a lot of flavour. No matter whether you are doing this in a toaster of a pan, this step is essential.
  2. Sauce. Right on top of the bun that is the first layer, we are adding a sauce. Ketchup, homemade mayonnaise, barbecue sauce. Whatever.
  3. Greens. They won’t change much of the taste but much of the vitamins you get in. Also it is important to add a layer of greens before adding something else because when you add the patty or something else like tomatoes or cucumber right onto the bun it will get soggy.
  4. The patty. Pretty self-explanatory.
  5. Bacon/Mushrooms/other add ins. they have a good flat surface to lay on.
  6. Soggy veggies. Now you can add tomatoes, cucumber, or anything else containing a lot of water. It s not next to a bun so it won’t turn anything soggy.
  7. Avocado/ sauces. To finish it up, a nice layer of sauce or smashed avocado to add extra flavour and consistency.
  8. the top bun. Again, I would recommend to toast it.

The Quinoa Patty

Making a burger out of quinoa may sound a little weird but it is so good and so easy. The black quinoa adds an extra bit of flavour and depth to it. You can find black quinoa at Reishunger.com . It is important to completely cook the quinoa through until it has absorbed all of the liquid. This way it will give a perfectly mushy consistency when blending. What also is important is the seasoning. Since it does not have as a strong flavour itself as meat does, we need to season it well. Here we are doing it with a super simple teriyaki sauce.

Meal prep and serving:

You can batch make the quinoa patties and freeze them before cooking. Whenever you wanna have one, let them thaw a little bit and fry them up in a pan.
The burgers are best served with some homemade fries or sweet potato fries or just a simple little salad.

Black Quinoa Teriyaki Burgers

Healthy Plant Based Burgers. A ton of flavor. A ton of goodness. Pretty easy, pretty good.

What you will need

  • 100 g quinoa
  • 5 tbsp soy sauce
  • 1.5 tbsp cornstarch
  • 1 tsp sriracha or hot sauce
  • 1 tbsp maple syrup
  • 2 tbsp oil
  • 200 g mushrooms
  • 1/2-1 Avocado
  • 2 burger buns
  • a handful greens

For the vegan mayonaise (makes about 8 servings)

  • 125 ml soy milk can use any plant based milk alternative
  • 1 tbsp vinegar
  • 200 ml oil
  • 1 tsp mustard
  • 1 tsp salt

How to

  1. Add the quinoa to a pot along with 200 ml of water. Bring to a boil and then reduce to a simmer. Let simmer for about 10-15 minutes until all water is absorbed completely.

  2. In the meantime make the vegan mayo. Add the milk alternative, oil, salt and vinegar into a tall container. Take an immersion/ hand blender and place it on the very bottom. Turn the speed onto low and pull it up in one go until you have reached the surface of the liquids. Keep blending until it begins to emulsify and becomes creamy. Add the mustard and continue to blend for about 1 minute until it if smooth and creamy. Place in the fridge.

  3. Slice the mushrooms into about 0,5 cm thick slices.

  4. In a small bowl combine the soy sauce, maple syrup, hot sauce and conrnstarch. Make sure there are no big lumps of cornstarch in the mixture.

  5. When the quinoa is done transfer it to a food processor. But make sure it has really absorbed all liquids, otherwise the burger patty will fall apart. Add about 2/3 of the teriyaki mixture to it and blend well. It should all stick together and form a big ball.

    Slightly flour your hands so they are dry. Divide the quinoa mixture into 2 and form them into patties. Do this by first rolling a ball in your hand and laying it on a flat surface. Then press it down with the palm of hand to make a flat surface.

  6. Heat up half of the oil in a pan. Sautée the mushrooms in there for about 3 minutes. reduce the heat and add the remaining teriyaki sauce.

  7. Mash the avocado. Half the burger buns and toats the bottom half.

  8. Heat up the remaining oil in another pan. Once hot add the quinoa patties and fry on each side for about 3-4 minutes.

  9. Once the bottom bun is toasted add a generous spread of mayonaise. Top it with some salad. Add the black quinoa patty on top. Then theh mushrooms and some sliced cucumber if using. Lastly, add the mashed avocado and the top half of the burger bun. Serve and enjoy!

Healthy Rhubarb Crumble Cake

A nice, fluffy and juice layer of cake underneath a fresh and sweet layer of rhubarb topped with a healthy and crispy almond oat crumble. Is there anything else you want? Maybe having this healthy rhubarb crumble cake with a nice cup of coffee? you better don’t say no!

Why crumble cake?

Crumble cakes are one of my favourites. I love the different tastes and textures in each layer and the combination of them melting together in my mouth. Also, I think they are very fun to make and they always have something fresh in them with the fruits. I already have one crumble cake on my blog, an apple crumble cake, and it is so good! In this recipe I just added a spring twist on it instead of a fall one! Imagine this cake as a mix between my healthy apple crumble cake and my rhubarb compote!

