No waste French Toast with Basil Apricots

This recipe post is a very special one to me. I do not just want to introduce a super delicious and healthy recipe to you but I also want to address a topic with this: sustainability and food waste in the kitchen. I believe that there is way to much food thrown away and that way to often we do not care about making conscious and sustainable decisions in the kitchen. With this recipe I designed one that is low to zero waste, that is fully organic and local and that is made of regional ingredients from Austria. Kind of a back to the roots recipe to raise awareness of how wasteful we can be in the kitchen.

But first, what even is French toast?

I think most of us know, but not everyone. French Toast is bread that has been soaked in milk, eggs, and sugar (traditionally) and then is fried in a pan, served with syrup. In Austria it also is very popular with the name „Armer Ritter“. It is something actually pretty traditional in the Austrian cuisine but has only become really popular with the American name „French Toast“.

How to reduce (food) waste with French toast

The great thing about this dish is that it is something we Austrians would call „Restlessen“. This literally translates to eating the remains, so what’s left. It is an amazing (and pretty tasty) way to use leftovers.

  • Instead of throwing bread away that is one week old and already pretty stale, you can use it for this recipe. That way you save food from being thrown away AND you make a super tasty meal. A win win. But it still is by far not popular enough, unfortunately, that’s why I want to encourage you to give it a shot. Next time you consider throwing bread away, try this out.
  • Similar goes for the apricots. I sometimes feel that apricots are like avocados. They are not ripe for a week and then suddenly one day they are and the next they go bad. And if you do not want to make something with the apricots this one exact day when they are good, you are likely to throw them away. Which is sad. When you cook them down, add some lemon juice, a little sweetener and some fresh basil you basically make something like jam (Marmalade). And this will last for several days in the fridge. Again, you do not have to throw anything away and you create something super tasty. What I love most about this is that you can add this „jam“ to basically anything from yogurt bowls, porridge, cake to ice cream or another dessert cream. And no, you cannot only make this with apricots. With pretty much any fruit it works. Peaches, berries, cherries, whatever you have on hand and you feel like you can use up.

What about the rest?

Well, that’s the two main components that are contributing to reduce waste. But what about the rest? We still need milk, eggs, sweetener, oil and yogurt. So one by one.

  • Milk: As for the milk, I love to buy it as Joseph Brot . This comes from Austrian farmers, is all organic and packaged in glass bottles. Glass bottles are amazing because they are reusable. And also if you cannot return them you can use them at home for example when you make fresh smoothies or juices. Reuse and reduce waste.
  • Bread: Joseph Brot to be honest is where I go for most of my organic ingredients for recipes like those. Not only do they have the best and organic sourdough bread in whole Vienna, which is made of grains from Austria but it also comes in paper bags. No plastic.
  • Yoghurt: Moreover they have organic Austrian yoghurt. Another ingredient for this recipe. And again, it comes in glass jars. Whenever such a jar is empty I love to use it for storage. No matter if it is for nuts, dried fruits or a homemade sauce or dip that needs to be stored in the fridge. I just wash them when empty and reuse them. So incredibly handy to have on hand. I am not in any way sponsored by them and I do not want to tell you that you need to go there to buy your ingredients. Most supermarkets (I know Billa and Spar do so) have milk and yoghurt in glass jars. But what I love most about going to Joseph is that I know that the products don’t travel for days because they are all from Austria. This also is better for the environment of course and their CO2 footprint.
  • The sweetener: I love using honey as a sweetener because of several reasons: first, it’s super tasty, second, it is healthier than sugar since it does have some nutrients, third: you get it at every corner in Austria. Plus, most of the times you get it in glass jars. No plastic, less waste, reusable. I have already told you why glass jars are pretty cool but think about this: you empty your honey jar, you wash it and you can store your homemade apricot jam in it. Isn’t that amazing? It is!
  • Eggs: here it is really hard to go no waste. But there are great ways to can get close! When you purchase eggs do not buy them pre-packaged. Either buy them on a farmers market or some supermarkets have places where you can fill them into the boxes yourself. This is really convenient because you an reuse the cartoon boxes several times and you d not automatically take a new one every time you purchase eggs. Another thing that I have seen recently is a reusable egg container. So it is like a cartoon box but made out of plastic (unfortunately) but you can basically use it forever and always refill it. if you want to go 100% zero waste you could also, after using the eggs, compost the shell or if you have a farmer close to you give it to them because they may feed it to their chicken.
  • Oil: last but not least we have the oil. I prefer using something like sunflower seed oil because it is quite neutral in taste but it is regional and often comes in glasswork bottles. But also coconut oil works well (just that it is not regional here) because it has a very high cooking temperature. Also, it most of the time comes in glas containers. Again, you can reuse them. In the kitchen, for storage or even for decoration. If you add some flower leaves and a candle, this makes a beautiful decoration and accounts for an amazing atmosphere.

