Better Than Your Regular Oriental Loaded Sweet Potato Nachos

Loaded Nachos with cheese sauce are not what we‘re making any longer…. From now on we‘re leveling up our party snack and are making Loaded Sweet Potato Nachos. Not only healthier but also more delicious and more nutritious. If you haven’t so far given them a shot, it is high time!

We all know that nachos are pretty delicious. However, it is no surprise that they are not very good for us. High in fats, highly processed, loaded with cheese, very few vitamins, and, and, and, … but they are so handy, aren’t they? Yet, it is possible to have some with more nutritional value !

What is special about this dish?

As the name already suggests: these are no regular nachos but instead these are sweet potato nachos. What? Sliced, spiced and baked sweet potato that you can eat with your hands. To make them more fun and more filling, they are topped with various different things – hummus, veggies, salsa, tahini, jalapeños, … ! Personally, I think these toppings work great in combination with the nachos. However, if you prefer different toppings – such as chickpeas, meat, cheese, feta, or whatever comes to your mind – you can totally add these on top! This makes this dish super versatile!

A nutrition-bomb

Contrary to regular nachos, these are packed with nutrients! To start with, the sweet potatoes are incredibly high in fibre, carbs and several vitamins. They will make sure you have a lot of energy for a long time, stay full for long and make sure you stay healthy. Such an amazing, easy-to prepare carb!

the perfect hummus

The sweet potato is not the only source of nutrients though, there are many other! The hummus for example: it is nit only packed with deliciousness but also with several good-for-you‘s! Fibre, plant based protein and healthy, unsaturated fats from the olive oil! You can either make it yourself or buy it! When you gl to the store, just be aware that there is good and not so good hummus (and that makes a huge difference in the meal)! The one I can not only recommend but genuinely LOVE is the one from NENI am Tisch!! In here actually, I am using the new one – the Hummus with Za‘atar, which is even more flavorful than regular hummus and SOO delicious!! In general NENI hummuses are the best in my opinion: they are creamy, rich, authentic and just SO delicious!

what else?

We still are not done with our healthy ingredients. Let‘s move on to the toppings: here you can totally go for whatever you love! Personally I believe the ones in this recipe work great with the oriental flavors – if you though have other preferences, go for it! So, here we have cucumber, tomatoes (both amazing for hydration, vitamins & fibre), jalapeños, parsley (more vitamins), the salsa (healthy, unsaturated fats from the olive oil) & Tahin (more unsaturated, healthy fats). All in all, it is fair to say that these nachos not only are loaded with delicious toppings but also loaded with nutrients!

How to make those nachos?

Since there is no need for deep-frying them, they are super easy to make! All that needs to be done is to slice the sweet potatoes into thin slices, spice them with olive oil and Zata‘ar and bake them. Zata‘ar is an oriental spice mix that works great in this meal – however, if you do not have this at home and cannot find it at the store, you can also spice the sweet potatoes differently, with salz, pepper, chili, paprika & sesame for example! Those now go into the oven and we can focus on making the toppings!

That means, for the hummus we need to just give it a mix, so that the spices are well mixed in. Next, we make the salsa! That means finely chopping the green chilis, parsley & mint and combining it with olive oil and salt! Also, we chop up the tomatoes, cucumber and fresh herbs so they are bite-sized! As soon as the sweet potatoes are done baking, they can already be topped and ultimately enjoyed! That‘s it!

Perfect Party snack!

This recipe definitely is amazing for parties! Why? You can really prepare everything beforehand, just pop the sweet potatoes in the oven right before the guests are here and then serve them while they are warm. Also, you could meal prep them and have them as a cold lunch for school or work – that works great too!! They not only are the perfect party snack but also amazing for meal prep!

If you want to level things up,

then you can totally do so by going crazy with the toppings! Options really are endless! You could for example go ahead and add minced meat or meat substitute on top or roasted chickpeas and feta cheese! If you feel like roasted tofu, add it! Or are you craving chicken strips? Why not add them on top? Same goes for veggies!! Why not adding some corn or avocado on top? This part really is up to you and adds a personal twist to this recipe!

