Easy Peasy Rainbow Quinoa Salad with the Best Peanut Sauce

April 13, 2021 by katharina.kuehr Kommentar verfassen

Basically spring in a bowl. You have all the vibrant and colourful fruits and veggies you could wish for, plus some fluffy and tangy quinoa to fill you up and some fresh greens for even more vitamins. Oh, yeah, and not to forget about that sauce, which tastes like straight from heaven. What’s more, this is so incredibly easy to make and SO quick – you’ll want to make it every day!

Originally I shared the recipe in the Vegan What I Eat in a Day IGTV on Instagram. And you guys went nuts about it and wanted the recipe so you also are able to make it – so here you go, voilà. Tbh, I can very well understand you – this recipe IS really good. Sine then I think I have made this at least 4 or 5 times, it has become a staple that we make on repeat.

What is special about this dish?

What makes this so special is that you cannot really label it. It is no special cuisine, has no geographic origin or is typical for the food in a certain area or country. It is just a wild mix of flavours, colours and ingredients. It may seem a bit odd that we are throwing so many different things into a bowl, but don’t judge before you try. They all work together in perfect harmony and there’ll be an explosion of flavour in your mouth.

Besides, as already mentioned, this is like spring in a bowl. One the one hand side because of the way it looks. So many different colours and so many greens, just like nature is starting to bloom all the colours start to pop up at the side of the street. And on the other hand because it is so refreshing, so light, so easy – kind of just as spring is. If there is any time you should try this recipe, it is now.

Is this dish healthy?

Definitely!! I mean, if you think of a healthy meal isn’t something exactly like this what you’re thinking of? Probably. And yes, it really is very nutritious. Where should we start? Quinoa – it is a nutrient bomb. Super high fibre, super high protein and all the carbs you need to stay full and full of energy for the rest of the day. Plus, it is extremely high in minerals and vitamins and it’s super tasty.

Besides quinoa, our bowl is loaded with fruits and veggies. We have got corn, high in fibre, magnesium, vitamin B. Then we have tomatoes, which are loaded with antioxidants, vitamin C and K. Bell pepper; vitamin A, C, potassium, fibre. Cucumber and broccoli – much water, many antioxidants, Vitamins A, C, E, K and folid acid. Edamame, protein and fibre king. Mango, not only tastes like heaven but also great for your immune system. The peanut butter; a great source of healthy fats and protein. The list goes on and on, and I think you get the point. Yep, this dish is incredibly healthy and still soso delicious!

How to make this dish?

As the name already suggests, it’s easy peasy. Really, it only comes down to preparing the quinoa, which is not greatly different from preparing rice, cutting the veggies and making the sauce. As for the veggies, we need to chop some into bite sized pieces, and some need to be steamed for a few minutes, such as the broccoli and edamame. The sauce also is incredibly simple, as it just requires you to mix a few ingredients – which you probably all have at home already.

And then comes the fun part – the plating. If you are patient enough and not too hungry, you can style it prettily. Or if you are just normal – you can just throw everything into a bowl and mix mix mix. In the end, we just top it off with some fresh herbs and spring onions and that’s it! Voilà!

When and how to best have it?

Whenever you want! It works perfectly as a quick lunch on busy days, when you don’t want to spend much time on preparing your lunch. Otherwise, it also works great as a meal prep. You can just prepare everything, store it in the fridge and toss is with the sauce when you are ready to eat. Since it is a salad, it is just as delicious when served cold! And, not to forget, it also is perfect for picnics. Just prepare, pack and enjoy in the sun!

I genuinely hope that you’ll enjoy this recipe at least as much as we do and that you’ll have an amazing time cooking & enjoying it! Have a wonderful spring!

(The best) Coconut Citrus Porridge w/ Caramelised Oranges

April 9, 2021 by katharina.kuehr Kommentar verfassen

I am going to be really honest with you, I like porridge. But I definitely have never been this person dying for porridge. It was good but never wow. Until. Until I discovered this and (not exaggerated) it changed my whole breakfast game.

Creamy, fresh deliciousness at its finest. You are getting all the tropical vibes you need to get through till summer and all the energy + tastiness you need to start into your day. Why is this porridge SO MUCH BETTER than all the other ones you tried before? The coconut flakes in it make it a lot lot better, plus, now comes the game changing part, the citrus juice. Orange and Lemon juice respectively. I do not know why but I know hooow big and good of a change it is.

What is special about this dish?