Why buying local?

Buying local can never harm. There are 2 main reasons I buy local. the first one is the impact it has on the environment. The transportation already makes a huge difference if the apricots come from Styria, which is 200km away or from Portugal, which is 2000km away. They do not need to be shipped by plane, they do not need a cooling system that lasts for days and is energy consuming. They come from Styria, maybe on the same day you purchase and use them.

Secondly, right now, more than ever it is important to support your local economy and local farmers. This crisis has hit every single one of us and some more than others. Of course apricots from Portugal may be cheaper because agricultural standard are not as high as they are here and therefore Austrian farmers have a harder time competing with farmers from abroad. But in order to keep the Austrian system alive and to fight through this crisis together we have to stay strong and support each other.

The last point: why buying organic

I think we have all heard that buying organic (Bio) food is better than purchasing non organic food! But why actually? Several reasons. When jr comes to fruit and veggies I would ALWAYS long for organic food when available. When being produced organic no pesticides or chemicals are allowed to be used. The use of those does not only harm our environment and soil in the long term but it actually is not good for our overall health. All of the things that have been added or injected into the food to help it trow faster and bigger can in the long term really mess up your gut and the bacteria in it and digestion. Those are things our bodies don’t know and therefore do not know how to really handle it. So really, try to buy organic. It is more expensive but your health should be worth the investment.

The other reason is, when it comes to animal products, the living conditions of the animals are better than for non-organic. Unfortunately they are not always much better or good, but organically produced animal products have higher standards.

Why doing and considering all of this? 

See, if we keep our food consumption and buying behavior as is, these are not very good conditions for the agriculture in the future. We need to make a change and we should start now. Producing less or no waste is essential as well as supporting local economy (especially after or while facing such a crisis). Furthermore it is better for our bodies and the environment when we make a change to organic shopping.

I know all of this information may be a little bit overwhelming at once. Still, I wanted to pack it all in one blog post to have the overview and because it is so important to me. I just wanted to give you a brief introduction into all of these aspects but I can also do a more detailed blog post on these topics if you are interested. But for now, I hope that you will love and enjoy this recipe and keep all of this information in the back of your head.

No waste Apricot Basil French Toast

What you will need

  • 1 egg
  • 150 ml milk
  • 2 tbsp honey
  • a pinch of sea salt
  • 2 large slices of bread can be a few days old and stale
  • 5-6 apricots
  • 1 handful basil
  • 1 tbsp butter or oil
  • 150 g greek yoghurt
  • 1 tbsp honey

How to

  1. Combine the eggs, milk, honey and sea salt in a bowl. Add the slices of bread and dip them into the mixture. Let them soak in the liquid for about 2 minutes on each side.

  2. In a pan heat up half of the butter. Slice the apricots and finely slice the basil. Add the apricots into the hot pan and sautée them for 2 minutes on high heat. Turn the heat down to medium and add the basil and honey and let simmer for about 5 minutes until it is a bit saucy.

