Beetroot Pasta Bake with Goats Cheese

Is going to be your absolute favorite dish for busy weeknights. 30 minutes, super simple, incredibly delicious, packed with healthy stuff and pink! So what more are you asking for? I couldn’t imagine anything else! Creamy beetroot and goats cheese sauce paired with super delish pasta (whole wheat if wished) topped with fresh goats cheese and breadcrumbs and baked until crispy. Yes, that’s all I need after a long work day.

Probably you think, she’s talking about healthy stuff but promoting pasta? What? And I can tell you – yes! Although it has been said for years that pasta and carbs are unhealthy and make you “fat” that is so not true. Pasta is a great source of protein and carbohydrates. Carbohydrates provide you with energy throughout the day. It helps not being tired or not having energy. It also is great to eat pasta before a workout because then you will have way more energy than if just eating a salad. Whole wheat pasta also is a great way to include more fiber in your diet. Plus, pasta is super delicious und will satisfy you!

But pasta is, obviously, not the only component of this dish. Actually, the beetroot is the star of the show. I honestly love beets. They are super delicious I believ, especially paired with honey or goats cheese, super pretty (I mean look at that pink color) and packed with a lot of nutrients. For vegetables, they have a pretty solid protein content. Also they are high in fiber and low in calories. Folate and Vitamin C are two minerals/ vitamins that are very present in them too, which is great for the health. Beetroots are anti-inflammatory which is great, especially in winter. Also they may improve digestion and help to regulate your blood pressure levels. Besides all of these benefits, it is super delicious! 

The only aspect, I don’t really like about beets is that they take super long to cook! It is not difficult to prepare them, you just peel them and then cook, steam or bake them for an hour but it still takes a lot of time! But since this is a 30minute dish and most of us are not that patient when we are hungry, I decided to use precooked beets. You can find them almost everywhere, in the supermarket, on farmers market or normal markets. It really is not difficult to find them but it saves a lot of time! 

Other than beets, there are a few other ingredients in the sauce, but very few to be honest. We add some honey, for some extra sweetness, mustard, to give it a hearty flavor, goats cheese, for the creamy- and addictiveness, salt to embrace the flavor and oat milk to thin it out. If you do not like oat milk you can use any other milk or milk alternative of your preference. You do not heat anything up for the sauce, just blend it all together, which means fewer dishes and less time. The rest is pretty simple and self-explanatory; you drain the pasta and toss it with the sauce. Then the pasta is divided into oven safe dishes or one dish, as you prefer. (I use my le creuset mink pots and they are so adorable!!! I am obsessed with them haha, but you can also use one large one.) we add some more fresh goats cheese on top and sprinkle some breadcrumbs. If you want, top it with some extra Parmesan cheese, but that’s optional. We place them in the oven again, on high heat, grill and let it bake for 10-12 minutes until the cheese slightly melted and the breadcrumbs turned crispy.

I love serving this for guest, because you can prepare it very well and simply bake it when wanting to serve. But it really does make a great family dinner or a weeknight dish, when not wanting to spend too much time in the kitchen after an exhausting day or week. This is definitely one of my favorite dishes to make with beetroot because it is so simple but has so much flavor! I hope you like it as much as I do!

Beetroot Pasta Bake with Goats Cheese

A delicious 30 minute, super nutritious pasta dish for a weeknight dinner or to impress guests at a dinner party. Really easy and so good!

What you will need

That is what you will need:

  • 320 g pasta short ones, like mini penne, maccheroni, or similar, can use whole wheat if wanted
  • 1 large red onion
  • 1 tbsp butter
  • 500 g cooked beetroot
  • 100 g goats cream cheese
  • 2 tsp honey
  • 1 tbsp mustard
  • 60 ml milk or any plant bast milk or milk alternative
  • 3 tbsp bread crumbs

How to

That is how it works:

  1. Bring a large pot with salted water to a boil and cook the pasta according to package instructios. Preheat the oven to 200°C (grill preferably)

  2. In a pan melt the butter. Thinly slice the onions into rings. Once the butter is hot, add the onions and brown them on high heat for about 8 minutes, until soft, brown and caramelized.

  3. Peel (if necessary) and cut the beets into chunks. Add them into a food processor or blender, along with the honey, mustard, half of thecaramelized onions, half of the goats cheese, a generous pinch of salt, and the milk or milk alternative. Blend until smooth. If too thick, add a little more milk or water.

  4. Once the pasta is done cooking, drain it and then add it back into the pot and toss it with the beetroot sauce and the remaining half of the onions. Either divide the pasta mix onto different small oven safe dishes or one large one, whatever you prefer. Top it with small dotllops of the remaining cheese and the breadcrumbs. Bake it in the oven for 10-12 minutes until the cheese is slightly molten and the breadcrumbs turned out crispy. Serve and enjoy!

Winter Salad with Baked Apple

Crunchy kale tossed in a creamy Honey Mustard dressing, with juicy, sweet baked apple, rich chestnuts, and fresh Feta cheese… this is like the BEST salad to make up for all of those Christmas cookies, and the 1 or 2 too many we’ve been eating all month long. 

Main or Side dish?

This recipe also makes an awesome side for your Christmas dinner. It is not too difficult, and it will impress your guests! Even the name itself will “Winter Salad with Baked Apple”, already sounds pretty fancy.. no? Although it sounds pretty fancy, and tastes delicious, it is not too hard to make. I love eating a larger serving of this as a light lunch or serve it along with some meat or fish as a side dish. 

Why is it special?

This salad recipe is not as refreshing as other ones are, but it is winter, so I think something more comforting and cozy is just right. These are also all seasonal foods, which I love. The ones I used for the salad, which basically is kale, apple, chestnuts, and sheep’s cheese, are all from Austria. This means that the transportation did not produce a lot of CO2, which is better for the climate. If you wish to make this recipe vegan, you can simply leave out the cheese, and there you are. 