As already mentioned, it is not your average porridge cooked in milk and water (life really is too short to be eating average food tbh). It does not taste like plain pulp but it actually is good. Instead of only using water and milk to cook it, we are adding the juice of an orange and a lemon. Sounds like a small change but makes a huge difference. It somehow brings out the flavours a lot more, makes it fresher and more delicious.

That is it as far as our base goes but a porridge never really is a porridge without its toppings. And here we cannot be average either. So. What we are doing is sweet, maple caramelised oranges. No, this is not too many oranges but this is really, really good!

Is this dish healthy?

Yep, yep, yep. Actually citrus fruits are super healthy and beneficial for you, especially in winter. Their high content of Vitamin C helps strengthen your immune system and prevents you from getting sick or getting a cold. So they are good for you. Also, in German we say „sauer macht glücklich“, which means „sour makes happy“, so lemons are supposed to make you happy. Apparently this is being said because lemons, which are sour, have a positive impact and are good for our gut. And our gut has a tremendous impact on our emotional state of being. Therefore, sour makes happy. So, the citrus fruits in here do not only make you healthy, but also happy.

Besides our citrus star, we have got some more health nerds. The oats for example. basically a bomb of carbohydrates, fibre, vitamins and minerals. One of the oldest and still most nutrient-dense foods. They are just incredible to have in the morning because they will fill you up, keep you full and give you all the energy you need!

How to make this dish?

Easy peasy lemon squeezy. But for real, it is. It comes down to simmering the oats, coconut shreds and chia seeds with water, plant based milk and lemon + orange juice. Next we cut up the oranges into slices and caramelise them. You can either carefully filet them, so there are no white skins (which is a bunch of work – for the tutorial you can check my insta highlights) or just cut them regularly. We heat up the maple syrup in a pan and fry them in there on both sides till golden, brown, and caramelised.

Now we only need to finish everything up. To make it even creamier and coconutier (this very likely is not a word – although it would be really cool if it was), we are adding in a dollop of creamy, canned coconut milk. Then we serve it all up in a bowl, add some more plant based milk and that is it. Your breakfast game will bee changed forever.

How & when to best have it?

The Great thing about this dish is that it is perfect for mealprep. The base can be cooked and stored in the fridge for several days. When you want to enjoy it, you can either heat it up in the microwave or on the stove with a bit more plant based milk. As for the oranges, I would recommend to caramelise them freshly but what you can do beforehand is to cut them up and store in the fridge.

I personally love this as a breakfast but also a brunch or lunch would be perfect. And, not to forget, it actually is a really good dessert. Just as coconut mango rice but with oats and oranges. So very different actually, except for the coconut, but you get the concept right?

I hope you’ll enjoy this as much as I do (and I really do enjoy it) and make this on repeat until we really have those tropical vibes outside that we have on the inside when eating this bowl. Have a wonderful and delicious day!

(The best) Coconut Citrus Porridge w/ Caramelised Oranges

  • 100 ml water
  • 150 ml (plant based) milk
  • 1 heaped tbsp coconut milk from the can
  • 1/2 lemon
  • 1 orange
  • 2 tbsp maple syrup
  • a pinch salt

How to

  1. To a pot add the oats, coconut shreds, chia seeds, plant based milk, a pinch of salt and water. Heat it up and let simmer on medium heat stirring constantly until thickened.

  2. In the meantime sliceup the orange into wedges. If tehre is some juice running out and remaining on the cutting board, add it to the porridge. Zest the lemon and add this zest along with the juice of half of the lemon to the porridge.

My April Top 6

April 1, 2021 by katharina.kuehr Kommentar verfassen

It’s April (already!!)! The month of easter, crazy weather (although this year there has been no month without it) and finally some fresh veggies & fruits! Rhubarb is coming into season and asparagus also has its start – which means lots and lots lf new good food! And obviously, there are 6 favourite things for April because we can not start a month without them!

Restaurant of the month – Mae Aurel

Attention to all brunch lovers – this is a must know for you!! Mae Aurel (pronounced M-a-y not M-a-e) aka Brunch heaven is definitely one of the best restaurants in Vienna to enjoy your Sunday breakfast or brunch at (or to get your take away brunch from – they now offfer really good looking brunch boxes for delivery!)! It definitely is not your basic go-to restaurant, it is way more special, has many creative & super good dishes and everyone there is soo friendly!