  3. Add the remaining butter to another pan and heat it up. Add the soaked bread and fry on each side for about 3 minutes on medium high. Take the bread out and place it on two plates. Add the remaining egg and milk mixture to the pan and make "sweet scrambled eggs".

  4. In a seperate bowl combine the greek yoghurt with the honey and whisk until creamy and smooth. Top the french toast with the basil apricots and the whipped honey greek yoghurt. Serve with some more honey or maple syrup and enjoy!

My favorite brunch spots in Vienna

[ Brunch ] – a meal eaten when you wake up too late to have breakfast, but do not want to go until lunch without having eaten. Instead you have a single meal called brunch.

Ok, let’s make that be a katie definition. The favorite meal of the day because it gives you an excuse to have pancakes and avo toast all at the same time and you do not need to get up early. 

I feel like brunch has become a very popular thing in the recent years. Although making it at home is very fun and I have several recipes for this on my blog it also is super nice to go out and get it served. That’s why in this blog post I have written down my favorite places to go and have brunch in Vienna. They are in no particular order but they are all super good!

Cafe Telegraph

Garnisongasse 7, 1090 Wien

Cafe Telegraph is a very cute coffee shop pretty much in the heart of Vienna. You can find a very nice seating both, outside and inside which makes it perfect for any season! On their menu you can find traditional breakfasts from all over the world such as an english breakfast with baked beans and sausages but also such as Shakshuka. Plus, this restaurant is great for all avocado lovers because they even have a certain part of their menu dedicated to avocados. Their you can find fancy items such as avocado pancakes! Definitely worth going their and trying out their super tasty menu!

Ramasuri/ Drechsler

Linke Wienzeile 22, 1060 Wien

Both of these are super cute! Why did I put them both in one bullet point? They are both part of the same group of restaurants and have pretty much the same breakfast menu! Ramasuri is located very close to the Danube canal while Cafe Drechsler is close to the famous Naschmarkt. What I like most from the menu? definitely the pancakes (so fluffy omg) and the avocado toast. It’s one of the best in town! And also, their service is so super friendly. Always a good choice going there!

Babula

Heinestraße 15, 1020 Wien

Babula is a pretty new hotel. But Babula also is breakfast heaven. Not only do they have such a nice service and interior but they have super tasty and pretty looking (!!) breakfast too. Their menu is creative but still has all the basics covered. So you can find beet root porridge but also French toast and eggs Benedict. Moreover, they have adorable looking drinks such as a pink latte. Just wow.

Motto am Fluss

Franz-Josefs-Kai 2 EG, 1010 Wien

This one is very popular among the Viennese. This café has one of the nicest location in Vienna. it is located on a ship ( which stands still al year) right on the Danube canal. Always booked out, so you need to make a reservation. They have a rather small breakfast menu but it’s delish! Just be aware, that on the weekend, when there are a lot of people, you might need to wait a little longer!

Café Marché

Währinger Str. 6-8, 1090 Wien

I feel like this is a rather secret spot. It is also pretty much in the heart of Vienna, and in my opinion the cutest cafe in Vienna. They only have very few seats, both inside and outdoors, which makes it super cute and special. I believe that they have THE BEST AVO TOAST in entire Vienna. I absolutely love it. Also their coffee and coffee art is amazing there. Plus, what’s super cute is that they always have freshly baked treats.

Klyo

Uraniastraße 1, 1010 Wien

Klyo is a pretty popular restaurant in Vienna. It is located in the Urania, an observatory in the middle of Vienna, which is right next to the Danube river. You have a super nice view from there in in summer you can even enjoy your break on their terrace. This one, especially on Sundays, is always booked out so make sure to reserve a table ahead of time! My favourite breakfast item? The scrambled egg with the bread. This freshly toasted bread is a pure dream. You cannot get enough of that!