Really, I have to say that I really LOVE this recipe! Not only for parties but also for those Netflix and chill kind of evenings 😉 I hope that you will also love it and have a fun time cooking!

better than your regular oriental loaded sweet potato nachos

regular nachos is nothing we are doing any longer – from now on, we are making loaded sweet potato nachos! imagine those soft sweet potatoes with the tangy hummus, fresh cucumber & tomato and that satisfying tahini drizzle = heaven!

Servings 1 tray (for about 2-4 people)

What you will need

  • 2 (medium sized) sweet potatoes
  • 2 tbsp oil
  • 1 tbsp za‘atar

for the toppings*:

  • 1 package NENI am Tisch Hummus with Za‘atar
  • 1/2 cucumber
  • 1 handful tomatoes
  • 1/2 red onion
  • green chili
  • tahini to drizzle

for the green chili salsa (optional but very good):

  • 100 g green chili or green peppers
  • 2 tbsp chopped parsley
  • 2 tbsp chopped mint
  • 100 ml olive oil
  • salt & pepper

How to

  1. start by preheating the oven to 200°C. wash the sweet potatoes and chop them into about 1cm thick slices. mix the za‘atar with the oil and toss the sweet potatoes in the mix. lay out on a baking tray and bake for about 25-35 minutes until soft on the inside and crispy and golden on the outside.

  2. in the meantime prepare the toppings. wash and dice the cucumber into bite-sized pieces, half the cherry tomatoes, peel and cut the onion into thin half-rings.

  3. for the salsa, remove the seeds of the green peppers and super finely mince them. also mince the mint and parsley and mix it all together along with the olive oil and salt.

  4. once the sweet potatoes are done baking, top them with the hummus, the different veggies and fruit, the salsa and drizzle some tahin. to finish it off, sprinkle fresh herbs and enjoy!

Notes

*you can really use anything you like and have on hand as a topping – personally I love the combination with these fruits, veggies & hummus, but feel free to add what you love! it can be chickpeas, minced meat, corn, tofu, beans, avocado, whatever you love!

Healthy-ish Double Chocolate Salted Caramel Brownies

There is nothing like this. I promise. All of the good things combined and more than you have ever wanted. On the bottom we have the fudgy and chocolaty brownie (which already is so good on its own), then we have the creamy salted date caramel layer, which is just heaven and then everything is topped with a crunchy chocolate layer. If you are not hungry by now, I do not know what would make you hungry…

What’s special about this dish?

Well, a lot actually. The brownies are refined sugar and butter and made with wholewheat flour. So, they are pretty healthy actually. Then for the caramel, instead of cream, butter and sugar we are only blending dates, coconut milk and sea salt. This will become really creamy and thick and just tastes amazing!! Honestly, it was a mistake not having combined brownies and date caramel for such a long time! This combo is out of the world. Not exaggerating. So the brownie is pretty healthy, easy to make and still tastes really good!

Is this dish healthy?

Yepyep, as already mentioned, unlike regular brownies, this one is not loaded with sugar and saturated fats. It’s made out of eggs, coconut sugar (which still does contain sugar but less than white, refined sugar, plus it also comes with other nutrients), vanilla, oil (which is high in unsaturated fats), wholewheat flour (great source of fibre) and cacao powder (actually really good for you because it is super high in antioxidants)

Obviously we also have chocolate (super good for your soul 🙂 – when purchasing the chocolate, make sure to check the label to best get one that has been sweetened with any form of natural sweetener and does not contain a bunch of ingredients you don’t know and cannot pronounce). Plus, the dates, which also are really high in fibre, and dates in general are a super beneficial food for you as they are a great source of antioxidants and vitamins). So you see – all in all, pretty healthy. And especially healthy for your soul!

How to make this dish:

Easy peasy, chocolate squeezy. Or something like that. No, this is fairly easy. No eggs need to be separated, no complicated things need to be done. It essentially comes down to melting chocolate in the microwave, whipping eggs, sugar and vanilla till fluffy and then pouring in the chocolate and oil, as well as the flour-cacao powder mixture. That’s already it for the brownie, so very safe to make for everyone.