It actually is a quite new restaurant in town and located in the first district, between the Danube Canal and the Hoher Markt. This means, it is very easily accessible with public transport! (Without lockdown) it actually also is really cute to sit there, both, inside and outside. Outside you sit in a cute street in the middle of Vienna and inside you are surrounded by modern and comfortable interior.

But now let’s get to the exciting part; the food! It is heaven, really! What I actually love most about it is that it is not like in most brunch places but it also has special items on the menu such as pancakes with banana & bacon. You can also enjoy a great variety of (really tasty) breads with all kind of toppings or just some good old yoghurt or pancakes.

It is not only great for brunch though, but also for lunch! Mae Aurel offers a lunch menu during the week with a changing dish every day. Obviously there also are other dishes to choose from, such as (delicious!!) salads, curries, pastas & burgers! My personal favs? I would definitely go for something you don’t get anywhere else – so either the halloumi bread (a safe choice!), the banana & bacon pancakes (I myself haven’t tried them yet, but a friend did and she really liked them!) or the Red Mae Salad!

Mae really is a restaurant you need to try if you live in Vienna! You won’t be disappointed! Delicious, many, many options, very fair prices and super friendly people! Enjoy!

Food of the month – asparagus

Asparagus actually is a very ancient food – it has already been eaten and used as a medicine by the Egyptians over 5000 years ago. It hasn’t become popular until the 16th century though. Today anyhow, it is a very popular and widely used vegetable all over the world.

It is made up of 93% water and a great source of Vitamin B6, calcium, magnesium, zinc and fibre. It has also shown to have a possible impact on blood pressure and improved digestion. Furthermore, it is rich in antioxidants, which help to protect the cells and act anti-inflammatory.

The way it is eaten depends on where you are in the world. In the asian cuisine it is often added to stir-fries or curries, in the US it is often eaten with some sort of chicken of beef. In Europe it is often found in risotto or pasta or as a side. In Austria, it is very typically eaten with boiled potatoes, ham and either butter and parmesan cheese or sauce hollandaise. Asparagus definitely is a staple in Austrian Cuisine every spring.

If you want some asparagus recipe inspiration you can check out the potato and asparagus salad recipe, the strawberry and asparagus salad or add it to a summer poke bowl!

Recipe of the month – healthyish double chocolate salted caramel brownies

These are even better than they sound, trust me. You bite into that crunchy, cool chocolate, which is so flavorful due to the sprinkled sea salt, and then the soft & sticky caramel layer and the fudgy brownies and you are just thanking yourself for having made those.

A thick and fudgy layer of chocolaty brownies builds the base in the recipe. And yep, these totally would taste perfect by themselves, nevertheless we are taking them next level, literally. Because the next level is a creamy (and heavenly) salted date caramel layer, which tastes outrageous!! And as if this was not enough yet, we are topping everything off with a crispy layer of dark chocolate sprinkled with some sea salt. This honestly is the dot on the I and just upgrades it a whole lot.

If you are not convinced yet, let me tell you that they also are healthy. No refined sugar, no butter, no bs. Just good. We are using coconut sugar, whole-wheat flour, oil, dark chocolate and natural sweetness of the dates.

PLUS, making them is so wonderfully meditative. Really, this is the best activity for whenever you feel like procrastinating or, obviously, the best Sunday baking activity. We both know that your mouth is watering now, so head to the kitchen and get started!

Workout of the month – 30 min Heart Opening Yoga Flow

Before you stop reading because you are thinking „Yoga – really?“, just let me tell you that you definitely won’t come out of this flow without some sweating. Before I had tried this video, I actually wanted to chose a different video before, but unfortunately it had been taken off youtube and I could not find it anymore. Then I got a friends recommendation to try out this one – and it definitely did not disappoint! It is at least as good as the other one, if not better!

If you are still sceptical about doing Yoga, I can really understand you! I also was. I thought, if I already work-out then I want to really work out, I want to feel it and I want to sweat, and with Yoga this obviously is possible. (I was proven very wrong regarding sweating) Nevertheless, I tried it. Little by little. I started with 10 minute videos and then worked my way up. And eventually I started to like it. It has become a really important part of my routine, and no week passes without me doing some yoga. When you really open yourself up to it, it feels really good, it stretches your body and it really gives you a feeling for it. And you definitely sweat! So if you have been sceptical – just give it a try. A try without prejudices, where you are open to it and after you can still decide whether you like it or not.