Mae Aurel

Salzgries 3, 1010 Wien

This spot is rather new in town but amazing. They serve all day breakfast, which is not your average breakfast menu. You can get pancakes with caramelised banana and bacon, Toasted sourdough with beet hummus and avocado or eggs Benedict all day long. And what’s a bonus there: the drinks are heavenly and so creative. Perfect for a nice brunch with your friends. Mae Aurel is also located in the heart of Vienna.

Ulrich & Erich

Sankt-Ulrichs-Platz 1, 1070 Wien
Neustiftgasse 27, 1070 Wien

These two coffees are also super duper cute. They are in the seventh district and right next to each other. They also are part of the same group. Very similar, but still a little bit different. I feel like the breakfast menu from Erich is a bit more extra and the one from Ulrich a bit more regular. But honestly, I love them both. The area around them also has super cute and nice shops, which are all a bit special. Definitely worth visiting.

Café Himmelblau

Kutschkergasse 36, 1180 Wien

If you’d ask my mom what her favourite breakfast spot in Vienna was, shed probably tell you that it is Café Himmelblau. No wonder. I have never had a bad experience when going there. The service also is super friendly, the location super cute since it is located in the middle of a market in the 18th district, and the food is a dream. It is not a super fancy breakfast menu, more typical Viennese but you do not want anything else or more when going there. This, is ALWAYS a good choice and almost always completely fully booked – no matter if it is during the week or on the weekends. A super good tip!

Superfood Deli

Operngasse 34, 1040 Wien

This place is very popular amongst the young. It serves super tasty and ice cold smoothie bowls with a side of amazing avocado toast, coffees and smoothies. You can, of course, enjoy them all day long either indoor or outdoors, or also to go! Their menu is completely vegan and organic but it also comes with a price. If you decide that you want to bring their breakfast home, you can also purchase their açai pads and make an açai bowl at home. Still, theirs is unbeatable I believe. The best açai bowl in Vienna!

Karma Food

Ausstellungsstraße 63, 1020 Wien

How to describe this best? Cute. Tasty. Super friendly. Karma food also serves food which is mostly organic, healthy, and vegetarian or vegan. Although you can find some items with meat products on their menu, the most part is plant based. But don’t think this is boring or anyhow not tasty. Because that would be a huge lie. Their food is AMAZING. So fresh and flavourful. And let me tell you, if you go there, you NEED to try their banana bread! Amazing. Plus, you get some of my favourite bars, Lini´s bites, there!

Joseph Brot

Last one on that list, but definitely not least, Joseph Brot. As the name says (Brot = bread), this actually is a bakery. They have lots of different and super tasty breads with all organic ingredients. You can get their bread and enjoy it at home or you can simply have breakfast there. This photo does not quite do it justice, but their breakfast is amazing. And I love that it is all organic and mostly regional.

These are my absolute favourite breakfast spots in town. I need to say, I have not tried every single one yet but I probably will, and add some to that list. I hope that this helps you the next time you wonder where to go and have brunch!

Lemon Chia pancakes

Who doesn‘t love a good stack of pancakes as a weekend breakfast or literally any day of the week? I do not believe that many do not! But adding a twist to your average pancakes with a hint of lemon and chi just takes them next level and makes them a new obsession.

Actually, I have never enjoyed pancakes too much! I mean I would eat them when I got them, but I would probably not make them for myself. Anyway, I went to the US some time ago and had soem really good fluffy and juice ones for the first time. Ever since that day I have never had the one from the package again and started to make my own ones. Best decision ever.

Especially on the weekend when there is some more time in the morning, pancakes are the perfect breakfast! They are sweet, delicious and such a treat! Still, while being a treat, they do not have to be unhealthy or loaded with sugar or fats. They can be healthy while being super tasty! 

Like the ones in this recipe! They are incredibly delish but they are nutritious and vegan too! And they are not boring as plain pancakes might be because they have an extra twist! Lemon Chia. It is so refreshing but still so good. Honestly I love them! 

