A bowl of (healthy) comfort. A delicious, tangy, creamy bowl of pasta with a healthy mushroom sauce. Definitely not your regular pasta recipe but it's absolutely delicious!
Prepare the pasta according to package instructions.
Preheat the oil. Finely chop the onion and slice the mushrooms. Fry them in the oil. To a blender add all of the remaining ingredients and blend until smooth. Before the pasta is done cooking preserve some pasta water.
When the pasta is done cooking, drain it and add to the mushrooms with the sauce. If too thick add some of the pasta water.
Serve with more nutritional yeast and enjoy!