This Yoga flow is part of a seven days gratitude series from Alo Yoga on their Youtube Chanel. As the name already suggests, in this flow you really open up your front side. This is done with a lot of bending and strengthening of the shoulders and back and also with stretching it with lots of backbends. What also is great is that Briohny Smyth (the instructor) keeps reminding you to really practice gratitude all throughout the flow. When you have ended it, you genuinely feel more grounded, relaxed and grateful. I personally love doing this flow on the weekends in the morning or on an evening after a tiring and exhausting day.

Product of the month – (the best ever) almond butter from Rapunzel

We need to put a little disclaimer here because this almond butter is dangerously addicting. Very dangerously. And it definitely is not comparable with any other almond butter there is or any you have tried before. In here we have the combination of organic roasted almonds and coconut along with the sweetness of dates, all blended up into a HEAVENLY creme.

Say goodbye to peanut butter and hello to this. The first time I tried it I was at a friends house and I think we pretty much emptied the jar right away, because there is no way you cannot. Rapunzel is a german company with the mission to produce high quality organic products. And it is not just a slogan for advertisement but what the company actually stands for.

They really care a lot about the working conditions of every single person involved into the production. From farmer to consumer. Because, as they say, only when everyone gets paid a fair price and does not have to worry about surviving each day, they can produce healthy food with great care and affection. In order to achieve this, they pay fair loans, visit their farmers and produce organically.

There really is no reason not to try this almond butter! It is incredibly delicious and produced by a company with a mission! So what does this best go along with? It is perfect on porridge, yoghurt, ice cream, overnight oats or anything else that’s sweet and that you can have as a a dessert or breakfast, such as the Overnight Vanilla Quinoa! It also is great in combination with some fresh fruit such as apple or mandarines or even on dried fruit such as dates. But really, it also is heavenly by itself, when you eat it straight out of the jar!

Inspiration of the month – the 7 habits of highly effective people

One of the best books ever. This book is full of life lessons, learnings and SO much information and inspiration on how to improve your life, your habits, your work, your personality. It is FULL of mind blowing insights and tools that make you want to change your life for the better and the healthier.

To be honest, this is one of the books that at first make you a bit uncomfortable (at least it did this to me). When reading it you realize that there still is SO much every single one of us can improve, there is so much to grow. And also that all of this is neither easy nor comfortable because we have to face new challenges, new surroundings and we have to look at things differently. We have to push ourselves out of our comfort zones. So when we start reading we have the choice: either we stay in our comfort zones and do not face the challenges and difficulties of changing and growing, or we leave our comfort zones and a new world full of possibilities and opportunities will unfold but the way there is no walk in the park.

So when we decide to leave our comfort zone and improve, this book is one of the best resources and tools you have to do so. Stephen Covey is guiding you through 7 habits that will make a tremendous impact on your life if you adapt these. And we are not talking about habits as, drink more water or go to bed early. These „habits“ are more life-style and mindset changes. Habits like „Begin with the End in Mind“ or „Seek first to understand, then to be understood“.

This might not sound life changing yet but the author really explains them in great detail, with evidence, examples and reasoning. He really goes in depth with every single habit so you genuinely understand what it is about. And yes, this book already is 32 years old, nevertheless it still is SO true nowadays because it addresses human behaviour and how we think in general. So don’t be fooled by its age – it still is one of the best books I have ever read!

These are my 6 favorite things for April – and actually I think this is my favourite or the favourites series. Every single thing in here is something I love and hopefully something you’ll love too! I am wishing you a wonderful April and a beautiful spring!

Love,
Katie

No-blending & easy 1 Bowl Healthy Apple Pie Baked Oats

März 30, 2021 by katharina.kuehr Kommentar verfassen

Baked oats – aka just a name for a dish that makes it sound reasonable to have oats for breakfast. And really, it is one of the best things ever. If you have never had it before and are wondering what it tastes like – kind of like oatmeal flavor-wise, but kind of goey and soft like a muffin texture-wise. Plus, those nice and soft cinnamony apples in the middle. So basically, like a mix of apple pie, oatmeal and muffin. Who would not want this?

Since I am not the biggest oatmeal fan I actually have never tried making this when it became a trend. And then one of you asked me whether I could create a recipe for a baked oatmeal. This pushed me out of my comfort zone, and leaving it was a great decision because this recipe turned out! So, also if you are not a huge oatmeal lover but you do like apple pie or muffins, you should still give this recipe a shot!

What’s special about this recipe?