I had my first crumble cake about 2 years ago. It actually also was a rhubarb one, and it was amazing! I can remember it very well because it was at a small café in Dublin where they had soo many different cakes! I shared one piece with my friends and let me tell you, it was amazing! So when I saw all the fresh rhubarb at the farmers market the other day, I decided to try to recreate it, but make it healthier. And let me tell you, I did not expect it to turn out THAT GOOD. I thought it would be fine but when I tried the first slice, I just wanted to eat the whole tray before photographing it. It is insane!! And really, it does not taste healthy or boring at all.

The layers:

The first layer is kind of a biscuit layer but a little healthier. It essentially comes down to only 5 ingredients! Who thought that you could make a cake with 4 ingredients only? Eggs, maple syrup, apple sauce (Apfelmuß in German, because so many asked me what this was), wholegrain flour, baking powder. That is it. The egg whites are separated from the yolks and whipped up until super fluffy and stiff. This makes the cake really airy. The applesauce makes it really juicy and the maple syrup makes it sweet. Both are combined with the egg yolk. Afterwards, the flour and baking powder as well as the egg whites are folded in. This need to be pre-baked a little.

The second, and middle layer is a fruit layer. This is even easier than the first one. You do not even need to peel the rhubarb (if you buy organic one preferably), just cut it into smaller pieces. Add it to a pot with some lemon juice and a date to sweeten it up (could use sugar or honey as well) and a splash of water. The heating up helps it to get a little softer and absorb the flavour of the lemon and date. Then this is added on top of the biscuit layer.

The last but definitely not least layer is the crumble. Contrary to conventional crumbles it is not based of sugar, butter and flour. NO. The base are oats and almonds. I like to use sliced ones but you could also just chop the up a little. Together with some chia seeds (optional) and coconut sugar (again, another sweetener works fine too, just a liquid one will not have the same crunch effect, so I would recommend substituting it out for white or brown sugar), and a little coconut oil it creates a sticky consistency. This on top of the fruit just tastes bomb. It is kind of like granola just on top of a cake. So good.

When to enjoy best?

So honestly, you are going to want to eat this at every time of the day. And basically you could. It would even work as a nice breakfast. It has about than 2.6g fibre, 3.3g of protein, and 14.2g of carbohydrates per slice. So having two slices for breakfast with some yoghurt on top wouldn’t be unhealthy. But this also makes a great snack or dessert. Even when having guests over this will be amazing! Or take it to a picnic?

Substitutions

If you do not like rhubarb at all, but still want a crumble cake, you can also substitute them out for berries, such as strawberries. It really is versatile but I believe that the little sour taste of the rhubarb just goes really well with the sweetness of the cake. Instead of whole grain flour, you could use plain one, and instead of the maple syrup you can totally go for honey, agave of coconut sugar. If you do not have almonds on hand, you can use any other nuts as well!

Healthy Rhubarb Crumble Cake

The best cake you´ll ever have! Fluffly and juice biscuit, topped with fresh and tangy rhubarb and a healthy and crispy crumble! SO good.

What you will need

For the first layer:

  • 2 eggs
  • 100 g unsweetend apple sauce (Apfelmuß in Deutsch)
  • 60 g Maple syrup agave, honey or sugar work too!
  • 125 g wholegrain flour normal flour is fine as well
  • 1 tsp baking powder

For the second layer:

  • 250 g Rhubarb
  • 1/2 lemon, juiced
  • 1 large date (or 2 small ones, about 30g)
  • a splash of water

For the thrid layer:

  • 50 g oats
  • 25 g sliced almonds or any nuts
  • 1 tbsp chia seeds (optional)
  • 1 tbsp coconut sugar (or any other sweetener of choice)
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil

How to

  1. Preheat the oven to 180°C.

    For the first layer seperate the egg yolks from the whites. Whip the whites until fluffy and stiff. In the meantime combine the yolks with the apple sauce and maple syrup. Combine flour and baking powder.

    Once the egg whites are stiff gently fold them under the yolk mixture, along with the flour, one at a time. When combined pour it onto a baking tray lined with parchment paper. Bake for 8 minutes.

  2. In the meantime cut the ends of the rhubarb and wash it gently. Cut it into about 3cm (1 inch) sized pieces. Take the pit out of the date and chop it finely. Add both to a pot along with the lemon juice and a splash of water (about 2 tbsp). Bring it to a boil and simmer until the first layer is done baking.

  3. While the rhubarb is simmering, combine the oats, nuts and seeds in a bowl. Melt the coconut oil and combine with the sugar and vanilla. Pour it over the mixture and combine everything well. It should all stick together a bit.