What is in it?

The Apple adds a sweetness to the earthy kale, which, I believe, balances the entire salad out a lot. It also adds a kick and makes the salad not taste boring! The chestnuts add a winter feeling, because they are a very typical food at this time of the year (at least in Austria you can find them at every corner in December). The ingredients just work in great harmony.

Also the honey mustard dressing goes along perfectly with the apples and the kale. If you have fresh figs on hand, go ahead and throw them in because this combination is bomb too! Or if you don’t like the raw kale, you can steam it for a few minutes to make it softer, or use lambs lettuce instead! But, we are going to massage the dressing into the kale anyway, which is going to make it taste better and easier to digest. 

When to serve?

Because we don’t add the dressing at the very end, as you would do with a regular salad, this is a great make-ahead dish. You can prepare the salad before the guest are coming, then simply bake the apples, cut them up, and you are ready to go! It also works as a leftover the next day. 

Along with my green beans with almond bread crumbs, my caramelized pecan and fog salad or my vegan fall harvest salad this dish is a super delicious side dish for your Christmas dinner. Delicious and nutritious, plus it will impress your guests!

Winter Salad with Baked Apple

A delicious winter salad that includes all the delicious and warming ingredients of the season. Sweet and soft apples pair perfectly with rich chestnuts and earthy kale. All tossed in a honey mustard dressing!

What you will need

That is what you will need:

  • 6 handful kale stems removed
  • 2 apples core removed
  • 150 g chestnuts
  • 100 g Feta Cheese
  • some nuts (optional)

For the Dressing:

  • 2 tbsp Mustard
  • 1.5 tbsp honey
  • 2 tbsp orange juice fresh preferably
  • 1 tbsp Olive Oil
  • 1.5 tbsp white wine vinegar or apple cider vinegar
  • salt & pepper

How to

That’s how it works:

  1. Preheat the oven to 200C. Cut the apples in half. Take the chestnuts and cut a thin slice on one side (this is a necessary step, because otherwise they will explode, and your kitchen will look like a mess, talking from experience :)). 

    Once the oven is preheated, add the apples and chestnuts onto a baking rack. This works best if you place the chestnuts in a bowl, and put this on the rack, and take another bowl, and place on the very bottom of the oven, so the juice that will drop from the apples doesn’t stick and burn on the oven bottom. Bake them for 15-18 minutes.

    Meanwhile wash the kale and rip it into small bite-sized pieces. In a separate, smaller bowl add the honey, mustard, orange juice, oil, vinegar, and salt. Stir until well combined. Pour the dressing over the kale and gently massage it into it with your hands. This way the kale is able to absorb the flavor, taste less butter, and is easier to digest. Set it aside for at least 10 minutes. 

    Cut up the feta into about 1cm sized cubes. Once the apples and chestnuts are done baking take them out. Cube the Apple into small bites. Also peel and  roughly mince the chestnuts. Add everything to the kale and give it a gentle mix until it is all evenly distributed. 

    Serve and enjoy! If wished, add some cracked nuts on top, for extra crunch!

Pink Christmas Apple Sauce

Adding this Apple Sauce to your food will literally make them taste like Christmas! No joke! It is sooo good, sweet, christmasy, healthy, and PINK! Like, what do you want more? There is nothing better! I do not know if you can remember my rhubarb compote I uploaded in summer. I added it to everything but the season has been over for a long time so I decided to come up with something for this season.

I actually made this a while ago but waited to share it with you because I thought that it was too early to upload a Christmas recipe before December. So now, here it is, on December first and you are going to be making this more than once this advent! Trust me! It is super easy and soo good! In my fridge, it never lasts longer than a week, no matter how much I make. I just top literally everything with it; yoghurt, oatmeal, ice cream, pancakes, toast, like honestly whatever I am eating.

It also works great in baking Christmas treats because it just brings all the spices with it. But me ABSOLUTELY favourite combo right now is soy yoghurt + homemade apple sauce (mixed in) + homemade granola! I have this for breakfast like every day and it is just so incredibly good!

The process of making it is really simple. Just chopping up some apples, sautéing them in some coconut oil, adding a little bit of water, adding the spices into the pot, letting it simmer for 25 minutes. This is the best part I believe because the entire house smells so incredibly good! I mean who does not like the smell of Christmas?! I do not know such a person! After the 25 minutes, you take the spices out, transfer the apples into a blender and boom, Zack, it is done!!

The consistency is so creamy, just goals. You could spoon it as it as and just have apple sauce as a dessert. When making this, it is really a great idea to make it in big batches, because it last pretty long in the fridge (about 3 – 4 weeks), and it makes a really great Christmas present too. Also, a host gift. You can just pour it into a pretty mason jar, wrap a tie around it and a really cute and homemade present is ready!

Pink Christmas Apple Sauce

Your FAVORITE apple sauce that litterally tastes like Christmas! Also, a really great christmas gift idea!

Servings 2 jars à 350ml

What you will need

  • 6 red apples like Gala (should be sweet and SKIN ON!)
  • 3 cinnamon sticks
  • 5 star anis whole ones
  • 1 tbsp cloves also as a whole
  • 1 tbsp coconut oil
  • 50-100 ml water

How to

That is how it works:

  1. Cut the apples into 1cm sized cubes. In a large pot melt the coconut oil. Once hot, add the spices and sautee for about one minute. Add in the apples and sautee them too.

  2. Add the water and turn the heat down to medium. Let everything simmer for abou 20-25 minutes.

  3. Remove the spices from the pot and transfer the rest into a blender. Blend until smooth an pour into mason or glass jars. Store in the fridge for up to 1 month.