Those pancakes have very little ingredients! We are using chia and ot milk instead of eggs. When you ket this mixture sit for a few minutes it starts to gel up, which will help to bind the pancake batter. Other, the only ingredients are apple sauce, soy yoghurt (or any other yoghurt), lemon juice & zest, soda water, some whole grain flour, baking soda and some coconut oil to fry it out. The soda adds some air and makes the pancakes super fluffy. 

But what would pancakes be without topping? Half as good! I know! As for toppings we are gonna gl ahead and make some lemon yoghurt . Simple and good. Therefore I like to use any plant based yoghurt and mix it with a little lemon juice and lemon zest. If that is too spur for you (although it makes a great addition) you can add some maple syrup or other sweetener of choice. Besides the yoghurt, I like to top mine with fresh banana slices and some maple syrup or honey. But this really is up to you and what you feel like. You can also top them with berries, nut butter, other fruit, granola, whatever comes to your mind. 

If you do not eat all the pancakes at once, you can simply freeze them (but make sure you freeze them separately so you can take them out one by one and they do not stick together) and just reheat them in the pan or toaster whenever you want to have them for a quick breaky or dessert!

Vegan Lemon Chia Pancakes

A delicious and healthy breakfast treat. Easy, vegan, super good & with a refreshing twist.

What you will need

  • 1 tbsp chia seeds
  • 3 tbsp oat milk
  • 50 g apple sauce
  • 50 g yoghurt
  • 1 lemon
  • 100 g flour
  • 1 tsp baking powder
  • coconut oil for frying
  • 50 ml sparkling water
  • 2 tbsp maple syrup

Soy Joghurt topping:

  • 100 g soy yoghurt
  • banana for topping

How to

That is how it works:

  1. Place the chia seeds with the oat milk, maple, half of the lemon juice and zest in a bowl and stir through. Let them sit for about 5 minutes until a gel has formed.

  2. In the meantime combine the flour and baking powder.

  3. Add the soy joghurt and apple sauce to the chia seeds and gently mix through. Add the water and flour always one by one. If the batter is too thick add some more milk, if it is too thin, add some more milk.

  4. Heat the coconut oil up in a pan nd fry the pancakes at medium heat. Portion them out with an ice cream scoop. Once bubbles are forming on one side, flip them and cook them for another 1-2 minutes on the other side.

  5. For the lemon yoghurt combine the remaining soy yoghurt with the other half of the lemon juice and zest in a bowl.

  6. Slice up the banana.

    Once all the pancakes are fried, place them on a plate and garnish them with the lemon yoghurt, the banana slices and some more maple syrup.

    Serve and enjoy!

Since most of us are supposed to stay at home and hopefully do so in order to protect people around us and keep us healthy. BUT we do not want to get bored in those weeks, especially not with the food we are eating. So here I have created a list of my recipes that are categorised into moods or situations so you know what to cook depending on how you are felling and what you want to have!

Therapy Baking:

Baking and making sweets is so therapeutic! I do not know what is better: the making itself or the enjoying it after. But if you are feeling like baking or makes treats these days, here are some recipes.

Hey-goey Salted Caramel Chocolate Bars

The perfect meditative and most delicious thing ever. Honestly this is my go to dessert and snack. Its not hard, does not have many ingredients and it is kinda healthy, although it does not taste healthy. If you want to treat yourself to an addictingly good sweet then this is it!

Chocolate Coconut Almond Dates

Another go to with similar ingredients. Such a good and easy snack. Sweet and soft dates covered in crispy chocolate and fresh coconut with a crunchy almond in the middle to give it a bite. So delicious! http://unepetitecuisiniere.com/chocolate-coconut-almond-dates/

Healthy Apple Crumble Cake

Juice apple on a whole wheat base with a crispy topping. And a dollop of vanilla ice cream or ben and Jerrys. Thats a high level therapy baking. Those three layers are incredibly delicious and especially with that melting ice cream on top of a hot slice of cake. SO GOOD.

