My January Top 5

New year, new me! Not quite to be honest – more like new year, same me. In general I am not a huge fan of New Years resolutions because why do we need to wait for a certain day or date to change something (that in most cases we change to better our lives)? If you genuinely want to change something – do it now. Why wait and only waste time? Anyway, while the month of January gets so much attention for changes that we want to make, some things stay the same – just as my January top 5, which were highly requested and now are here.

To be honest, I did not actually plan on making January Top 5 – that also is the reason they are coming so late – but you really really wanted them so that’s why I had to make them 🙂 ! A food of the month, a recipe you NEED to try, a workout that will make you feel good, a product that you do not want to miss out on and an inspiration that may be something for you!

Food of the month: quinoa

Quinoa is a superstar. I can remember the first time it came up and everyone was celebrating it as a health trend but surprisingly, unlike many other health trends, it really tastes good. Quinoa actually is an ancient grain, which its origin in South America, which has already been eaten about 3000-4000 years ago.

The part you can eat from the plant actually are just the seeds, which are cooked in water, just like rice, which makes it very easy to cook swell. But why is it celebrating as being that healthy? Quinoa has a great nutritional value, different from many other grains. Per 100g it has about 65g of carbohydrates. pretty much the same as wholegrain pasta and a bit less than white rice, 7g of fibre, which is great for your digestion, compared to 5g in whole-wheat spaghetti and 1.3 in white rice. And probably the best: it has 14g (!) of protein compared to about 7 in rice or (whole-wheat) pasta. This is pretty much twice the amount!

Since Veganuary is a big thing again this year, I know it can be challenging to get enough plant based protein if the usual source of protein is meat, dairy or eggs. But getting enough plant based protein actually is not that challenging. Already 100g of quinoa provide 14g of protein, which is a decent amount. Furthermore, quinoa is naturally gluten free and loaded with minerals & vitamins such as Iron, Magnesium and Zinc.

Besides all the nutritional and health benefits, quinoa is SO versatile and can be SO delicious! You can use it as a side dish, as a base in buddha bowls, throw it into salads or wraps for more carbs and fibre, make burgers out of it, breakfasts, and so on. The options are pretty much endless because Quinoa has a pretty neutral taste.

On the blog you can find several recipes including quinoa! My favourites are the Black Quinoa and Teriyaki Burger and the quinoa breakfast bowl with herbed Tahini and there are more to come this month!

Recipe of the month – Cinnamon Roll French Toast Sticks

This recipe is unreal. I can only tell you so much. Think about the cinnamony taste of a fresh cinnamon roll and then the crispy on the outside and soft on the inside kind of bite when you are having a French toast. This recipe is both of them combined.

It really is easy to make, easy to eat, and easy to crave 🙂 You basically just make a regular French toast and the roll it in cinnamon – coconut sugar to finish it up, which really is a game changer. When you serve it with yoghurt and frozen, stewed berries, you can dip it into the berries and it just is heaven.

Perfect for a Sunday breakfast or brunch in bed, when friends are over, a quick lunch or breakfast-for-dinner situation, a delicious dessert or just a great meal to make when you have leftover bread, that you do not want to go bad.

Workout of the month – trainandtone

Train and Tone, which originally was Pop Pilates is a fitness studio, which has been founded by Mariana and David, two siblings, who share the same passion for fitness and good music. In their (mostly body weight) workouts they combine these two aspects to create a unique workout experience.

The first time I tried them out I went to their studio in the fourth district about a year ago. It was super small and so nice. From the entrance into the studio, throughout the whole class until the end, when you leave you just feel happy and are surrounded by good vibes, good music and happy instructors. That is what makes Train and Tone so special, the love and passion behind every single detail in their workout and in their studios.

Then came lockdown but Mariana and David only got more inventive and actually were one of the first ones who started doing virtuell, real time, live workout classes. And have kept going ever since then. And they have improved. You now can choose from 7 trainers and 7 classes. The classes all focus on something different and are suitable for any fitness level since the trainer gives different variations for each exercise.

The classes are 9€ each or 8€ if bought in a block of ten and happen during zoom! Really great workout fun, mostly strength focused rather than HIT and I promise you – you’ll feel the burn afterwards!

Product of the month – Very Nice Studio Collection

Very Nice Studio is a graphic design studio by two very nice ladies. Julia & Vanessa’s goal is to turn brands into friends with unique and eye catching branding. They do not only create stunning designs for brands but also their Instagram page ( @verynice.studio ) where they share inspirational and amazingly designs quotes, thoughts and tools on a daily basis.

In December they launched their first collection in the very nice shop, which is made up of shirts, hoodies, sweatpants, and some accessories. And they are amazing. I basically live in them, not kidding. Made from organic and recycled materials. Soso super soft!

On the outside they have got quotes, graphics or just words printed, which make them look really cool and unique. You can get them with three themes: 24/7 happy hour, good days ahead or enjoy/ panic. I have got the hoodie in 24/7 happy hour and the shirt in happy hour. And these themes are not just themes but they have a thought behind them. If you go check out the shop, you’ll find a little description for every single one plus some tips on how to implement them.