It is not regular oatmeal and it´s not a regular muffin. It is way easier than a muffin and way more special than an oatmeal. Plus, you really only need one bowl to make this, which makes it a great dish for all those who want to avoid washing the dishes! Plus, you only need an oven and no stove, no constant stirring. You can just pop this into the oven, sit back and enjoy it half an hour later.

Is this dish healthy?

Yep, yep, yep! Let’s start with the oats! Oats are a real superfood actually. Loaded with carbs, fibre, protein and antioxidants. They keep you full for hours, give you energy and a bunch of protein to kick-start your day. Oats really are one of the best things you could have in the morning! Then we also use a bit of coconut sugar to sweeten the apples, which does still contain sugar, but also comes with other nutrients and fiber.

What else do we have in here?

Banana. The banana works as a natural sweetener in this recipe, and also adds even more fiber and vitamins to the dish. Besides, we have the apples, more fruits, so more fiber and vitamins, some plant-based milk, an egg for extra protein, and a bunch of cinnamon and cardamon. If you want to find out more about why cinnamon is so healthy, you can check out my December favorites! And last, which is optional but should not be left out, are the nuts! In here I would recommend using hazelnuts or walnuts, both are great sources of healthy fats and protein! So, all in all, really healthy!

How to make this dish?

As already mentioned, this is super simple. We start by chopping up our apple into small cubes. These are then tossed with some cinnamon, cardamon, oil & coconut sugar and pre-baked in the oven. This pre-baking makes them softer, enhances the flavor, and also gives us time to prepare the rest in the meantime!

Then we only need to combine the rest. For this we need to mash a banana, combine it with the egg, plant-based milk, spices, oats, salt & nuts. This can easily be combined in a bowl. If you want to have it really muffin-like you could also blend it with a blender, so you really have a smooth, cakey dough without chunks. If we are just mixing it in a bowl, it has more of an oatmeal vibe. This we can now add to the baked apple and give it a mix and then we’ll bake it for 35-40 minutes until it is crispy on the top.

When and how to best have it:

When I think is pretty irrelevant. It works great as a breakfast, a dessert, a snack, a breakfast for dinner kind of situation, just for whenever you want it. How to best have it depends a little on when you have it. I loveee it with some yoghurt and nut butter (like almond butter) or also some ice cream and whipped cream when having it as a dessert. You could even serve it with some more (sautéed or fresh) apple or banana if that’s what you want!

Also, very important; this dish works great for meal prep! So you can make it on a Sunday or in the beginning of a week and let it chill in the fridge. Whenever you then want to have it, you can just pop it into the oven for 10 minutes until it is warm and crispy again!

1 Bowl Apple Pie Baked Oats

Like porridge just better. Imagine this as a crossover of apple pie, porridge and muffins but as a breakfast version. Really. really good and really, really easy! A must try!

Course Breakfast, Dessert, Snack
Prep Time 5 Minuten
Cook Time 45 Minuten
Total Time 50 Minuten
Servings 2 servings

What you will need

  • 1 apple
  • 1/2 tsp cinnamon
  • a pinch nutmeg
  • 1 tsp oil
  • 2 tsp coconut sugar
  • a pinch salt

For the oats:

  • 1 banana (the browner the better)
  • 1 egg
  • 100 g oats
  • 1/2 tsp cinnamon
  • 1 tbsp honey (optional)
  • 75 g (plant based) milk
  • 1 tbsp nuts of choice (walnuts, hazelnuts,…)

For the toppings:

  • shredded almonds
  • coconut sugar

How to

  1. Preheat the oven to 180°C.

  2. Remove the core and cut the apple into 1cm sized pieces. Toss them with the cinnamon, cardamon, salt, oil and coconut sugar. Bake them in an oven safe dish for 10 minutes.

  3. In the meantime you can mash the banana till it's creamy, combine it with the rolled oats, egg, cinnamon, plant based milk, nuts and honey. If you want the baked oats to be really muffin-like, you could also blend this dough until it has no chunks left. If you do not blend it, it will me more like a porridge consistency.

  4. Once the apples are done, we can mix them into the remaining batter. Then we can pour it into oven safe bowls of any other oven safe dish and top it with the almonds and coconut sugar. Bake them for 30-35 minutes at 180°C until crispy and golden and enjoy!

I genuinely hope that you will enjoy this recipe as much as we do and that you’ll have a lot of fun making it!

Enjoy,

Love,
Katie