Carrot Cake Muffins

Need some baking but still need to sneak some vitamins in? This is the perfect solution! Whole grain carrot cake muffins with some whipped ricotta and a drizzle of honey. Maybe with a cup of tea or coffee! Afternoon snack is saved!

Vegan Cookie Dough Ice Cream Sandwiches.

If you are already feeling those summer vibes, grab a few things and make those super good and healthy vegan cookie dough Ice cream sandwiches. Leave out the figs (because you will probably not find any at this time of the year) and substitute them with berries or just leave them out. This is a go-to in summer but why not making them now? There never is a bad time for ice cream!

No-bake Vegan Cashew Lavender Cake

A no-bake and vegan option for those who feel like trying out something new. The cashews make it creamy and if you do not find lavender syrup, take mashed blueberries or any other syrup. You can even take pureed and frozen mango, whatever you are feeling like.

Rhubarb Compote

The first Rhubarb of the season is out and there is another better to be doing with it than cooking it into compote and adding it on top of every ice cream, yoghurt anything else. Even goes great on cake. Get some rhubarb and watch it simmer down slowly and getting sweet. So good.

Lemon Creme with Basil Strawberries

Last but 100% not least in this therapeutic baking recipes is this ultra delicious lemon creme with basil strawberries. Super fresh, super easy, not THE healthiest but still fine and most importantly: incredibly delicious! If you do not have strawberries, use frozen berries or top it with some lemon zest. You know, you gotta improvise!

When working on your Summer Body

If you now finally have time to stay at home and work on that summer body, I have got some super delicious and healthy recipes for you here. Honestly, pretty much everything is healthy on my blog, and you shouldn’t just be eating salad, also if you want to get healthier, because you know, its all about the balance. But these are my favourite and most healthy recipes. Those are just savoury but you can look into the therapy baking if you want some healthy and sweet ones!

Breakfast Quinoa 2 ways

This one is a dream. I am still making this very often. And no matter if you are more on the sweet or on the savoury side, I have got something for you! It is so delicious, and nutritious. You can pimp it up with anything, make it a breakfast, brunch, lunch or even dinner. This meal works for any time of the day and it is so healthy! Definitely should go onto your recipe list!

Vegan Rice Noodle Salad with Best Crispy Tofu

This is one of my all time favourite healthy vegan dishes. It is so incredibly simple to make but packed with a ton of flavour. You get carbs from the rice noodles, protein from the tofu (and no, this tofu is by far not boring, it is everything else than boring), lots of vitamins from the veggies and healthy fats from the nuts and nut butter. A totally balanced and absolutely delicious meal. Even if you are not vegan, you will enjoy this and not miss the meat in here! I promise!

Green Beans with Almond Bread Crumbs

This recipe actually is a side dish but if you combine it with some quinoa, and avocado or a grilled chicken breast, it makes a super healthy and quick lunch or dinner. The green beans are so healthy and so good. Together with the crispy almond bread crumbs they do not taste super healthy but they are! This also is a very family friendly meal!

Winter Salad with Baked Apple

I know that it is called winter salad, but it works at any part of the year. It is meant to be eaten in winter because the baked apple is so comforting, but if you feel like having something extra and comforting this is perfect. The apple, the steamed kale, the fresh feta cheese. Just leave out the chestnuts and substitute them with walnuts or pine nuts and you are fine!

Green Goddess Bowl

This dish is perfect for when you feel like nourishing your body. Getting in all the greens and vitamins to just feel your best, keep your body healthy and your immune system working! All of the greens are in this bowl. And it has the best dressing ever (hint, its made with Tahini). Its vegan, and summer body approved!

Think Pink Smoothie

It is spring, and the sun is shining, which means fresh food and many fruits! At least to me! Fruits are such a great source of vitamins and fibre and we all know that they are super healthy. Vegan Kale Ceaser Salad

The last salad recipe for today and this is a must! It is healthy and so incredibly good! Add some cooked Quinoa to make it more filling. The dressing is everything. Not your regular Ceasar dressing but incredibly good. Plus best ever crispy chickpeas and home made dried tomatoes. You have never had such a delicious salad!

