Toast every slice of the bread. Half the peaches, depit them and cut them into about 1cm thick slices. Heat up a grill or a grilling pan. If it is a pan, melt the coocnut oil. Once hot, fry the peaches on each side for 2-3 minutes, then flip.
In a food processor or a bowl place the ricotta and honey. Whip it together until smooth or creamy.
When the bread is toasted, take it out of the toaster and spread with the ricotta. Place the grilled peaches on top. Finish off with a drizzle of balsamic vinegar. Enjoy!