These cloths really are not just something to throw on, like a regular piece of clothing but they were designed and created with a thought, a mission, love and passion. Plus, they are incredibly comfortable to wear!

Inspiration of the month – the things you can only see when you slow down

The things you can only see when you slow down: how to be calm in a busy world.
Actually my dad gifted me this book for Christmas because he knew I needed it. I am a perfectionist, I always want to get everything done and I always want to be on top of things. But always doing something can be stressful, especially mentally. So this book came in perfect timing.

And no, this is not a self-care guide, not in the least. This book was written by the Korean Monk Heamin Sunim, who became popular through Facebook. There he gave his followers advice on life challenges and problems they faced. After years of giving advice he decided to sum it all up and write a book. And this book really is valuable. It does not tell you that you are doing everything right or that everything is beautiful but through quotes like „is the world that busy or is it your mind“ and mini essays it makes you think and reflect.

In his book he covers 8 different topics and has already inspired more than 3 million people worldwide with the wisdom about the importance of slowing down. Also included in the Times Top 10 bestsellers. Definitely worth a read if you feel overwhelmed, stressed, not at peace with yourself or the world or if you just want to reflect a bit.

I hope that these inspirations, ideas and things are a help for you to guide you through the month of January. I hope you are having an amazing start into the new year and may it be filled with happiness, gorgeous moments and lots of time with your favourite people.

Since many many of you are doing Veganuary this year, I decided to help you out a bit in order to make it a bit easier for you – so I created a FREE 1-week vegan mealplan for you with 24 DIFFERENT recipes for the whole week. Each day you’ll have a breakfast, a lunch and a dinner, plus there are 3 extra snack & sweet recipes in here too! A lot of the recipes are on the blog & insta already but there also are some EXCLUSIVE ones in there too!!

I have created this with the intention of helping you to have it as easy as possible to be going through Veganuary! There is a lot of time, love in passion in here, so I hope you will like it and it’ll help you! All recipes in here are created, cooked, photographed, edited and written by myself.

What’s Veganuary? 

Veganuary is a challenge, which has become very popular to be done in January. The main point of the challenge is to eat vegan for a whole month. No matter what your motive is, whether you want to take more care of the environment or animals, whether you want to improve your health or whether you just want to try out something new, it in any case is a fun challenge! 

Disclaimer:

While I am a super passionate cook, love to get creative and love to eat vegan food, I am not a nutritionist, not an expert and not a doctor. Completely or even just slightly changing your eating behaviour is a change for your body. If you consider converting to veganism in the longterm I recommend, you go check in with a doctor and/ or a nutritionist, so you are safe and not lacking any nutrients. 

Individual: 

In this mealplan you eat something different every day for every meal for a week. I am aware that this is a lot of cooking, but I created it like this, so you have a great variety to choose from. You do not need to strictly follow it, it should be more of a guideline/ inspiration. 

Also, please not that everyone is different, has a different body, a different level of activity, a different metabolism, different preferences and different genes. You may very likely need to eat more or less, depending on your hunger cues! So PLEASE listen to your body and eat whenever you are hungry or feeling like it! 

I hope that this guide will help you as an inspiration to cook and eat as healthy and as delicious plant based food as possible and that it will get you through January in a delicious way!

Not your average, super quick beetroot and couscous Kisir

Fluffy (not dry) couscous in a packed-with-flavor beetroot sauce, all tossed together with crunchy and fresh veggies and topped off with tangy, crumble feta cheese. Every bite is an explosion of flavours in your mouth, and every bite is pure enjoyment!

What is Kisir?

Kisir usually is a Turkish dish made from roasted red bell peppers and bulgur. The peppers are blended into a sauce and the bulgur is cooked with vegetable broth. The both then are tossed with different, chopped up vegetables and a marinade from lemon juice, pomegranate juice and olive oil.

What is special about this dish?

I am not even sure if I can call this Kisir because the only aspects we are keeping from Kisir is the sauce out of a roasted vegetable, that a grain is cooked in vegetable broth and that it both is mixed with chopped up vegetables.

Instead of bell peppers we are using beetroots. They are in season now, they are super nutritious, they are a flavour-bomb and they add a pretty colour :). Instead of bulgur we go for couscous because it is quicker and easier to make. And instead of only adding cucumber and tomatoes, we are upgrading our couscous and making it more international with spring onions, edamame beans and feta.

So, you can see it is pretty far from Kisir and at the same time really similar. And it needs to be said, it is at least as delicious, I promise!

Is this dish healthy?

Oh, yes! It is not only packed with flavour but also with many many nutrients. The star of the show, beetroot, is an extremely healthy, immune system boosting vegetable, with many many healthy benefits, If you are interested in it, you can check out my September Top 5 and learn more about it!