The caramel layer is not much more difficult. If you have soft dates (like medjool dates), then they blend perfectly fine. If yours are a bit harder, you can just soak them in hot water for a few hours and they will also become soft, which makes them easier to blend. So these are then just mixed with the coconut milk and the sea salt and that’s it. The chocolate layer on top is very self-explanatory, so you just need to melt the chocolate and pour it above. It’s easier if the other layers have cooled down a bit.

Meal prep friendly?

In theory yes! In real life, let’s say, I’d be surprised. Every time we make them, they’re gone within 3 days (If they even last this long). But yes, in theory they would definitely last up until a week in the fridge if covered or stored in an air tight container. If you have too many and make them on batch, you could also freeze some and slowly thaw them up before eating (so just placing them at room temperature and slowly letting them unfreeze).

In terms of how to best have these, there is no right answer. Breakfast, lunch, snack, dinner, dessert. Do we even need to ask when to best have brownies? Is there even a time where you cannot have brownies? I hope not. How to best have them is a different question. They are really good and rich on their own, so there is no need to add anything else, although they go great with some ice cream.

This recipe really is a must try for all chocolate lovers out there! Easy, healthyish and so worth it to make. They’ll upgrade ANY week! I hope you genuinely like them and enjoy making them!

Healthy-ish Double Chocolate Salted Caramel Brownies

The best (and only) brownie recipe you'll ever need! This is easy, not your average brownie and so good.

What you will need

For the brownies:

  • 3 eggs
  • 180 g coconut sugar
  • 1/2 tsp vanilla powder
  • 100 g milk chocolate (preferably one that has been sweeneed with natural sweetener like coconut sugar)
  • 100 g dark chocolate (preferably one that has been sweeneed with natural sweetener like coconut sugar)
  • 120 ml oil (flavor neutral oil)
  • 120 g whole wheat flour
  • 40 g cacao powder
  • 1/2 tsp baking powder

For the rest:

  • 250 g dates (soft ones work best – if you do not have soft ones, you can soak them in hot water for a few hours)
  • 150 ml coconut milk
  • a pinch sea salt
  • 100 g chocolate (preferably one that has been sweeneed with natural sweetener like coconut sugar)

How to

For the brownies:

  1. Melt both chocolates in the microwave, then combine with the oil and let cool a bit. Whisk the eggs, sugar and vanilla for about 5 minutes until fluffy.

Healthier and Incredibly Simple 4-ingredient Bounty Bars

Bounty. The bar we all love. I mean, who can resist some sweet coconut covered in crunchy chocolate. That bite into it is like a bite of heaven. But unfortunately they are not very nutritious and good for us. But that won’t stop us from eating them, right?! That’s why we are making an incredibly easy and healthier version of them that tastes at least as delicious!

When I made them the first time, they were gone within a day, more or less. And it resulted in a family fight about who would get the last one hahaha. So be aware that they’ll be gone quickly when you make them!

What is special about this dish?

Healthy(er) bounty bars. That is very special. Plus, they are incredibly easy to make, so anyone can make them! You really just need 4 ingredients to make them and you do not even NEED a blender. It of course is easier with one but it also us possible without one! That‘s what makes them really special! 

Are they healthy?

I would definitely say healthier than regular bounty bars. They are nutrient bomb but they definitely are better, nutrient wise, than regular ones. Why? Because regular ones are loaded with refined sugar, preservatives and flavor enhancers, which all are not healthy for our gut, teeth and overall health.

Our version is just made of shredded coconut, coconut milk, maple syrup or honey and chocolate. That is all. The shredded coconut and coconut milk are pure and without any additives, the maple syrup or honey still contain sugar but they also contain nutrients such as fibre and vitamins, especially honey does. When it comes to the chocolate, it really depends on the brand you choose. The darker the chocolate is, the healthier it is. Also make sure to choose one with as few ingredients as possible. You can check the  label at the back of the package and maybe you even find one, which is sweetened with coconut sugar.

How to make them:

This is incredibly simple. You just need to mix the shredded coconut, coconut milk and sweetener. This can be done with a mixer or blender, which definitely is quicker and easier, and if you don’t have one, you can also mix and knead it by hand. Once this is combined we are pressing it onto a tray, a casserole dish or into a baking tin and let it cool in the fridge or freezer for at least 1 hour or, even better, overnight.