Mango Overnight Oats

Breakfast has not been this good for a long time! I think this is the best overnight oat recipe ever. And it is so important to have a healthy and balanced breakfast. It helps you to reduce cravings and binge eat. This is bringing all of the tropical vibes into your kitchen and will brighten up your day a little! Enjoy!

For the Family Chef:

If you now do not have school or uni and have unofficially or officially turned into the chef for the entire family here are some recipes that will please your entire family. It is never easy to please a bunch of people with a meal but these should work fine. You can make some adaptions if you feel like it but no need to!

3 Tomato Gnocchi with Garlicy Prawns

Too good to be true. This is not only for summer, but for every time you want to please and impress your family with a delicious and fancy sounding meal. Gnocchi (because who doesn’t like them) with 3 tomatoes and garlic prawns. Is way simpler than it looks but so good!

Tabouleh Stuffed Sweet Potatoes

Perfect family dinner. It is possible to make it vegan, or add some halloumi and make it vegetarian or some grilled chicken if there are men who can’t live without meat in your family. Such a colourful dish and the seasoning for the sweet potatoes is incredible. This makes a perfect dinner, honestly!

Veal Stuffed Zucchini Cannelloni

Low carb, Italian, molten mozzarella, tangy tomato sauce. It is incredibly good. A little work to roll up all of the zucchini but it is worth it! Serve it with some baguette or bread or if you want to make it a little heavier roll the meat in the zucchini and some cooked lasagna sheets! Your family will love you for this!

Italian Meatball Sub

Meatballs are my go-to family dinner because everyone likes them! And those are incredible. The sage in it is everything! Crazy good. And in this tomato sauce, with some parmesan cheese on top between some crispy baguette or on top of some pasta = family chef job is done perfectly! No matter if you have younger siblings or kids, or whoever lives with you, this stuff is good.

Beetroot Pasta Bake

If you are ever getting bored of a basic pasta bake, MAKE THIS! The sauce is so creamy and good. The colour is just amazing, which is great if you want kids to eat it, because it just looks pretty! Plus the goats cheese on top wit the crispy baked bread crumbs and honey make the perfect topping. This is not a lot of work, especially if you buy the beetroot pre-cooked.

Ultimate Hummus

Hummus is a family meal. It just is. If you make a big batch you can have it throughout the week. It is great to have it with your breakfast, in a lunch sandwich, or on your dinner toast. Even a great healthy snack with some cut up veggies. It is really simple and your family will love it!

Miso Sweet Potatoes with Coconut Rice

Another family friendly and super delicious dish. The miso sweet potatoes are so good. They are slightly sweet and so delicious. The coconut rice is so creamy and the perfect addition to any asian dish. No matter if it is a curry, a stir fry or this delicious dish. This is vegan but if you want to add some prawn or chicken, you can, although you do not need to!

Oven Baked Lemon Honey Feta

Sounds fancy, tastes fancy but is the easiest thing ever. You throw everything in a baking dish and bake it for like 10 minutes. The flavour after baking? Unreal! The freshness of the lemon and capers, the sweetness of the honey, the crispness of the breadcrumbs. The combination is just out of this world. Put it on top of some bread or salad and everyone in your family is happy!

For those who only want to cozy up in bed

I know, maybe you are stressed and worried and the is nothing better than binge watching Netflix in your Pjs and lying in bed all day. With some seriously good comfort food! So here I have a list of comforting recipes to make when you just feel like a warm bowl of something.

Thai Sweet Potato and Cauliflower Soup

Soup is the Ideal comforting food for body and soul. And this soup is the perfect addition to your favourite series in bed. It has some thai hints with the coconut milk but is so creamy due to the sweet potatoes and cauliflower. The lemongrass and ginger give you the perfect spices. With some rice in it or some prawn/ chicken skewers this is the perfect dinner.