Besides the star, we also have many other small stars. Edamame, for example is not only super delicious, but also packed with protein and nutrients. Cucumber, vitamin loaded. Bell Pepper, fibre star. spring onions and the herbs also add another nutrient kick! So, there are many ingredients that will make you feel amazing!

And then we also have the couscous, which is a great source of carbohydrates, and when bought wholegrain also a great source of protein. The olive oil, which we are adding, also adds some healthy fats and the lemon some vitamin C!

How to make this dish?

Easiest thing ever. Because no-one wants to spend an hour cooking lunch when their tummy already is groaning. It essentially comes down to preparing the couscous, blending the beets with vegetable broth and oil, chopping the veggies and mixing everything! Yes, it is as easy as it sounds!

When and how to best have it?

It is great for a quick lunch, a leftover side for dinner but also as a delicious meal prep idea. You can store it very well in the fridge (the flavours will only get more intense) and have it the next day!

I love to serve it with some feta or goats cream cheese and some fresh herbs. If you are more on the meat side you could add some grilled chicken or if you are plant based, go ahead and add some chickpeas or vegan feta!

Not your average, super quick beetroot and couscous Kisir

a flavor packed, creamy (not dry) couscous in a beetroot sauce, tossed with fresh, crunchy veggies and topped with tangy feta. All ready in 15 minuntes!

What you will need

  • 300 g couscous
  • 600 ml vegetable broth
  • 2 rather small beets
  • 1/2 cucumber
  • 100 g edamame beens (cooked)
  • 2 spring onions
  • 1 bell pepper
  • 150 g feta
  • 1 tbsp parsley
  • 1 tbsp mint
  • 2 tsp honey
  • 1 tbsp olive oil
  • 1/2 lemon

How to

  1. Bring the vegetable broth to a boil. Take off the heat and add about 3 tbsp of it to a blender with the beets. Pour in the couscous to the rest and let it soak up the liquid and fluff.

  2. Chop up the cucumber and bell peppers into small (about 1cm sized) pieces. Finely slice the spring onions and chopp the herbs. Add them all to a large bowl. In a seperate bowl combine the olive oil, honey and lemon juice.

  3. When the couscous is done, add it to the bowl with the veggies, the beetroot sauce and olive oil mixture. Mix it through until the sauce has covered everything.

  4. Divide onto plates and crumble the feta on top. Serve with some fresh herbs and enjoy!

Super Easy 10 Minute Beetroot Latte (vegan)

If you now are thinking something similar to „what?? Beetroot latte?“, I know how you are feeling. I felt the same before I tried it for the first time. And really, it surprised me positively. If you like beetroot, and warm, comforting drinks, this is something for you!

What is special about this drink?

I think this entire drink is really special. To be honest, I am not a huge anything latte fan. When I drink my coffee, I like it short and without anything. Still, once in a while, I really like this drink. I feel like it gives me a lot of energy plus its super tasty!

So what is special? We have beetroot + coffee. If you never have had beetroot in a sweet dish, you have been missing out… Instead of just coffee and milk, we have beetroot, spices, coffee and milk. A fancy, fancy, healthy latte.

Is this drink healthy?

it definitely is! Since beetroot has a naturally, slightly sweet flavour to it, there is no need to add much sweetener. Plus, beets are an extremely healthy. In my September Top 5 I have shared lots of information about them, so you can go check that out if you are interested.

To just quickly summarise, they are really high in fibre, vitamin B6, C, manganese and potassium. It also has been shown that they are beneficial for overall health such as reducing blood sugar levels, cell function and the immune system. If you are a beetroot fan and want more beet recipes you can check out my beetroot pasta bake with goats cheese or the better than store-bought beetroot hummus!

Besides the star of the show we also have coffee in here, which has been shown to have several health benefits (as it may lower the risk of type 2 diabetes, cancer and boost longevity), when consumed in moderation. Then we also have cinnamon, which comes along a bunch of other health benefits and plant based milk.

How to make this drink?

This is so so easy. You need to start by heating up the milk with the cinnamon and cardamon. Then you blend about half of the milk with the beets, and foam the other half. To serve you pour both, the beet milk and the foamed milk into a cup and add a shot of espresso. That already is it! Really really simple!

When and how to best have it?

As this recipe already says, it works great with coffee, as a fancy drink! If you have some leftover milk, you can also add it to porridge’s, overnight oats, chia pudding, cereal or anything else you would add regular (plant based) milk to!

The Easiest 5 Minute Beetroot Latte (vegan)

Definitely not your regular latte but incredibly delicious, easy and healthy! A must make for everyone who likes to try out something new!

Servings 2 lattes

What you will need

  • 1 small beet (precooked)
  • 500 ml milk
  • 1 tsp cinnamon
  • 1/2 tsp cardamon
  • 2 shots espresso

How to

  1. Add the milk, cinnamon and cardamon to a pot and bring to a boil. Pour half of it into a food processor along with the beetroot and blend. Foam the other half, either in a foamer or in a pot.

  2. Into a mug pour the beetroot milk, the foamed milk and then the shot of espresso.

  3. Enjoy!