The next morning, or a few hours later, we melt the chocolate. Please do not add coconut oil to thin it out, because then the chocolate won’t cover the bars as good. The pressed and chilled mass now is taken out of the fridge and cut into bar-sized pieces. These now are dipped in the chocolate and chilled in the fridge again! That’s it! 

The best snack

This is not only a perfect snack but also a great dessert. The best thing is, you can just take them out if the fridge and that’s it! That also is the reason they are gone so quickly 🙁

We LOVE these, even say they are better than Kokosbusserl, and that really means something!

Healthier & easy, homemade, Vegan Bounty Bars

At least as good as the original and much healthier. Plus, they are soso easy to make. A bit fluffy and coconuty batter on the inside and crispy chocolate on the outside. Everythnig we want for a snack.

Servings 10 bars

What you will need

  • 150 g shredded coconut
  • 100 g coconut milk (the firm part only)
  • 3-4 tbsp maple syrup
  • 200 g chocolate

How to

  1. From the can of coconut milk, only use the thick part!!! Do not use the watery part. Add this firmer and thicker part to a blender along with the coconut shredds and the maple syrup until it makes a thick and sticky paste or dough.

  2. Into a baking tin or casserole dish or onto a baking tray lay a parchment paper and add the coconut filling on top. Press it down and flat, so it is about 1-1,5cm thick. Cool in the fridge for at least one hour or overnight.

  3. When ready, melt the chocolate and let cool a bit. Cut the bonuty bars into 10 about 3cm wide and 8cm long bars. Dip each bar into the motlen chocolate and lay onto the parchment paper again.

  4. Cool in the fridge for another 2 hours at least. Enjoy!

Super Easy 10 Minute Beetroot Latte (vegan)

If you now are thinking something similar to „what?? Beetroot latte?“, I know how you are feeling. I felt the same before I tried it for the first time. And really, it surprised me positively. If you like beetroot, and warm, comforting drinks, this is something for you!

What is special about this drink?

I think this entire drink is really special. To be honest, I am not a huge anything latte fan. When I drink my coffee, I like it short and without anything. Still, once in a while, I really like this drink. I feel like it gives me a lot of energy plus its super tasty!

So what is special? We have beetroot + coffee. If you never have had beetroot in a sweet dish, you have been missing out… Instead of just coffee and milk, we have beetroot, spices, coffee and milk. A fancy, fancy, healthy latte.

Is this drink healthy?

it definitely is! Since beetroot has a naturally, slightly sweet flavour to it, there is no need to add much sweetener. Plus, beets are an extremely healthy. In my September Top 5 I have shared lots of information about them, so you can go check that out if you are interested.

To just quickly summarise, they are really high in fibre, vitamin B6, C, manganese and potassium. It also has been shown that they are beneficial for overall health such as reducing blood sugar levels, cell function and the immune system. Besides the star of the show we also have coffee in here, which has been shown to have several health benefits (as it may lower the risk of type 2 diabetes, cancer and boost longevity), when consumed in moderation. Then we also have cinnamon, which comes along a bunch of other health benefits and plant based milk.

How to make this drink?

This is so so easy. You need to start by heating up the milk with the cinnamon and cardamon. Then you blend about half of the milk with the beets, and foam the other half. To serve you pour both, the beet milk and the foamed milk into a cup and add a shot of espresso. That already is it! Really really simple!

When and how to best have it?

As this recipe already says, it works great with coffee, as a fancy drink! If you have some leftover milk, you can also add it to porridge’s, overnight oats, chia pudding, cereal or anything else you would add regular (plant based) milk to!

The Easiest 5 Minute Beetroot Latte (vegan)

Definitely not your regular latte but incredibly delicious, easy and healthy! A must make for everyone who likes to try out something new!

What you will need

  • 1 small beet (precooked)
  • 500 ml milk
  • 1 tsp cinnamon
  • 1/2 tsp cardamon
  • 2 shots espresso

How to

  1. Add the milk, cinnamon and cardamon to a pot and bring to a boil. Pour half of it into a food processor along with the beetroot and blend. Foam the other half, either in a foamer or in a pot.

  2. Into a mug pour the beetroot milk, the foamed milk and then the shot of espresso.

  3. Enjoy!