Tomato and Bean Soup

Spicy, warming, comfortable. With the slightly buttery beans and the soft red onions plus all of the herbs and the tomatoes this is another super good soup recipe. Take it onto your sofa with some freshly toasted bread and just dig in. This is super good soul food.

Mint and Pea Soup

Last soup recipe and then we are on to something different but this had to come into this post because it is so good. My latest obsession. The mint is just so refreshing and the peas add such a nice flavour. With the dollop yoghurt on top this is just a bowl of good stuff. Needs to go onto your list!

Creamy Lentil Dhal

This is one of my current favourites. I am making this so often right now because it just tastes amazing. And it is super healthy. When the lentils soften up they get a little mushy and with the coconut milk it gets all creamy. It is in the middle of a soup and a stew. The potatoes add that extra heartiness and much needed carbs and the lime on top just adds the perfect finish. This tastes best with some home made naan to soak everything up!

Tomatoey Lemon Beans on Crispy Sourdough

Think baked beans just healthier and better and you have those delicious ones. The lemon adds a nice twist, but the maple and tomato sauce keep it nice and comforting. In this post you also have the instructions on how to make the best crispy toasted bread with that buttery flavour. So good and vegan. Best: enjoyed in bed!

If you are planning on sleeping in every day: the best breakfasts!

I mean, many people cannot do their jobs right now or go to uni or school. So what else would be the first thing that comes to your mind than sleeping in? I am a huge fan of getting up early and being productive all day long but sometimes you just need to sleep in. And I know that there are people who need that every day. So here are my favourite breakfast (in bed) recipes!

Açai Bowl

Açai Bowls are one of my current breakfasts. I just LOVE the taste and consistency and you can just sneak in so many veggies without even noticing. Plus it is super quick so you really have to only leave your bed for a few minutes. Throw everything in a blender, decorate pretty (or not if you are too lazy) and enjoy! Summer vibes are 100% present in this bowl because this is goals!

French Toast with Whipped Ricotta

A classic: French Toast. But it would not be a classic if it was not that good. This was one of the first recipes on my blog and is one of the most popular. For a reason. The toast is crispy on the outside and soft on the inside. The whipped honey ricotta gives a nice contrast and the fresh fruit just takes it next level. Since you probably will not find fresh figs at this time of the year, you can just use any other fruit. Bananas, fresh or frozen berries, or whatever. Also works without!

Ultimate Breakfast Tacos

They would not be called ultimate if they were not. This is such a treat. And it is a healthy treat! I do seriously not believe that there is a better breakfast in bed (except for avocado toast maybe) out there than these! OUT OF THIS WORLD. If you make them you are in serious danger of making them every day. The soft tortillas with the even softer scrambler eggs, plus the fresh avocado slices, crispy bacon and the pickled onion on top. The flavours just go in harmony together, it is crazy!

Bircher with Honey Poached Apple

Not 100% the original recipe but better and healthier. This is such a delicious breakfast. And you can prepare it the night before, which means you only need to grab it from the fridge and cozy up in your bed again! Doesn’t that sound great? To me it does! The creamy oats with apple in it and the seeds on top for crunch? Already amazing together! But not to forget about the honey poached apple! This takes everything next level!

Oatmeal with Caramelized Bananas

I cannot make a breakfast recipe list without at least one oatmeal recipe because I know that many are obsessed with it. So I have my favourite oatmeal recipe here! Super creamy Oats with sweet and sticky caramelised bananas. SO comforting and such a treat. Add some peanut butter on top and you are gonna want to dive into this bowl. No, seriously, it is really good. And it is healthy, so what still stops you from making it?

Classic Pancakes

They are called Christmas pancakes but essentially they are just classic, healthy and fluffy pancakes. And I thought that this is the best recipe to round up this post. No week without pancakes. They are really easy to make and they are healthy (although they taste like normal pancakes)! Make them for you and your loved one and enjoy breakfast in bed!