  4. When the frist layer is done baking take it out of the oven. Add the rhubarb evenly on top and sprinkle with the crumble. Bake for another 7-10 minutes.

  5. Take out of the oven and let cool. Serve with some ice cream, whipped cream or a dollop of yoghurt and enjoy!

Italian Tomato and Eggplant Stew with fried Halloumi and Pita

Fresh and sweet tomatoes with soft and slightly mushy eggplant plus tangy capers and olives. Oh, and not to forget about the good herbs and the Goey fried halloumi with fresh pita. Hard not to get hungry when reading this right?!

To be honest I have never had Halloumi until a few months ago. I spent a day with my besties in Bratislava and we were so tired after this super long day and went into a super cute little café. We just ordered some small snack like avocado toast and a greek bowl and in this bowl there was halloumi. And let me tell you, I instantly loved it. Maybe it is because I am a huge salt-addict (I know, that’s not very healthy but I just love it). Halloumi is pretty salty but tbh, that makes it real good right?

What goes well with Halloumi?

So I believe that everything that is with Mediterranean flavours goes super well with it! And everything with lots of herbs because herbs + halloumi is just the best combination. It tastes really yum with tomatoes, cucumber, olives, eggplant (=aubergine). Also, this might sound a little weird but believe me, it is also really good with oriental things like curry, hummus, falafel. Yes curry and halloumi goes with with each other. Might sound a little off but it is really good. If you want another halloumi recipe you can check out my Honey Eggplant and Chickpea Salad with Grilled Halloumi because that’s also really good!

Why Eggplant & Tomato?

Well because this combination with Halloumi is just so good. And Eggplant works so well in stews because it has a rather soft texture and makes it a little creamy-ish. Also it adds such a nice flavour. And tomatoes are always good. Especially in sauces or stews they are a must! They kind of build a „base“ for it and makes it saucy. And they are coming into season, so why not?

Fresh or canned tomatoes?

This really is up to you. They both work perfectly fine. If they are in season and you have them on hand, I would always recommend using fresh produce! But if you used canned ones make sure they are not all puréed. The best is if you mix them both. So use some fresh ones and some puréed sauce. That way you get some texture and sauciness. All the good things in it.

30-minute meal

You thought this couldn’t get any better? Well, it can! Because this comes together in less than 30 minutes. I know, so easy. Which means, it is perfect for a quick and healthy lunch or a cozy and simple dinner. Also, making it is not complicated at all! Actually the opposite is the case. It essentially comes down to chopping the ingredients and throwing them all together into a pot plus frying the halloumi in an extra pan. Yes, that simple.

What to have it with

Pita is my favourite go-to here because it is perfect to soak up the sauce and it has such a nice texture and taste. But if you do not like it or are intolerant to gluten or cannot find a good one you can also substitute it out for other things. Something like Quinoa, Pasta, Couscous or Rice would also work really well here. If you want to on the lighter side, you can also just serve it with a salad, which also is really good!

This is such a tasty meal for whenever you ar craving something comforting but healthy. Comes together really quick, is super family friendly, has lots of vitamins (& cheese ofc) and tastes amazing!

Italian Tomato and Eggplant Stew with fried Halloumi and Pita

Healthy, comforting and so full of flavor. A 30-minute, super quick and good weeknight dish!

What you will need

  • 1 red onion
  • 1 tbsp Olive Oil
  • 650 g Eggplant about 2 medium sized ones
  • 300 g tomatoes fresh ones (best is a mxi of large ones and cherry tomatoes)
  • 1 tbsp tomato paste
  • 200 g canned tomatoes (puréed)
  • 2 tbsp rosemary
  • 2 tbsp oregano
  • juice from 1/2 lemon
  • 60 g Capers about 3-4 tbsp
  • 40 g Olives about 3 tbsp, sliced olives
  • 300 g Halloumi
  • 2 Pita

How to

  1. Finely dice the onion. Heat up the olive oil in a pan and add the onion when hot. Sautée for about 2 minutes until fragnant.

    In the meantime chop the eggplant and tomatoes into about 2 cm sized chunks or half the cherry tomatoes, if using. Add them into the pan and sautée for another 2 minutes on high heat. Reduce the heat to medium high and stir in the tomato paste and sauce and the herbs. Let simmer for 10 minutes and then add in the juice from half a lemon, the capers, olives, some freshly cracked black pepper and some salt. Let simmer for another 10 minutes.

    While this is simmering slice the halloumi into about 1/2 cam thick slices. Place them on a grill or a preheated (grill)pan and fry them on medium high heat for about 3 minutes on each side until golden brown.

    Heat up the Pita in the oven.

    When everything is ready add the stew onto the plates and place the fried halloumi on top. Serve with the fresh pita and enjoy!
